FULTON MARKET FISH CHOWDER

1/2 cup pure olive oil
2 large onions, diced (about 1 1/2 cups)
2 leeks, white and light green part only, split, cleaned, and diced (about 2 1/2 cups)
5 stalks celery, diced (about 1 cup)
1/4 cup finely chopped garlic
1 cup canned plum tomatoes, drained, seeded, and diced
1 teaspoon saffron threads
2 bay leaves
1 tablespoon dried thyme
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 cup dry white wine
2 quarts Fish Stock (recipe follows)
2 Idaho potatoes (about 1 pound), peeled and diced
1/2 to 3/4 pound mixed fish (any variety or mixture will do), cleaned, peeled, or boned, and cut into small cubes
French baguette, sliced 1/4-inch thick (about 3 to 4 slices per person)
1/4 cup extra-virgin olive oil
1 to 2 teaspoons cracked black peppercorns

Steps:

  • Heat the olive oil in a large, heavy-bottomed soup pot, add the onions, leeks, and celery, and saute until translucent, about 6 minutes. Add the garlic, tomatoes, saffron, and seasonings. Stir about 2 minutes, then add the white wine and cook 4 to 5 minutes, or until almost all the liquid has evaporated, before adding fish stock. Bring to a boil, then reduce to a simmer and cook 45 minutes. At the end of 45 minutes, add the potatoes and cook 20 minutes longer, or until the potatoes are tender.
  • Preheat the oven to 300 degrees.
  • While the broth is simmering, make the peppery croutons: Brush one side of each French bread slice with the olive oil, sprinkle with cracked pepper, and toast in the oven until crisp (about 12 minutes). After the potatoes have simmered 20 minutes, add the fish. Reheat to just below a boil and cook at a strong simmer 3 to 5 minutes, until the fish is cooked but not yet flaking apart. Remove the bay leaves, taste for seasoning, and serve immediately, garnished with the Peppery Croutons.

1/4 cup olive oil
1 to 2 teaspoons cracked black peppercorns

Steps:

Up until the 1930's the original recipe included many types of fish (being sold from the market). Since then, it has been reduced to only include clams, becoming known as "Manhattan Clam Chowder". The Fulton Fish Market was originally a wing of the Fulton Market, which sold a variety of foodstuffs and produce. Established in 1822, it was the destination of fishing boats from across the Atlantic Ocean. The wholesalers at the Market then sold it to restaurateurs and retailers who purchased fresh fish of every imaginable variety. It was possible for fish to be rushed from fishing ports in New England to wholesale buyers at the Fulton Fish Market, who might then resell it to retail markets and restaurants in the very same towns where the catch originated. By the 1950s, most of the Market's fish were trucked in rather than offloaded from the docks. The FFM survived major fires in 1835, 1845, 1918, and 1995. ---- In November 2005, the Fish Market relocated from its historic location near the Brooklyn Bridge along the East River waterfront at and above Fulton Street in Lower Manhattan, NYC to a new facility in Hunts Point NY. ----During much of its 183-year tenure at the original site, the FFM was the most important wholesale East Coast fish market in the USA. The move from the historic Manhattan site was due to a number of factors: cramped location, lack of modern amenities, such as climate control, increasing real estate value of Manhattan site for retail and residential use, and re-development pressure due to desirable proximity to the South Street Seaport and the Fulton/East River area.

2 tablespoons butter
2 onions, diced
2 leeks, white and light green parts only, split, well washed and diced

2 quarts fish stock
2 potatoes, peeled and diced
1 lobster, raw cut into pieces
1 lb halibut fillets or 1 lb cod fish fillet, assorted cut into chunks
1/2 lb large shrimp, peeled and deveined
1 lb littleneck clams, scrubbed (or use canned but include the juice)
French baguette, sliced 1/4inch thick
1/4 cup olive oil
freshly cracked black pepper

Steps:

  • In a large dutch oven, cook bacon until crisp and fat is rendered. Pour off all but 2 tablespoons of the bacon fat. Add the butter, onions, leeks, and celery, and sauté until translucent, about 5 minutes.
  • Add the garlic, tomatoes, saffron, and seasonings. Stir for about 2 minutes, then add the white wine and cook for 5 minutes, or until almost all the liquid has evaporated. Add fish stock and bring to a boil, then reduce to a simmer and cook for 45 minutes.
  • Preheat oven to 300°F At the end of 45 minutes, add the potatoes. Simmer for 10 minutes.
  • Add the lobster. Return to a boil and cook at a strong simmer for 5 minutes.
  • Add the fish chunks, shrimp, and clams. Cook until the fish is just cooked, but not yet flaking apart and the clams open. Meanwhile, Make the Peppery toast by brushing one side of each French bread slice with olive oil, sprinkle with cracked pepper, and toast in the oven until crisp (about 12 minutes).
  • Remove the bay leaves, taste for seasoning, and serve immediately with the Peppery toast for dunking into soup.

6 slices bacon, center cut
1/2 tablespoon olive oil
1 cup celery, finely sliced
1 cup onion, chopped
2 cups chicken broth, reduced fat
2 cups potatoes, peeled and cubed
1 cup carrot, finely sliced
1 (16 ounce) can tomatoes, diced
1/8 teaspoon black pepper (or to taste)
1 tablespoon cornstarch
1 tablespoon water
13 ounces clams, canned, undrained
3 ounces cod, haddock, pollock (or fish of your choice)
3 ounces imitation crabmeat
3 ounces shrimp, cooked and peeled
1 clam juice, bottled

Steps:

  • Cut crab and fish fillet into bite-sized pieces.
  • Spray a large soup pot with nonstick cooking spray add the oil.
  • Add bacon, celery and onion; cook until bacon is browned and onions are tender; over med-low heat.
  • Add chicken broth, juice from the clams, bottled clam juice, potatoes, carrots, tomatoes and pepper.
  • Cover; and simmer about 35 minutes or until potatoes are cooked.
  • Add clams, shrimp, crab and fish fillet.
  • Heat until fish is cooked about 3 minutes, add cornstarch to water and blend well, stir into chowder; cook and stir to thicken.
  • You may need to add additional cornstarch and water to get the desired thickness.
  • Serve.
  • Use your favorite combination of fish, mussels ect. Try to keep the total weight of seafood to 1 lb.

This is an excellent recipe given to me by a friend. I've made several adaptations, and love the way the house smells when this is cooking. Serve with a loaf of crusty French Bread, tossed green salad and supper's ready ! And I think Ann D.'s suggestion to add some diced red bell pepper and a few dashes of hot sauce is an excellent idea !!! I've made the changes below.

2 cups celery, diced
1 red bell pepper
2 cups onions, diced
3 garlic cloves, crushed
1 cod fish fillets or 1 any other firm white fish fillet, cut into chunks
4 cups water (or mixture of chicken broth and water)
1 (28 ounce) can plum tomatoes
2 (14 ounce) cans diced tomatoes
16 ounces fresh clams, chopped or
2 (10 ounce) cans chopped clams or 2 (10 ounce) cans baby clams
1 (10 ounce) bottle clam juice
5 red potatoes, cut into small chunks
3 carrots, diced
1 teaspoon paprika
1 teaspoon Mrs. Dash seasoning mix
1 teaspoon Old Bay Seasoning
1/2 teaspoon oregano flakes
1/2 teaspoon red pepper flakes
louisiana hot sauce (to your preference)
1/2 lb small shrimp
salt
pepper

Steps:

  • Cut bacon into small pieces and fry in pan.
  • Remove from heat, drain and set aside.
  • Saute celery, red bell pepper, onions and garlic in small amount of bacon grease for several minutes to sweat.
  • Add fish and lightly sear.
  • Add water or chicken broth and simmer for 15 minutes.
  • Add tomatoes, clam juice, clams and simmer for 1 hour.
  • Add potatoes and carrots.
  • Season with paprika, red pepper flakes, Old Bay, oregano and hot sauce.
  • Simmer until potatoes and carrots are almost tender.
  • Season with salt and pepper to taste.
  • Add shrimp 15 minutes before serving.

TRADITIONAL MANHATTAN CLAM CHOWDER (A.K.A. CONEY ISLAND OR FULTO



Traditional Manhattan Clam Chowder (A.k.a. Coney Island or Fulto image

I once found it hard to accept there was another form of clam chowder besides New England style, but I have to hand it to the ingenuity of the Manhattan chefs that came up with this style. The addition of tomatoes to this dish is thought to be inspired by the Italian and Portugese immigrants that made up the larger body of the city in the mid to late 1800's. In the late 1800's to 1930's this dish was referred to as Coney Island Clam Chowder or Fulton Market Clam Chowder. It was not until 1889 that Allesandro Filippini wrote his now famous cookbook called The Table: How to Buy Food, How to Cook It, and How to Serve It that the recipe was recorded for the non-professional home cook. Now we can not go on without mentioning the French influence on this dish since Allesandro was Delmonico Chef du Maison from from 1849 to 1863, and worked with another celebrated French chef, Charles Ranhofer. Charles was also a chef at Delmonico's restaurant in New York from 1862 to 1896 (34 years!). He also wrote restaurant quantity recipes in book form, but since this article is guaged for the home cook, we'll stick with the smaller version. It is with apprehension I write this recipe, as I do not want to disturb the spirits of such fine Chefs that have passed, and passed on their knowledge. It is with the upmost respect I offer my take on this fine creation of a dish, redolent with herbs and vegetables and let us not forget our favorite muddy mollusks, the clams.

3 (6 1/2 ounce) cans of chopped clams
1 (8 ounce) bottle clam juice
1 quart fresh stewed tomatoes or 35 ounces canned stewwed tomatoes
1 onion, diced
2 stalks celery, diced
2 carrots, peeled and diced
2 thick slices Canadian bacon or 1 slice virginia baked ham, diced
4 red potatoes, large dice with skin
4 yukon gold potatoes, peeled and large diced
1 garlic clove, minced
1/2 teaspoon red pepper flakes
1 teaspoon dried thyme
2 bay leaves
1/3 cup of chopped fresh curly-leaf parsley
1/2 teaspoon fresh ground black pepper
1 tablespoon olive oil and 1 tbsp unsalted butter
sea salt (to taste)

Steps:

  • Start the Cauldron over medium high heat and add oil and butter. As soon as the butter stops foaming add the red pepper flake, onions, celery and carrots.
  • Cook until onion is translucent being careful not to burn. Add the garlic and chopped bacon or ham.
  • Cook until the meat gets a light brown on it, then add potatoes, clam juice and clams with the liquor from the cans. Add enough water to just cover the potatoes. Add the bay leaves and Thyme.
  • Pour the tomatoes into a large bowl and mash with a potato masher until just crushed, leaving some larger bits if desired. Add tomatoes to the Cauldron and bring to a light boil for about 10 minutes.
  • Add a few twists of pepper. Reduce heat and allow to simmer for about 30-45 minutes, stirring occasionally. Salt to taste, then add some of the parsley during the simmer. Save some parsley for garnish.
  • Serve hot with buttered toast points or saltine crackers.
