SCRAMBLED EGGS à LA PROVENçALE
Make these salmon-colored eggs for an impromptu late-night supper or brunch. They are simply scrambled eggs to which you have added a small amount of tomato sauce. The sauce adds a dimension of flavor and a velvety texture.

Steps:
- Beat the eggs in a bowl. Add the salt, pepper, and fresh tomato sauce and whisk together.
- Heat a heavy saucepan or nonstick skillet over low heat and add the olive oil. When it is hot (but not too hot - this is gentle cooking), add the egg mixture, scraping in every last bit with a rubber spatula. Cook slowly over low heat, stirring gently and scraping the eggs from the bottom of the pan with a heatproof rubber spatula or a wooden spoon, until the eggs are just set. Stir in the basil or chives. Serve hot, with toast.

PROVENçAL GARLIC SOUP WITH POACHED EGG

- Peel and slice or roughly chop the garlic cloves. Warm the oil in a heavy soup pot over medium heat. Add the garlic and sage and let them sizzle a bit without browning, about 2 minutes. Season with about a teaspoon of salt and a few grinds of pepper.
- Add 6 cups of water and bring to a boil over high heat, then lower to a brisk simmer. Cook for 10 to 15 minutes. Taste for seasoning and adjust.
- Ladle about an inch of soup into a skillet. Over medium heat, bring to a brisk simmer and, for each serving, poach an egg for about 3 minutes.
- For each serving, place a slice of toast in a soup bowl. With a slotted spoon lift a poached egg onto each piece. Ladle the soup over it. Sprinkle with a little parsley, scallion, or chive.

GARLIC EGGS FROM THE PROVENçE
Best made the day before. Not for the health conscious. A liking for garlic helps. Don't use a blender to make the paste; using a mortar and pestle is indispensable to get the right consistency, which should still have small, crushed chunks in it. Great with toast.

Steps:
- Peel the garlic. Blanch them in hot water (max 10 mins), drain well.
- Boil the eggs circa 9 mins, peel and halve them.
- Mince the tarragon.
- Grind the garlic, anchovies, and capers into a fine paste in a mortar and pestle.
- Add oil and vinegar slowly while continuing to grind.
- Pour the sauce into a glass (or glazed) bowl and add the eggs and tarragon.
- Keep covered in the fridge.
