RE-FRIED BLACK BEANS

Re-fried Black Beans image

Super Easy Refried Beans. Homemade refried beans are a lot easier to make than you think. All you need is 4 ingredients. Ready in under 15 minutes!

Provided by Kelley Simmons

Categories     Side Dish

Time 25m

Number Of Ingredients 10

15.5 ounce can black beans, drained and rinsed
2 tbsp extra virgin olive oil
1/2 cup onions, diced
2 cloves garlic, minced
1/4 tsp cumin
1/4 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
1/2 tsp chili powder
3/4 cup chicken broth

Steps:

  • Add olive oil to a medium saucepan and heat over medium-high heat. Add in onions and saute until tender and golden brown 3-4 minutes. Add in garlic and saute for an additional minute.
  • Stir in the spices: cumin, oregano, salt, pepper and chili powder. Allow them to cook for one minute. Keep an eye on them and continuously stir so they do not burn.
  • Add in beans and chicken broth and turn the heat down to low. Simmer until the mixture has thickened a bit, 5-10 minutes. (The mixture will still look a bit watery but will thicken when we mash the beans)
  • Mash the beans with the back of your spatula or with a potato masher. Make sure to leave some of the beans whole to keep a chunky texture. Serve the beans as is or top with cilantro, raw onions, sour cream, or queso fresco.

Categories     Bean     Onion     Side     Vegetarian     Quick & Easy     Cinco de Mayo     Vegan     Simmer     Sugar Conscious

Yield Makes about 1 1/4 cups

Number Of Ingredients 5

2 tablespoons olive or vegetable oil
1/3 cup finely chopped white onion
1 (15 1/2-ounce) can black beans, including liquid
1 medium garlic clove, pressed or finely grated
1/2 teaspoon árbol chile powder or cayenne pepper

Steps:

  • Heat the oil in a medium pan over medium-high heat until it shimmers. Add the onion and cook, stirring often, until it's soft and browned at the edges, about 5 minutes. Add the beans, garlic, and chile powder.
  • Let the beans come to a brisk simmer, then lower the heat to maintain a gentle simmer. Cook, stirring and mashing often until the beans resemble a very coarse puree and have thickened, 15 to 20 minutes. When you tip the pan, the beans should creep forward like lava. The beans will thicken a little more once they cool. Add salt to taste. Use warm or at room temperature.

Abuelo Peláez's Frijoles Negros (Black Beans) image

Categories     dinner, side dish

Time 2h40m

Yield About 8 cups

Number Of Ingredients 20

1 pound dried black beans, rinsed thoroughly
1 tablespoon extra virgin olive oil
1/2 large white onion, chopped
1 green bell pepper, chopped
4 to 5 garlic cloves, crushed
1 bay leaf
1/4 cup extra virgin olive oil
1/2 large white onion, finely chopped
1 green bell pepper, finely chopped
3 garlic cloves, finely chopped
1 bay leaf
1/2 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon black pepper, plus more to taste
1 and 1/2 teaspoons salt, plus more to taste
2 tablespoons sherry vinegar
1/2 cup dry white wine
1/4 cup green olives stuffed with pimentos, thinly sliced
1 teaspoon sugar
Cooked white rice for serving (optional)

Steps:

  • In a large pot, soak beans overnight in 10 cups of water.
  • Add 1 tablespoon oil, the onion, bell pepper, garlic cloves and bay leaf to beans, and bring to a boil. Lower heat to medium and simmer for 1 hour, checking regularly and skimming the foam that forms on top.
  • Meanwhile, make the sofrito. Warm remaining 1/4 cup oil in a large skillet over medium heat. Add the half onion, 1 bell pepper and 3 garlic cloves and sauté for about 5 minutes until soft. Add 1 bay leaf, cumin, oregano, black pepper and salt, and cook for 2 minutes more.
  • Add the sofrito to beans. Stir in sherry vinegar, wine and olives, and bring to a boil. Lower to a simmer and cook, covered, for about 1 to 1 1/2 hours, stirring frequently, until slightly thickened and cooked through. Remove both bay leaves, and adjust salt and pepper to taste. Remove from heat and add sugar. Serve as soup or a side dish, or over white rice.

Number Of Ingredients 6

1/2 cup lard (see Cooks' note)
4 cups cooked black beans
1 cup vegetable stock or broth or water
Garnish:
1/4 cup finely grated Queso Fresco
2 cups tortilla chips

Steps:

  • In a heavy 10- to 12-inch skillet over moderate heat, heat the lard. Gradually add the cooked beans and broth as necessary and use a bean or potato masher to gently mash them, lowering the heat if necessary to prevent scorching. Using a spatula or a flat wooden spoon, continue stirring and scraping the sides of the skillet until the beans dry out slightly and have cooked down to a paste. The beans should be moist and shiny.
  • Serve the beans on a platter and garnish with the Queso Fresco and tortilla chips.

FRIJOLES REFRITOS (REFRIED BEANS)

Frijoles Refritos (Refried Beans) image

When I have left over pinto beans, this is our favorite recipe. Once you taste it, you'll never settle for canned refried beans again. Queso Blanco is not a melting cheese but it becomes soft and creamy when heated. In this recipe you get yummy savory beans with creamy little bits of cheese. Delicious!

Provided by Sandy in Oklahoma

Categories     Beans

Time 25m

Yield 4 cups

Number Of Ingredients 7

4 cups cooked pinto beans, undrained (canned pinto beans can be used)
1/4 cup chopped onion
1 small finely chopped jalapeno, deseeded
1/4 cup lard (cooking oil can be used also) or 1/4 cup butter (cooking oil can be used also)
salt, to taste
pepper, to taste
8 ounces queso blanco, grated

Steps:

  • Place beans and juice in blender or food processor. Blend just enough to break into small pieces.
  • Cook and stir onion and jalapeno in hot lard or butter until tender. Stir in beans 1 cup at a time until they are all incorporated.
  • Continue cooking and stirring constantly until mixture thickens and you can see the bottom of the pan as you stir.
  • Add cheese and stir until well-blended. Add salt and pepper to taste.
  • Note: My home cooked pinto beans tend to be spicy. If you are using mild beans or canned beans, you might want to add a couple cloves of minced garlic and 1/2-1 teaspoon cumin.
