GARBAGE PLATE
This Garbage Plate recipe is a homemade version of the Garbage Plate that you'll find in Rochester, NY. Complete with meat hot sauce, fries, mac salad and cheeseburgers or hot dogs this is as easy, classic dish that's for casual entertaining!

Steps:
- Begin by placing the fries and mac salad onto your plate.
- Next add the cheeseburgers (or hot dogs) on top.
- Drizzle some mustard onto this.
- Pour a generous ladle of meat hot sauce over the plate.
- Sprinkle with chopped raw onions.
- Cut up your burgers and mix everything together with plenty of ketchup and Frank's Red Hot and sop up the juices with the Italian bread.
GARBAGE PLATE SAUCE
Meat sauce with a wonderful blend of spices to pour over your choice of meat, macaroni salad, or home fries. A Rochester, New York original and a must-have. Add diced onions, ketchup, and mustard if desired.

Steps:
- Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease.
- Transfer the cooked beef to a blender and blend until the meat is finely minced. Bring the minced beef, water, vinegar, paprika, black pepper, chili powder, cayenne pepper, salt, allspice, cloves, cumin, thyme, and cinnamon to a simmer in a saucepan over medium heat; cook for at least 30 minutes, adding water as needed to keep the mixture moist and gravy-like.

CHORIZO GARBAGE PLATE
Steps:
- Preheat a flat top grill or nonstick skillet over medium-high heat.
- Add the vegetable oil, potatoes, onions, bell peppers, jalapenos if using, and chorizo. Mix together slightly. Cook for 4 to 8 minutes, flipping once. Add the tomatoes and eggs. Mix together and cook for another 2 to 3 minutes, flipping once. Add the cheese and cook until slightly melted. Mix the hash together to distribute the cheese and tomatoes throughout.
- Serve with toast or tortillas.
NICK TAHOU'S GARBAGE PLATE
Steps:
- Step 1- Preparing the Special Sauce: In large skillet, fry chopped onion and garlic in oil until soft. Add meat, stirring constantly with fork to keep its texture fine. Once the meat browns, add water and tomato paste. Simmer 10 minutes. Add sugar and spices. Simmer 30 minutes, adding water, if necessary, to keep it moist but not soupy. Alternatively, you may use the griddle scrapings from Step 2 for the Secret Sauce (the authentic method). Step 2- Preparing the Plate: First of all, you can substitute any of Nick's other main items in place of the cheeseburger. These items are hamburger, beef hot dogs (red hots, not white hots- that's Don 'n Bob's), steak, egg, veggies, and fish (plain old whitefish, I believe). And now onto the Plate. Take beef patties straight out of freezer and lightly sear on super hot griddle. Do the same with hash brown cubes. Melt one slice of cheese on each beef patty. Place 1 cup of beans, 1 cup of macaroni salad, and 1 cup of hash browns on a restaurant style paper plate. Place 2 beef patties on top of the heap, in the center. Spread mustard and diced onions over the beef patties. With a ladle, cover the center of the heap with Special Sauce. Garnish with bread and butter. Drink as much Genny beer as you can.
