SHRIMP AND ORZO SALAD



Shrimp and Orzo Salad image

There are so many shapes of pasta out there. One of my favorites is orzo: rice-shaped pasta. I do not see it used as often as its more popular relatives like spaghetti, penne, linguine et al, which is a shame. I love the fact that orzo can be treated like rice and used to make tomato-based (jollof) or stir-fried dishes. It can be creamy like a risotto or made like rice and served with a stew or sauce. Here I use it to make a cold salad with shrimp and sweet cherry tomatoes. Use a lot of garden-fresh herbs to elevate this salad and feel free to add more vegetables if you want.

12 large shrimp - peeled, deveined, and tails left on
1 tablespoon all-purpose seasoning blend
½ cup uncooked orzo pasta
1 tablespoon mayonnaise
1 tablespoon chopped fresh dill, or to taste
1 tablespoon chopped fresh parsley, or to taste
1 tablespoon chopped fresh basil, or to taste
1 teaspoon prepared yellow mustard
¼ teaspoon lemon juice
1 pinch salt and ground white pepper to taste
1 cup cherry tomatoes, halved

Steps:

  • Bring a large pot of water to a boil. Add shrimp and seasoning; cook until shrimp are bright pink on the outside and meat is opaque, about 5 minutes. Remove shrimp from the water and set aside in a bowl.
  • Pour orzo into the seasoned water and bring to a boil. Cook, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain and add to the bowl with shrimp. Store in the refrigerator to cool.
  • Combine mayonnaise, dill, parsley, basil, mustard, lemon juice, salt, and white pepper together in a bowl. Mix well. Taste and adjust if needed.
  • Remove shrimp and orzo from the refrigerator. Add cherry tomatoes and dressing; stir well. Taste and adjust seasonings if necessary. Refrigerate for at least 2 hours before serving.

3/4 pound cooked medium shrimp, peeled, deveined and cut into thirds
1 cup finely chopped green pepper
1 cup finely chopped sweet red pepper
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered
3/4 cup finely chopped red onion
1/2 cup minced fresh parsley
1/3 cup chopped fresh dill
1/3 cup chopped pimiento-stuffed olives
1/2 cup white wine vinegar
3 garlic cloves, minced
1 teaspoon salt

  • Cook pasta according to package directions; drain and rinse in cold water.   • In a large bowl, combine the first five ingredients; toss to coat. Refrigerate, covered, up to 30 minutes. Heat a large skillet over medium-high heat. Using a slotted spoon, add shrimp; cook and stir 2 minutes. Add wine; cook and stir 1-2 minutes longer or until shrimp turn pink. Remove to a shallow dish; refrigerate, covered, until cold. If I have Shrimp in the Freezer, I can always come up with a dish. The other day I wanted something different for a salad. I enjoy cold pasta salads and rice salads so I decided to make an Orzo salad. Get it, orzo is rice shaped pasta.... anyway, this ended up being really good and can see how versitle it can get as well. It doesn't get any easier than this. Hope you enjoy!

1 lb raw shrimp
1/4 cup olive oil
2 garlic cloves
splash white wine
salt and pepper
2 cups orzo pasta, cooked and cooled
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 (10 ounce) can petite diced tomatoes, drained
1/2 cup green pepper, chopped
1/2 cup cucumber, chopped
1/4 cup red onion, chopped
2 tablespoons fresh cilantro, chopped
1/2 cup black olives, sliced (optional)
salt and pepper

Steps:

  • Marinate shrimp in garlic and olive oil. I do this early in the morning.
  • When ready to eat scoop shrimp out of the marinade with a slotted spoon Place in a skillet over medium-high heat and sauté for a few minutes, until the shrimp is pink and cooked through. Add a splash of white wine and season while cooking.
  • Mix together lemon juice, and olive oil and pour over all remaining ingredients. Mix it all up until everything is coated. Season to taste.

¾ cup orzo
½ cup finely diced onion
1 large clove garlic, minced
¼ cup white wine
1 ¼ cups low-sodium chicken broth

½ cup frozen peas, defrosted

2 lemon slices

Steps:

  • Combine olive oil, lemon zest, lemon juice, red pepper flakes, and dried parsley in a small bowl. Add shrimp and toss to coat. Marinate for 15 to 20 minutes.
  • Melt butter in a pot over medium-high heat. Add olive oil. Stir in orzo and onion, toss to coat, and cook, stirring frequently, until onions are translucent and orzo is lightly toasted, 4 to 5 minutes. Mix in garlic and cook until fragrant, about 30 seconds.
  • Deglaze pot with white wine and stir until wine has cooked off. Pour in chicken broth and season with salt and pepper. Cook, stirring frequently, until orzo is tender yet firm to the bite, 8 to 10 minutes. Add peas and shrimp with marinade to the pot, cover, and cook, stirring occasionally, until shrimp are light pink, 3 to 4 minutes.
  • Divide between 2 dishes, sprinkle with fresh parsley, and garnish with lemon slices.

1 cup uncooked orzo
1 tablespoon plus 1 teaspoon olive oil
Salt and freshly ground black pepper
2 cloves garlic, minced
20 large shrimp, peeled and deveined, tails left on
1/4 cup finely chopped fresh flat-leaf parsley
Juice and zest of 1 lemon
1 cup dry white wine
5 tablespoons unsalted butter
1 tablespoon capers, rinsed

Steps:

  • Bring a medium saucepan of salted water to a boil. Add orzo; cook until al dente, using cooking time suggested on package. Drain; toss with 1 teaspoon oil, and add salt and pepper to taste.
  • Meanwhile, heat remaining oil in a large skillet. Add garlic; cook over low heat for 1 minute. Add shrimp, salt and pepper to taste, and 2 tablespoons parsley; cook for 3 to 4 minutes. Turn, and cook for 3 minutes more, or until opaque. Remove from pan, and keep warm.
  • Add lemon juice and wine to skillet. Bring to a boil, lower heat, and reduce by half, about 2 minutes. Remove from heat. Add remaining parsley; stir in butter, lemon zest, and capers. Adjust seasonings. Pour over shrimp, and serve on a bed of orzo.

2 tablespoons extra virgin olive oil
1 red bell pepper, diced
1 yellow onion, diced
4 ounces cremini mushrooms, coarsely chopped
1 shallot, finely chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon cracked black pepper
1/4 teaspoon salt
1 lb orzo pasta
2 mexican avocados
2 tablespoons lemon juice
2 tablespoons unsalted butter
24 medium raw shrimp, peeled and deveined (21-26 count)
1/2 cup dry white wine
1/2 teaspoon red pepper flakes
1/2 cup chicken broth
4 ounces feta cheese, crumbled
2 ounces fresh basil, slivered
1/4 cup slivered almonds, toasted (optional)

Steps:

  • Bring a large pot of salted water to boil.
  • Add the olive oil to a large saute pan and set over moderate heat. Add the red bell pepper, yellow onion, mushrooms, shallot, 2/3 of the minced garlic, oregano, black pepper and salt and saute for 5-7 minutes. When the vegetables just begin to soften, cover the pan and remove from the heat. Add the orzo to the boiling water and cook according to the package directions for al dente.
  • Remove the pits and scrape the avocado flesh into a medium mixing bowl. Add the lemon juice and mash with a fork until it is creamy. In a medium saute pan, melt the butter, add the reserved minced garlic and the shrimp and saute until the shrimp are pink and starting to become firmer in texture (about 1 1/2 minutes per side). Add the white wine and red pepper flakes to the saute pan and cook over medium heat for another 3 minutes.
  • Drain the cooked orzo and add it to the pan of sauteed vegetables. Stir in the mashed avocado and chicken broth and mix all together well. Set the pan over medium heat, stirring frequently for 5 minutes to heat through. Spoon the orzo into a large serving bowl or platter. Spoon the shrimp over the orzo, then drizzle the remaining wine, butter and garlic sauce over the top. Garnish the top by sprinkling feta cheese, basil and toasted almonds over all. Serve warm, room temperature or chilled. Makes 6 servings.
