Spaghetti with Garlic and Basil image

This is a delicious and quick pasta dish. Serve with a green salad and garlic bread.

1 (16 ounce) package uncooked spaghetti
¼ cup extra-virgin olive oil
¼ cup unsalted butter, melted
4 cloves garlic, minced
1 cup fresh basil, coarsely chopped
salt and pepper to taste
½ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • In a large bowl, toss the spaghetti with the olive oil, butter, garlic, basil, salt, and pepper until evenly coated. Serve with Parmesan cheese.

Spaghetti With Shrimp, Togarashi, and Thai Basil Oil image

I made this today for lunch from the January 2011 issue of Bon Appetit. This was my first experience with Shaoxing wine and togarashi (Japanese spice blend). I enjoyed both! This recipe is really good. I cheated and used a store-bought basil oil instead of making mine fresh as this looks like it yields way more basil oil than is needed to drizzle on the dish. Perhaps in the summer, I will try making the basil oil for this dish and then using it for other recipes. Also, my sauce came out a little more liquidy than I would have expected (it still tasted good), so you may want to simmer longer. I simmered longer than 20 minutes (more like 30 or 35) and turned up the heat when simmering the clam juice and Shaoxing and also simmered the cream sauce longer and it was still liquidy, but tasted good. This is supposed to serve 8 appetizer servings. I would say it serves about 4-6 for lunch.

1/2 cup packed fresh Thai basil (or fresh sweet basil leaves)
1/4 cup plus 3 tb olive oil, divided
2 tablespoons minced shallots
2 tablespoons minced lemongrass
1 garlic clove, minced
3 (8 ounce) bottles clam juice
1/2 cup shaoxing wine
2 cups whipping cream
1 lb spaghetti
24 uncooked large shrimp, peeled, deveined
1 tablespoon shichimi togarashi

Steps:

  • Blanch basil in small saucepan of boiling water 5 seconds; drain. Squeeze water from basil; place in blender. Add 1/4 cup oil and pinch of salt and blend until smooth. Strain basil oil into small pitcher. (Do ahead: Basil oil can be made 1 week ahead. Cover; chill).
  • Heat 1 Tb oil in heavy saucepan over medium-high heat. Add shallot, lemongrass, and garlic; saute until soft, about 2 minutes. Add clam juice and Shaoxing. Bring to boil; reduce heat and simmer until reduced to 1 1/2 cups, about 20 minutes. Add cream; simmer sauce until reduced to 1 3/4 cups, about 20 minutes.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
  • Meanwhile, sprinkle shrimp with shichimi togarashi and salt. Heat 2 Tb oil in large skillet over medium-high heat. Add shrimp; cook until opaque in center, turning once, about 5 minutes.
  • Drain pasta; transfer to large bowl. Reheat sauce. Toss pasta with sauce. Place shrimp atop pasta; drizzle with basil oil.

My homemade sauce is packed with fresh tomatoes and assorted seasonings. Folks who sample it never seem to miss the meat.

1 cup chopped onion
8 garlic cloves, minced
1/4 cup vegetable oil
8 cups coarsely chopped peeled tomatoes (about 5 pounds)
1/3 cup minced fresh basil or 2 tablespoons dried basil
1/4 cup minced fresh parsley
1-1/2 teaspoons salt-free seasoning blend
1/2 teaspoon pepper
1/2 teaspoon sugar
1 package (16 ounces) spaghetti, cooked and drained

Steps:

  • In a large saucepan or Dutch oven over medium heat, saute onion and garlic in oil until tender. Add tomatoes, basil, parsley, salt, pepper and sugar; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. Serve over spaghetti.

My version of a thai style spaghetti I had in a restaraunt in Tokyo once. For those of you that like authentic thai flavor. Very spicy.

3 stalks fresh lemongrass, cut diagonally 1/2 an inch in length (soft inner portion only)
1 tablespoon cooking oil (I use canola)
1/2 onion, diced
1 red bell pepper
3 cloves garlic, finely chopped or pressed in a garlic press
1/2 small lime, cut into two wedges
10 medium shrimp
2 1/2 tablespoons fish sauce
1 1/2 tablespoons rice vinegar
2 fresh kaffir lime leaves
1 hot chili pepper
2 stalks green onions, chopped
fresh basil leaf (a handfull or so)
1/2 cup cilantro, chopped
cooked spaghetti (2 servings)
black pepper
2 tablespoons Thai sweet chili sauce (for chicken)

Steps:

  • in a big frying pan, heat oil and brown onions and bell pepper in garlic.
  • add shrimp,fish sauce, lime leaf, chili, lemon grass and vinegar.
  • brown shrimp and then add green onion, basil and cilantro and fry for 30 seconds.
  • add cooked spaghetti and mix well.
  • remove lime leaves.
  • pepper to taste.
  • makes two servings.
  • squeeze lime wedge and mix in one tablespoonof Thai sweet chili sauce per serving.

¼ cup butter or margarine, melted
¼ cup extra virgin olive oil
4 cloves garlic
1 cup fresh Thai basil leaves
2 tablespoons fish sauce
salt to taste
1 cup freshly grated provolone cheese

Steps:

  • Bring a large pot of lightly salted water to boil. Place spaghetti in pot, and cook until al dente, about 8 to 10 minutes. Drain, and return spaghetti to pot.
  • Meanwhile, place butter, olive oil, garlic, basil, fish sauce, and salt into a food processor. Pulse until finely chopped.
  • Stir garlic and basil mixture into cooked spaghetti until evenly coated. Sprinkle half of the provolone on top, then stir until the cheese has melted. Sprinkle the remaining cheese, and stir.
