GUMPASTE RECIPE FOR MAKING SUGAR FLOWERS



Gumpaste Recipe for Making Sugar Flowers image

This recipe is adapted from Nicholas Lodge. I use the same ingredients and measures just do not mix it as much as he does. Due to high humidity, I find the denser under mixed gum paste works better for me.

Number Of Ingredients 7

4 Egg whites ((1/2 cup) )
6 cup Powdered sugar/ confectioners sugar
2 tbsp Tylose powder (or CMC)
2 tbsp Veg shortening (vegetable fat)
1/2 tsp Salt
1 tsp Clear vanilla extract
125 grams Powdered sugar (for kneading)

Steps:

  • In a bowl mix 2 cups powdered sugar
  • Make space in the center and add egg whites, salt and vanilla extract.
  • Mix well until no lumps
  • Add tylose or CMC powder
  • Mix for a minute or two until sticky.
  • Now add more powder sugar - until you are able to form a ball.
  • Do not add too much powder sugar as the gum paste can dry out.
  • You can transfer mix to a working board to mix well.
  • Next, knead in the veg shortening.
  • You want the mixture to be soft, slightly sticky - you can add more powder sugar later too.
  • Divide paste into small portions and wrap well in plastic wrap/bag
  • Then place them all in a ziplock bag and into an airtight box.
  • Let rest in the fridge overnight
  • Next day - let rest at room temperature.
  • knead with a little veg shortening if needed powder sugar too.
  • Use as needed for any project.

1/2 cup freshly squeezed orange juice (2 oranges)
1/2 cup freshly squeezed pink grapefruit juice (1 grapefruit)
1/4 cup freshly squeezed lemon juice (1 lemon)
1/4 cup freshly squeezed lime juice (2 limes)
1 cup good vodka (recommended: Grey Goose or Finlandia), optional
Extra lemon juice
Granulated sugar
Fresh mint sprigs

Steps:

  • Combine the orange juice, grapefruit juice, lemon juice, lime juice, and vodka, if using, in a pitcher. Dip the rim of 6 martini glasses first in a dish with lemon juice and then a dish with sugar. Set aside to dry.
  • When ready to serve, place ice cubes in a cocktail shaker, add the cocktail mixture to fill the shaker 3/4 full, and shake for about 30 seconds. It's important to shake for a full 30 seconds to get the drink very cold and dilute it slightly with the ice. Pour into the sugared martini glasses and garnish with a sprig of mint. Continue filling the shaker with ice and cocktail mixture until all the drinks are poured. Serve ice cold.

Fresh parsley sprigs
Fresh strawberries
Sliced fresh honeydew melon, pineapple and kiwi
Seedless red grapes, halved
ANTS:
Seedless red grapes
Pretzel sticks
Dried currants
GARNISHES:
Orange slices
Orange peel strips

Steps:

  • Line a large serving platter with parsley. With a small sharp knife, cut a strawberry vertically toward the cap. Repeat, cutting to form petals resembling a rose. Repeat with remaining berries., Using cookie cutters, cut honeydew, pineapple and kiwi into desired shapes. Decorate with grape halves as desired., For ants, skewer three grapes with a pretzel stick. With a small sharp knife, cut two small holes in a grape for eyes; insert currants. Arrange three pretzel sticks on the platter for legs; top with an ant body. Repeat as desired., Decorate platter with berry roses, fruit cutouts, ants, orange slices and peel.

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake as directed on box for cupcakes. Cool completely. Frost cupcakes with frosting.
  • To make flowers, unroll and remove paper from 18 Betty Crocker Fruit Roll-Ups. Cut 4 circles out of each snack using 2-inch round cutter. Using 3 circles for each flower, pinch each circle in the middle and twist to create petals. Place the petals on top of cupcake next to one another to create flower. Place on top of each cupcake.

1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, oil and eggs called for on cake mix box
1 container Betty Crocker™ Rich & Creamy vanilla frosting
45 sugar-coated gum drops in assorted colors
1 miniature marshmallow

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of 2 (8-inch) round cake pans with shortening or cooking spray.
  • Make and bake cake mix as directed on box for 8-inch rounds. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour. For easier handling, refrigerate or freeze cakes 30 minutes to 1 hour or until firm.
  • On serving plate, place 1 cake layer, rounded side down. Spread with 1/2 cup of the frosting. Top with second cake layer, rounded side up. Frost top and sides of cake with remaining frosting.
  • On sugared surface, use rolling pin to roll gumdrops into oval shapes.
  • Place 23 gumdrop ovals around the edge of the top of the cake, overlapping slightly. Create a second circle inside the first circle using 15 gumdrops. Repeat once more in the center of the cake with the remaining 7 gumdrops. Place a miniature marshmallow in the center of the cake to form the center of the flower.
