Ree Drummond's funeral potatoes from Food Network are extra comforting with lots of cheese and even potato chips.

Number Of Ingredients 12

8 tablespoons (1 stick) salted butter
One 28- to 32-ounce bag frozen shredded hash brown potatoes
1 medium onion, finely diced
1/4 cup all-purpose flour
1 cup milk
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
1 1/2 cups grated Monterey Jack cheese
1 cup sour cream
1/2 cup grated sharp Cheddar
2 cups kettle-cooked potato chips
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter. Take the potatoes out of the freezer while you are preparing the rest of the ingredients.
  • Heat a large, deep skillet over medium-high heat, then melt 6 tablespoons of the butter in it. Add the onions and cook, stirring occasionally, until the onions start to soften, 3 to 4 minutes. Sprinkle the flour over the onions and stir to incorporate. Cook for a minute or 2 to cook out the raw flour, but do not let it color. Whisk in the milk, making sure to get out all the lumps. Add the broth and whisk again if there are still lumps. Bring the mixture to a simmer and allow it to thicken, about 3 minutes. Season to taste with salt and pepper. Turn off the heat and stir in the Monterey Jack, sour cream and Cheddar. Add the hash brown potatoes and mix everything together. Transfer the mixture to the prepared baking dish.
  • Melt the remaining 1 tablespoon butter in a small pan. Put the potato chips and Parmesan in a bowl and crush the potato chips. Pour in the melted butter and toss to coat. Sprinkle the crumbs over the top of the potatoes.
  • Cover with foil and bake for 20 minutes, then remove the foil and continue baking until golden brown on top and bubbling around the edges, about 15 minutes more. Let rest for 15 minutes before serving.

1/2 cup chopped onion (1 medium)
1 can (28 oz) baked beans
1 can (15.5 oz) kidney beans, drained
1/2 cup packed brown sugar
1/2 cup ketchup
1 tablespoon vinegar
1 teaspoon yellow mustard

Steps:

  • In 10-inch skillet, cook ground beef, bacon and onion until beef is browned; drain.
  • In slow cooker, mix beef mixture and all remaining ingredients.
  • Cover; cook on Low heat setting 3 hours.

No Mormon funeral or any get-together for that matter is complete without funeral potatoes and a baked ham! This is only a basic recipe. It's good this way, but it's up to you to make it 'gourmet.' You can use potato chips, tortilla chips, or even corn flakes for the topping - I like to use sour cream and onion chips!

2 (10.5 ounce) cans cream of chicken soup
1 pint sour cream
1 ½ cups grated Cheddar cheese
½ cup dehydrated onion flakes
1 (30 ounce) package frozen shredded hash browns, thawed
1 cup crushed potato chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cream of chicken soup, sour cream, Cheddar cheese, and onions in a large bowl. Mix in hash browns. Pour into a 9x13-inch casserole dish. Sprinkle with crushed potato chips.
  • Bake uncovered in the preheated oven until cheese is melted and top is crisp, about 45 minutes.

Long ago, this recipe was taken to church funerals to feed large crowds. Today, this tangy bean mixture is still pleasing crowds no matter what the occasion. They are great with BBQ or ham. I like to double the batch and make them in in a crockpot.

1 (48 ounce) can pork and beans, Do not drain
1 (16 ounce) can black beans, drained
1 (16 ounce) can butter beans, drained
1 (16 ounce) can dark red kidney beans, drained
1/2 lb bacon
1 onion, medium, chopped (1 cup)
1/4 cup cider vinegar
1 tablespoon yellow mustard, prepared
1 cup brown sugar

Steps:

  • Cook bacon, saving 1 T. Bacon fat. Crumble bacon; set aside.
  • In reserved bacon fat, sauté diced onion about 5 minutes over low-medium heat until softened.
  • Drain and rinse all beans except Pork and Beans, which are used along with their liquid. In a large bowl, gently mix beans and all remaining ingredients. There should be plenty of liquid - you can add 1/4 cup more cider vinegar if needed.
  • Pour into a deep casserole, sprayed with Pam.
  • Bake 350 for 2 hours, uncovered.
  • Alternatively, make a double batch in a crockpot and cook on low 6 hours.

1 can green lima beans
1 can kidney beans
1 can butter beans
½ lb bacon
½ C vinegar
1 C brown sugar
1 tsp mustard

Steps:

  • Drain all cans, save a little juice for future use if needed. Fry ½ lb bacon. Remove bacon and cut into small pieces, add to frying pan: vinegar, brown sugar & mustard. Mix all together, bake 1 ½ hours. If needed, add some of the drained juice from beans (not usually needed).

1 pound dried red kidney beans, rinsed
2 quarts water
1 Moroccan-style preserved lemon, or to taste
1 tablespoon white sugar
1 tablespoon freshly ground black pepper
1 small red chile pepper, halved lengthwise
1 bay leaf
1 teaspoon garlic powder
1 teaspoon anise seed

Steps:

  • Place kidney beans into a large container and cover with about 1 quart water; let stand 8 hours to overnight. Drain.
  • Combine beans, 1 quart water, preserved lemon, sugar, black pepper, red chile pepper, bay leaf, garlic powder, and anise seed in a stockpot; bring to a boil. Reduce heat to low, cover stockpot, and simmer for 1 hour.
  • Remove lemon, bay leaf, and red chile pepper from bean mixture. Mash about 10% of the beans against the sides of the stockpot using the back of a spoon. Cover stockpot and simmer for 45 minutes more.
  • Remove cover from stockpot and simmer beans until beans are thickened and water is evaporated, about 15 minutes more.
