This is a great, simple and fast way to cook shrimp that can go with anything! I've served it over linguine, with orzo and cream sauce, accompanying a steak, or alone as an appetizer - the possibilities are endless!

1 pound fresh shrimp, peeled and deveined
3 tablespoons olive oil
1 tablespoon garlic salt
1 tablespoon dried parsley
1 teaspoon ground black pepper
¼ stick butter

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Arrange shrimp in a single layer in a stoneware baking dish. Drizzle olive oil over shrimp.
  • Combine garlic salt, parsley, and pepper and sprinkle over shrimp. Cut butter into small pieces and scatter over shrimp.
  • Roast in the preheated oven, watching carefully, until shrimp turn pink, 5 to 10 minutes.

1 pound uncooked medium shrimp, peeled and deveined
¼ cup melted butter
¼ cup grated Parmesan cheese
4 cloves garlic, minced
2 tablespoons olive oil
½ cup panko bread crumbs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine shrimp, butter, Parmesan cheese, garlic, and oil in a bowl. Stir to combine; pour into a baking dish, spreading out evenly. Top with panko bread crumbs.
  • Bake in the preheated oven until shrimp are bright pink, 15 to 18 minutes.

24 large shrimp, shelled and deveined
Salt and freshly ground pepper
Extra-virgin olive oil
2 cloves garlic, crushed
Red Chile Oil, recipe follows
1 tablespoon fresh thyme leaves
Toasted Garlic Chips, recipe follows

Steps:

  • Preheat oven to 500 degrees F.
  • Place the shrimp in a cazuela or an ovenproof casserole and season with salt and pepper, to taste. Drizzle olive oil over shrimp, add crushed garlic, and toss to coat. Roast in the oven until pink and cooked through, about 4 to 5 minutes. Drizzle generously with Red Chile Oil and sprinkle with thyme and Toasted Garlic Chips. Serve with crusty bread.

1/2 cup olive oil
2 large garlic cloves, peeled and thinly sliced
1 tablespoon crushed red pepper flakes
28 to 32 large shrimp, peeled and deveined
1/2 teaspoon salt, plus more to taste
Freshly ground black pepper to taste
1/2 teaspoon paprika
1 bay leaf
6 tablespoons shrimp or chicken broth
1/2 teaspoon fresh lemon juice
2 teaspoons chopped parsley

Steps:

  • Heat olive oil in a large saute pan over medium heat. Add the garlic and pepper flakes. Cook until the garlic is sizzling (reduce heat if garlic colors too quickly), about 1 minute.
  • Season shrimp with salt and pepper and add to pan. Add paprika and bay leaf. Saute until opaque on the bottom, about 1 minute. Turn shrimp over. Cook about 10 seconds.
  • Add broth. Simmer until shrimp are cooked, about 1 minute. Remove shrimp from pan with a slotted spoon and keep warm. Add lemon juice to cooking liquid. Taste and correct seasonings.
  • Spoon the sauce and sprinkle the parsley over the shrimp. Serve immediately.

1 lb extra-large shrimp, cleaned, deveined, and butterflied
1/4 cup olive oil
3/4 cup toasted breadcrumb
1 pinch salt
1 pinch black pepper
1 teaspoon crushed red pepper flakes
3 garlic cloves
2 tablespoons chopped fresh parsley
6 tablespoons butter
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350°.
  • Arrange shrimp in an oiled casserole dish.
  • Drizzle the olive oil evenly over the shrimp.
  • Sprinkle bread crumbs over the shrimp.
  • Add salt and black and red pepper.
  • Chop garlic and parsley together, sprinkle over the shrimp.
  • Stir all together gently so shrimp is evenly coated with oil, crumbs, and seasoning.
  • Cover the dish and bake for 15 minutes.
  • Dot the shrimp with the butter.
  • Sprinkle the Parmesan cheese over the shrimp.
  • Bake uncovered for 5 minutes longer.

1/2 cup unsalted butter
2 tablespoons olive oil
2 tablespoons garlic, minced or 6 garlic cloves
2 teaspoons fresh rosemary, minced
1/4 teaspoon red pepper flakes
1 pinch kosher salt
1 pinch fresh ground pepper
2 large lemons
2 lbs large shrimp
1 teaspoon sea salt

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter low medium-high heat in a medium saucepan. When the butter has melted, add the olive oil, garlic, rosemary, red pepper, 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper; cook for 1 minute. Remove from heat and zest one of the lemons directly into the mixture.
  • Arrange the shrimp into a ovenproof baking dish (10×13), making sure only the tails overlap. Pour the butter mixture over the shrimp evenly. Sprinkle with the sea salt and 1/2 teaspoon of black pepper. Cut the zested lemon into slices and arrange them under the shrimp.
  • Roast for 8 - 10 minutes until the shrimp are finished. They should not be opaque and firm. Cut the remaining lemon in half and squeeze over the shrimp.
  • Serve immediately.
  • The recipe above is for eating immediately. If you want to make them ahead, follow the recipe until the roasting, cover the dish and refrigerate until ready, roast right before serving.
