LEMON-GARLIC PENNE WITH CRAB

- Cook pasta according to package directions. Meanwhile, in a large skillet, cook and stir garlic in butter and oil over medium heat for 2 minutes or until garlic is golden (do not brown). Add the broth, crab and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until sauce is reduced by half., Drain pasta; toss with crab sauce and 1/4 cup parsley. Garnish with lemon wedges and remaining parsley.

CREOLE CRAB NOODLES
Crab, and its old friends, the Holy Trinity, are a classic combo, and so it was no surprise they worked so well in an Asian-style rice noodle dish - an experiment gone right. Garnish with sliced green onion.

- Whisk garlic, ketchup, rice vinegar, soy sauce, fish sauce, hot sauce, paprika, cayenne pepper, and cumin together in a bowl.
- Place rice noodles in a large bowl; cover with boiling water and stir with tongs. Let soak for 10 minutes.
- While noodles soak, heat vegetable oil in a pan over medium-high heat. Cook and stir celery, jalapenos, and green onions until tender and fragrant, about 10 minutes.
- Drain noodles and place in the pan; add the sauce and crabmeat. Cook and stir until noodles are coated evenly and everything is heated through, 2 to 3 minutes.

GARLIC NOODLES
These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

Steps:
- Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
- Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
- Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
- Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
- Plate noodles. Garnish with red pepper flakes and green onions.

CRUSTACEAN-INSPIRED GARLIC NOODLES AND ROASTED CRAB
Crustacean garlic noodles and roasted crab secret recipes. They are as close as the real ones from their 'secret kitchen'.

Steps:
- Rinse the yellow noodles with running water to discard the oil from the noodles. Drain and set aside.
- Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.
- Prepare the garlic sauce using a saute pan on medium to low heat. Add the butter into the pan and when it melts, add the garlic and saute until aromatic but not browned. Add all the seasonings into the pan, stir to combine well. Transfer the garlic sauce into a small bowl.
- To serve, just toss all the noodles with the garlic sauce. Add the cheese, toss to combine well. Serve immediately.
- Clean and chop the crab into small pieces. Heat up the butter in a wok (between medium to low heat) and saute the garlic until aromatic, but not brown. Add in the black peppers, chicken bouillon powder, and then add in the crab and stir well. Add in the sugar and cook the crab until half done.
- Dish out and bake it in the oven at 350°F (175°C) for 25-30 minutes. Serve hot with garlic noodles.

GLASS NOODLES WITH CRAB

Steps:
- Cover noodles in warm water for about 10 minutes. Drain.
- Put oil in a wok or large skillet, and turn heat to high. A minute later, add garlic and half the scallions and, almost immediately, the noodles and crab. Toss, and stir to mix the ingredients.
- Add the sauces, taste, and adjust seasoning as necessary. Toss with sesame oil and remaining scallions. Garnish, and serve.

GARLIC AND CRAB NOODLES
Steps:
- Bring a large of salted water to a boil over high heat. Put a large skillet or wok over high heat and add the oil, garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds.
- Meanwhile, add the linguine to the boiling water. Add the crab to the hot wok and toss to coat in the garlic and ginger. Once the crab starts to turn color, add the soy sauce, sambal, black bean sauce and a ladle of pasta cooking water. Bring to a simmer and cook until it reduces and thickens slightly, 5 to 7 minutes.
- Drain the linguine, reserving about 1 cup of the cooking water, and add the pasta to the crab along with the parsley, honey and butter and toss to combine. Cook until thickened again, about 2 minutes. If the mixture seems dry, add more pasta water until it's saucy. Serve hot.
DUNGENESS GARLIC CRAB BUTTER NOODLES
Steps:
- Combine the sauce ingredients and set aside. Boil 3 quarts of water, and cook egg noodles to al dente, about 6-8 minutes. Drain in a colander, rinse in cold water and set aside. Combine butter and garlic in a saute pan over medium-high heat. Once butter begins to brown and garlic gets fragrant (about 1 minute), add the egg noodles and stir until butter coats them evenly. Turn heat to high. Continue to saute for 3 minutes, adding the sauce mixture and combining evenly with the noodles. Once noodles have been cooked through (2 minutes), add the crabmeat and "butter" (tomalley), if using, and cook for an additional 1 minute. Stir in lemon juice. Serve noodles on a plate, top with cilantro.

- Soak the mung bean noodles in warm water for 20 minutes or so until they become soft. Drain with a colander and set aside.
- Heat up a wok with 3 tablespoons of cooking oil. When the oil is very hot, add in garlic and onions and stir fry until aromatic. Add the crab meat and stir well. If you use frozen crab meat, add 1 teaspoon of fish sauce to season the crab meat because frozen crab meat tends to be less flavorful. Skip this step if you use fresh crab meat.
- Add the mung bean noodles into the wok and follow by oyster sauce, fish sauce, sesame oil, sugar, and white pepper powder. Stir continuously to blend well. Add mung bean sprouts and do a few quick stirs. Push the noodles to the side of the wok and add the remaining 1 tablespoon of oil into the wok. Add the beaten eggs and let is cook for about 10 seconds before you push the mung bean noodles to cover the top of the eggs. Let it cook for another few seconds before you flip the noodles over. Gently break the eggs into pieces and blend well with the noodles. Add chopped scallions into the noodles, stir a few times, dish out and serve immediately.
