SALT AND GARLIC BAGEL CHIPS
Don't know what to do with those stale bagels? Make them into crispy, salty snacks! These bagel chips are heavy on the garlic and the real Parmesan cheese and Italian herbs give them a hearty flavor for satisfying snacking.

- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.
- Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet. In a small bowl, stir together the olive oil, garlic, Italian seasoning, and Parmesan cheese. Use a spoon or pastry brush to apply the flavored olive oil to the bagel chips. If you start to run out of the mixture, you can add a little bit more oil without sacrificing any flavor. Season the chips lightly with salt and pepper.
- Bake for 15 to 20 minutes in the preheated oven, or until the chips are lightly browned. Remove from the oven and cool. The chips will become crispier as they cool.

- Preheat oven to 450 degrees. Heat oil in a small skillet over medium-low heat. Add garlic; cook, stirring occasionally, until soft and fragrant, about 5 minutes. Stir in salt. Brush both sides of bread slices with garlic mixture. Transfer to a baking sheet. Toast bread in oven until crisp, turning once, 12 to 15 minutes.

- Slice the bagels thinly -no thicker than 1/8 to 1/4 of an inch. How you slice them doesn't matter as much as how uniform they are. Take the time to make the slices as close to each other in size as you can. Put the bagel slices in a deep mixing bowl.
- In a small liquid measuring cup, use a fork or small whisk to combine the olive oil and granulated garlic or garlic powder. Drizzle this over the bagel slices and use your hands to toss until the oil is evenly distributed. Scatter the salt over the top and toss again to evenly distribute it.
- Divide the bagel slices between two pans, trying to keep them in a single layer. Bake for 45 minutes, rotating the pans ever 15 minutes, or until crisp but not hard. Remove the pans from the oven and let the chips cool completely on the pans before transferring to a jar or other container with a tight fitting lid.

- Slice the potatoes as thin as possible. You can use a knife, but me used a mandolin, to get an even thickness.
- Coat a large baking tray with some spray oil and lay out as many potatoes as possible without any overlapping. Spray each individual potato slice with some more oil and sprinkle with salt, pepper and garlic.
- Bake in a preheated oven at 200C/400F/Gas 7 for 15 minutes, turning halfway through. Repeat until all the potato slices are cooked.
