GARLIC MASHED POTATOES
These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

Steps:
- Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
- Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.

Steps:
- Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
- Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
- Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
- In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

Steps:
- Preheat oven to 400ºF.
- Mix garlic and oil in large baking dish.
- Bake until garlic is tender, about 30 minutes.
- Cool.
- Press garlic between fingertips to release cloves.
- Puree garlic in processor.
- Cook potatoes in large pot of boiling salted water until just tender.
- Drain.
- Return potatoes to pot.
- Mash with potato masher.
- Add milk and butter and continue mashing until well blended.
- Mix in garlic puree and all remaining ingredients.
- Season to taste with salt and pepper.
- Transfer potatoes to 6-cup baking dish.
- (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing).
- Bake potatoes until heated through, about 20 minutes.
- Spoon onto plates and serve.

GARLIC MASHED POTATOES
Steps:
- Preheat oven to 400 degrees F. Place the cut garlic bulb on a piece of aluminum foil and drizzle with olive oil. Close the packet and bake in the oven for 40 minutes until softened. Put the cut potatoes in a large stockpot, cover with cold water, and add salt. Bring to a boil, then simmer until the potatoes are fork tender, about 20 to 30 minutes. Drain well in a colander. While the potatoes are still warm, press them through a potato ricer or food mill and into a mixing bowl. Whip in the warm milk and softened butter until incorporated and the potatoes are fluffy. Squeeze the roasted garlic cloves out of the skins. Add the garlic pulp to the potatoes. Beat again; season with salt and pepper.
GARLIC MASHED POTATOES

- In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
- Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
- Process the potatoes and garlic through a food mill fitted with the medium disk. Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

Steps:
- Prepare Roasted Garlic.
- Place potato pieces in medium saucepan; add water to cover and 1 teaspoon salt.
- Bring to a boil.
- Reduce heat; simmer, uncovered, 12 to 15 minutes or until potatoes are tender.
- Drain potatoes; set aside.
- Place cream, milk, butter and rosemary in small saucepan; heat over medium-high heat about 3 minutes or until butter melts and mixture simmers, stirring often.
- Mash potatoes with potato masher until smooth.
- Add roasted garlic and milk mixture; beat with electric mixer until smooth.
- Beat in remaining 1/2 teaspoon salt and pepper.
- Serve hot.
- Roasted Garlic: Cut off top third of 1 large garlic head to expose cloves; discard top.
- Place head of garlic, trimmed end up, on 10-inch square of foil.
- Rub garlic generously with olive oil and sprinkle with salt.
- Gather foil ends together and close tightly.
- Roast in preheated 350 degree oven 45 minutes or until cloves are golden and soft.
- When cool enough to handle, squeeze roasted garlic cloves from skins; discard skins.
