Garbanzo con Acelga ~ Chickpeas and Swiss Chard Stew image

Garbanzo con Acelga is a yummy Peruvian stew with chickpeas, sausage and swiss chard.

½ cup ~ 100grams dry Chickpeas or Garbanzo Beans
1 tsp. Oil
½ small Onion finely diced
1 tsp. crushed Garlic
2 fresh Chorizo Sausages, 225 grams ~ ½ lb. (casing removed and crumbled )
¼ tsp. Dry Oregano
¼ - ½ tsp. Black Pepper
½ tsp. Chili Powder
1 - 1 ½ tsp. Salt
1 ½ cup Water
3 tbsp. Tomato Paste
1 ½ - 2 cups chopped Green Swiss Chard

Steps:

  • Wash and soak garbanzo beans for 5 ½ - 8 hours or overnight. I forgot to soak the beans ahead of time and let it soak for 5 ½ hours.
  • Change water and cook in fresh water until tender. On a stovetop it takes about 25 - 30 minutes. Alternatively, pressure the beans.
  • Let the beans cool and remove the skin of garbanzo beans. The easiest way is to pinch the beans between the thumb and pointer finger. The skin will peel off. Removing the skin is optional but I liked peeled chickpeas.
  • In a deep skillet, heat oil and sauté onions until translucent.
  • Add crumbled sausage and cook until sausage is almost cooked, about 5 minutes.
  • Throw in oregano, salt, pepper and stir to combine.
  • Add tomato paste and give it a good stir.
  • Sauté for few minutes until the paste blends well into the crumbled sausage and begins to simmer.
  • Add water, chickpeas and simmer until sauce thickens a bit, about 10 - 20 minutes.
  • Add Swiss chard, cover and let the chard wilt a bit, for about a minute. Stir the stew and simmer for a few minutes until greens are cooked.
  • Serve hot with rice.

This simple minestrone, packed with Swiss chard, does not require a lot of time on the stove.

2 tablespoons olive oil
1 medium onion, chopped
2 medium carrots, cut in small dice
1 celery stalk, cut in small dice
1 leek, white and light green parts only, halved lengthwise, cleaned thoroughly and sliced thin
Salt
4 large garlic cloves, minced
7 cups water
2 tablespoons tomato paste
A bouquet garni consisting of 1 Parmesan rind, 1 bay leaf, 3 sprigs parsley and 3 sprigs thyme, tied together with kitchen string or tied into a piece of cheesecloth
1 (15-ounce) can chickpeas, drained and rinsed
1/2 pound Swiss chard, stemmed, leaves washed and cut crosswise in thin strips (chiffonade) (4 cups, tightly packed, chiffonade)
1/2 cup soup pasta, like elbow macaroni or broken spaghetti
Freshly ground pepper to taste
Freshly grated Parmesan

Steps:

  • Heat the olive oil over medium-low heat in a large, heavy soup pot or Dutch oven. Add the onion, carrots and celery. Cook, stirring, until beginning to soften, about three minutes. Add 1/2 teaspoon salt and the leek. Continue to cook, stirring often, until tender, about three minutes. Add the garlic, stir for about a minute, and then stir in the water, tomato paste and the bouquet garni. Bring to a simmer. Add salt to taste, reduce the heat to low, cover and simmer 30 minutes. Stir in the chickpeas. Taste and adjust salt. Remove the bouquet garni.
  • Add the Swiss chard and the pasta to the soup, bring back to a simmer, and simmer another 10 minutes or until the pasta is cooked al dente. Grind in some pepper, taste and adjust seasonings. It should be savory and rich-tasting. Serve in wide soup bowls, with a sprinkling of Parmesan over the top.

An array of aromatic spices, along with chopped dried apricots and preserved lemons give this chickpea stew a complex, deep flavor, while chard stems and leaves lighten and freshen it up. Served with couscous or flatbread, it's a satisfying meatless meal on its own. Or serve it with roasted chicken, beef or lamb as a hearty side dish. If you can find rainbow chard, you'll get the best color here, but any chard variety (red, Swiss, yellow) will work well. You can find more Moroccan-inspired dishes here.

4 tablespoons olive oil
2 Spanish onions, chopped
1 large jalapeño pepper, seeded if desired, chopped
4 garlic cloves, minced
1 teaspoon grated fresh ginger root
2 1/2 teaspoons kosher salt, more to taste
1 teaspoon ground turmeric
1 teaspoon sweet paprika
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
Pinch of cayenne
2 tablespoons tomato paste
1 fennel bulb, diced (save fronds for garnish)
1 very large bunch chard, stems sliced 1/2-inch thick, leaves torn into bite-size pieces
2 carrots, peeled and diced
1 large turnip, peeled and diced
1 pound dried chickpeas, soaked overnight in water to cover or quick-soaked (see Tip)
1/3 cup diced dried apricots
2 tablespoons chopped preserved lemon, more to taste
1/2 cup chopped cilantro, more for garnish

Steps:

  • Heat oil in a large pot over high heat. Add onion and jalapeño and sauté until limp, 3 minutes. Add garlic, ginger, salt, turmeric, paprika, cinnamon, cumin, black pepper and cayenne and sauté until they release their fragrance, about 2 minutes. Add tomato paste and sauté for another minute, until darkened but not burned. (If tomato paste looks too dark too quickly, lower heat.)
  • Add fennel, chard stems, carrot and turnip and continue to sauté until vegetables start to soften, about 10 minutes. Add chickpeas and water to barely cover.
  • Return heat to high if you lowered it and bring to a simmer. Partly cover pot, lower heat to medium low, and simmer for about 1 1/2 to 2 hours, until chickpeas are softened. Add more water if needed (this should be like a stew).
  • Add chard leaves, apricots and preserved lemon to pot and continue simmering until chard is tender, about 5 minutes longer. Season with more salt if desired, and serve garnished with cilantro and reserved fennel fronds.

  • Bring a medium pot of salted water to a boil. Add the chard and cook for 3 minutes. Drain thoroughly and set aside.

  • In a large skillet like this one, heat 1 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add spinach and cook, tossing regularly, until just wilted. Transfer spinach to a colander to drain.
