BUTTERY GARLIC POTATOES
My husband and three boys all love oven-roasted potatoes. But I work full-time, so once I get home and start dinner, I usually don't have time to make them. - Place the potatoes in a 2-qt. microwave-safe dish. In a small bowl, combine the butter, seasoned salt, paprika, parsley and garlic; pour over potatoes and toss to coat., Microwave, uncovered, on high for 8-10 minutes or until potatoes are tender, stirring frequently.

GARLIC BUTTER HERB ROASTED POTATOES
These roasted potatoes are buttery, garlicky, and roasted to yummy perfection. The lemon gives it a wonderfully light tang that helps balance out the flavors.

Steps:
- In large heavy pot, par boil potato pieces until just barely tender when pierced, 3-5 minutes, depending on size of your pieces. Drain and run under cold water.
- Preheat oven to 375F, with rack on middle position. Line baking pan with foil and set aside.
- Combine melted butter, garlic, salt, pepper, paprika, fresh lemon juice, and chives (or parsley) in a large bowl. Whisk together well, and toss well with drained potatoes until completely coated.
- Spread coated potatoes in a single layer on prepared pan. Sprinkle evenly with parmesan cheese.
- Bake uncovered, 35 min. or until cheese is melty and bubbly and golden brown. Actual bake time will vary depending on size of cut potatoes. Serve warm.

GARLIC ROASTED RED POTATOES
I have enjoyed these for years. I used to quarter the potatoes, but when I became a diabetic I started to cross cut the potatoes and by eating them a slice at a time you get the full flavor of your potato without eating a lot of carbs. You also get your potato fix and satisfy your cravings. The trick is to place the potatoes between two steak knifes and slice down using the knife handles as stops so you don't cut completely through the potato. Make the slices about an 1/8-inch apart and fan the potato so there is space in between the slices. This holds the spices and supercharges the potato.

- Preheat oven to 400°F. Combine garlic and oil in small ovenproof dish; cover tightly with foil. Bake until garlic is very tender, about 35 minutes. Cool slightly. Transfer garlic and oil to processor; add butter and process until almost smooth. Transfer garlic butter to small bowl.
- Sauté bacon in heavy large skillet over medium heat until crisp, about 4 minutes. Using slotted spoon, transfer bacon to paper towels to drain. (Garlic butter and bacon can be made 1 day ahead. Cover separately and chill. Bring garlic butter to room temperature before using.)
- Cook potatoes in large pot of boiling salted water until just tender, about 15 minutes. Drain. Cool slightly. Cut potatoes in half; transfer to heavy large skillet. - dice the potatoes in 1 inch cubes, i preheat my skillet and melt the butter. Then put all potatoes in the skillet and let cook on medium heat until tender about 25 minutes. i sprinkle with the garlic salt while the potatoes are cooking in the butter. They should not look fried, just a little firmer looking like if you had boiled them for potatoe salad. Hope you enjoy!
