SLIGHTLY PICKLED HONEYDEW WITH HERBS
A cross between a pickle and a salad, these sweet and spicy melon wedges make a great side for grilled meats, especially those with Asian-inspired marinades or sauces. They can also be diced and added to ceviche, a salad, or wrap. Unlike most pickles, these don't get better with age, so use them within a day before their tender flesh starts to break down. If you like it spicy, use Thai chiles; for less heat, use Fresnos.

- Cut the honeydew into half. Save half for another use. Remove the rind. Cut into 3 wedges and then slice across to make 1/2-inch-thick triangles. You should have about 6 cups. Put the fruit in a resealable plastic bag.
- Put the vinegar, sugar and chiles in a small saucepan. Bring to a boil, stirring occasionally, and boil for about 30 seconds. Transfer to a small bowl and stir in 1 cup of ice. When the mixture is tepid, pour it over the melon, and seal, pressing out the air. Lay the bag flat in a shallow dish and chill for at least 4 hours and up to overnight, flipping the bag after about 2 hours.
- Remove the melon from the brine, shake off excess liquid, and place on a platter. Sprinkle some peanuts and herbs over the top, if using, and serve.

ELDERFLOWER JELLY WITH HONEYDEW MELON
Inspired by the floral qualities of Japanese teas and sweets, this cool jelly's lightly flowery flavor is enhanced by orange Muscat.

Steps:
- Simmer wine, sugar, and zest in a 2- to 3-quart saucepan, stirring occasionally, 4 minutes.
- Meanwhile, put 1 cup water in a small bowl and sprinkle with gelatin. Let gelatin stand 1 minute to soften.
- Discard zest from wine mixture, then add gelatin mixture and cook over medium heat, stirring occasionally, just until gelatin has dissolved. Remove from heat and stir in elderflower syrup and remaining cup water. Pour into a 13- by 9-inch glass baking dish and chill, covered, until softly set, at least 8 hours.
- Scoop melon balls with cutter and divide among glasses. Cut jelly into squares and serve over melon.
JELLO FRUIT WEDGES
I made these fun little guys for my 14 mo. old nephew and they were perfect! Being so young, it was better for him to eat a "Jello orange" than a real one. These were a hit with the whole family--not just the kids! Originally I found the recipe somewhere online, and I have found that its best to keep to the orange flavors, as other rinds have a more bitter taste that changes the taste of the Jello.

Steps:
- Slice the fruit cleanly in half lengthwise (through the axis).
- Carefully remove the pulp while keeping the half rind fully intact.
- Ensure that the rinds are dry (you can use paper towels to blot them).
- Set each half rind upright in a muffin pan so you can fill it with Jello.
- Mix the water with the gelatin (just like you would to make jigglers).
- You'll want the Jello a little firmer than the normal recipe as you have to slice it in half again.
- Make sure that the gelatin is well dissolved, and then pour into the fruit before it begins to set.
- Fill up as high as you can, the Jello will shrink a bit when cooling.
- Carefully transfer to the fridge and let set for about three hours, per box directions.
- When the Jello is set, place the fruit open-side down on a cutting board, hold it's shape with one hand and carefully slice in half lengthwise again to form quarters.
- Be careful not to smash the fruit as you'll want to keep the Jello intact (you may use a serrated knife).
- Ready to serve!

- Place melon halves in small bowls and spoon the liquid jello into the centers, fill to the brim Chill until firm apprx 3 hours.

- when placing on serving plates do it carefully so the jello stays on the melon wedge.
