This fudgy, rich dark chocolate brownie cake is loaded with two kinds of chips and decorated with a simple dark chocolate drizzle. It's an easy dessert to feed a crowd.

1/2 cup unsalted butter, (cut into small pieces)
1 1/2 cups dark chocolate chips, (divided)
3/4 cup granulated sugar
2 eggs
2 tsp vanilla extract
1/2 cup all-purpose flour
1 1/2 tsp instant espresso powder
Pinch of salt
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Grease a 9" round cake pan with cooking spray and set aside.
  • In a medium-sized, microwave-safe bowl, add butter and 1 cup of dark chocolate chips. Melt in 20-30 second intervals on half-power in microwave, scraping the sides and whisking between intervals, until butter and chocolate are completely combined and smooth. Alternatively you may also use a double boiler to melt butter and chocolate.
  • Transfer butter/chocolate mixture to a mixing bowl and add sugar. Whisk until sugar is thoroughly mixed in. Add eggs, one at a time, whisking after each addition. Add vanilla extract and whisk again. Add flour, salt, and espresso powder and whisk until dry ingredients are fully mixed and batter is smooth and a bit shiny. Stir in remaining 1/2 cup dark chocolate chips and semisweet chocolate chips.
  • Pour batter into prepared 9" round cake pan and bake for 24-30 minutes, or until a tester inserted in the center comes out clean. Let brownie cake cool in the pan for a few minutes before decorating, and then fully before slicing. To decorate, I melted about 1/4 - 1/3 cup dark chocolate chips, adding melted chocolate to a plastic bag and snipping a corner to pipe the drizzle. Decorate as you like!

1 tsp Baking Powder

Steps:

  • Pre-heat the oven at 170c. Line the baking tin with parchment paper.
  • Melt the butter in a mixing bowl and add the sugar in it. Whisk till the sugar is completely dissolved
  • Now, add the cocoa powder and mix vigorously. To this, add the eggs and vanilla extract & whisk till it becomes a smooth mix.
  • Place a sieve on the bowl and put the flour and baking powder in it. Sieve this into the wet mix. Using a spatula, gently incorporate the dry ingredients into the wet mix.
  • Add half of the chocolate chips into the batter and mix.
  • Pour the brownie batter into the cake tin. Top it with the remaining chocolate chips.
  • Bake this for around 40-42 minutes for fudgy brownies.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, stir together the cocoa and baking soda. Add 1/3 cup vegetable oil and boiling water. Mix until well blended and thickened. Stir in the sugar, eggs, and remaining 1/3 cup oil. Finally, add the flour, vanilla and salt; mix just until all of the flour is absorbed. Spread evenly into the prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool before cutting into squares.

1 cup unsweetened cocoa powder
8 ounces chocolate chips

Steps:

  • Preheat oven to 350°F and grease an 8x12-inch baking pan, then line it with parchment paper and set aside.
  • Combine oil, melted butter, and sugars in a medium-sized bowl, then beat in the vanilla and eggs for 1 or 2 minutes until the batter lightens in color.
  • Sift in cocoa powder, flour, and salt, then fold in the dry ingredients into the wet ingredients until just combined. Be careful not to overbeat.
  • Add ¾ of the chocolate chips into your batter, and then pour the batter into the baking pan and smooth the top. Spread the remaining chocolate chips over the top and bake for 25 to 30 minutes. An inserted toothpick should come out a little dirty.

  • Meanwhile, combine the flour, dutch-process cocoa powder and kosher salt and mix to combine. Sift to remove any clumps. Cocoa powder always has clumps so it’s important to break them up to make it easier to fold the dry ingredients into the batter at the end.
