The trick to keeping these oven-baked chicken wings crispy, is parboiling the wings in a flavorful liquid, which helps season the chicken and produce a surface texture in the oven that your guests will swear came straight out of a deep fryer.

3 quarts cold water
⅓ cup balsamic vinegar
¼ cup salt
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
8 cloves garlic, minced
1 pinch salt
3 tablespoons olive oil, or as needed
1 tablespoon freshly ground black pepper
2 teaspoons red pepper flakes, or to taste
4 pounds chicken wings, separated at joints, tips discarded
2 tablespoons fine bread crumbs
1 cup finely grated Parmigiano-Reggiano cheese, divided

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
  • Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
  • Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
  • Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.
  • Bake in the preheated oven until browned, 20 to 25 minutes.

CRISPY GARLIC PARMESAN CHICKEN WINGS - baked instead of fried but they are still as crispy and delicious as ever! The perfect party appetizer or game day treat!

3 lbs. of chicken (mixture of wings and drumettes)
1 tablespoon canola oil
1 teaspoon sea salt
1 teaspoon black pepper
3 tablespoons unsalted butter
2 tablespoons olive oil
3 garlic cloves, minced
4 tablespoons parmesan cheese
1/8 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
salt & pepper to taste

Steps:

  • Preheat oven to 400°F.
  • Add chicken to a large bowl. Pat chicken dry.
  • Drizzle with canola oil, 1 teaspoon of sea salt, and 1 teaspoon of black pepper. Gently toss to coat all the chicken.
  • Place chicken on a wire rack lined baking sheet. (if you don't have a wire rack, use parchment paper)
  • Bake for 40 minutes, flipping the chicken after 20 minutes.
  • Turn the Broiler on to HIGH.
  • Place chicken under broiler for 8-10 minutes, until browned.
  • In the meantime, heat a medium sauce pan to medium heat. Add butter and 2 tablespoons of olive oil to the pan. Melt the butter down.
  • Once butter is melted add the garlic to the pan. Let cook in the liquid for 2-3 minutes, or until fragrant.
  • Next add in 2 tablespoons of parmesan cheese, smoked paprika, red pepper flakes, salt, & pepper to taste. Stir to combine. Let the sauce cook for another 2 minutes.
  • Remove chicken from oven. Place in a large bowl, pour the garlic parmesan sauce over the chicken wings. Using a pair of tongs, toss the wings to coat all of them with the sauce.
  • Serve. Top the wings with an additional 2 tablespoons of parmesan cheese.
  • Optional: add chopped chives for garnish.

Cook's Country just published an excellent technique for super-crispy baked chicken wings but their sauce choices didn't appeal to me. I wanted something garlicky and not sweet. This is what I came up with, and it was pretty tasty!

4 lbs chicken wings, halved at joints, wingtips discarded
2 tablespoons baking powder
3/4 teaspoon salt
4 tablespoons butter, melted
4 garlic cloves, finely minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon seasoning salt (I used Lawry's)
1/3 cup grated parmesan cheese

Steps:

  • Adjust oven racks to upper-middle and lower-middle positions and heat oven to 250 degrees. Set wire rack in aluminum foil-lined rimmed baking sheet. Pat wings dry with paper towels and transfer to 1-gallon zipper-lock bag. Combine baking powder and salt, add to wings, seal bag and toss to evenly coat.
  • Arrange wings, skin side up, in single layer on prepared wire rack. Bake wings on lower-middle oven rack for 30 minutes. Move wings to upper-middle rack, increase oven temperature to 425 degrees, and roast until wings are golden brown and crispy, 40 to 50 minutes longer, rotating sheet halfway through baking. Remove sheet from oven and let stand for 5 minutes. Transfer wings to bowl with wing sauce, toss to coat, and serve.
  • For the wing sauce, mix together the melted butter, garlic, oregano, basil, seasoned salt, and grated Parmesan.

2-3 garlic cloves, minced
4 tbsp fresh chopped parsley

Steps:

  • Cover cooking sheet in foil, then spray with cooking spray add chicken wings, salt and pepper the wings liberally. Bake at 350 for 25 minutes.Remove from oven, drain off liquid and heat broiler to high. Broil for 15-20 minutes until brown and crispy. We usually brown for 20 minutes.In small saute pan, add olive oil and butter, olive oil , then add garlic and saute on medium about 2 minutes. Then add parsley and let cook one more minute.Remove wings from oven, and place into a large bowl. Toss wings to coat with garlic and parsley mixture. Remove to serving plate and sprinkle with Parmesan cheese..

12 cloves roasted garlic
8 tablespoons olive oil, extra virgin
4 tablespoons apple cider vinegar
4 tablespoons corn syrup
4 teaspoons lemon juice
2 cups mayonnaise (for a less mayo taste use Miracle Whip, Most prefer)
8 tablespoons parmesan cheese
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon oregano
1 teaspoon basil
2 teaspoons salt
1 teaspoon black pepper
3 lbs chicken wings
1 tablespoon baking powder (DON'T USE BAKING SODA)
3/4 teaspoon salt

Steps:

  • The Sauce:.
  • Place the garlic cloves and 2 tablespoons of olive oil in a small glass pan covered with aluminum foil.
  • Bake at 350* for 20 to 25 minutes.
  • Remove from oven and let cool for 5 minutes.
  • Press through a garlic press or using the side of a knife.
  • Combine garlic and all remaining sauce ingredients.
  • Refrigerate for 2-3 hours to pull the flavor together. (Not required but makes it taste a lot better).
  • The Wings:.
  • Set oven to 250°F.
  • Place a rack onto a large baking sheet and spray with non-stick oil. (Makes Clean up easier or cover with aluminum foil).
  • In a large bowl, toss the wings with the baking powder and salt.(You don't need much baking powder or salt it's just too lightly cover and help dry them out).
  • Place wings on the rack in a single layer and bake for 30 minutes.
  • After the first 30 minutes flip them, raise the heat to 425°F (Flipping them every 15 minutes) and bake until brown and crispy, 40-50.
