GELATINA MOSAICO DE FRESA
Prepara la Gelatina Mosaico de Fresa. Esta es una receta clásica mexicana. Tiene gelatina de fresa y gelatina de leche condensada. Se sirve con salsa de fresas frescas y se acompaña con frambuesas. Es perfecta para fiestas o para el menú semanal.

- Prepara la gelatina de fresa siguiendo las instrucciones del paquete. Deberás disolver la gelatina con agua hirviendo y revolver hasta obtener un color transparente. Luego agrega el agua fría y revuelve nuevamente.
- Usa un molde cuadrado o rectangular y rocía con aceite vegetal. Esta acción permitirá el desmolde fácil. Refrigera la gelatina de fresa hasta que esté firme. Tomará alrededor de 3-6 horas. No apresures el proceso, ya que la gelatina se cortará en cuadrados y debe ser lo suficientemente dura como para no derretirse y cortar fácilmente.
- Cuando la gelatina de fresa esté lista para cortar, comienza a preparar la gelatina de leche. Disuelve la gelatina sin sabor en un tazón pequeño con media taza de agua a temperatura ambiente. Deja que la gelatina esponje para asegurar que la gelatina cuaje correctamente.
- Usa la licuadora y agrega una taza de agua tibia, la leche condensada, el extracto de vainilla y la gelatina esponjada. Licúa en alta velocidad.
- Usa un molde para cupcakes y engrasa con el aceite vegetal. Añade los cuadros de gelatina de fresa en cada molde. Vierte lentamente la gelatina de leche encima de la gelatina de fresa y refrigera por 6 horas o más hasta que la gelatina esté cuajada y firme.
- Prepara la salsa de fresa el mismo día que la usarás. Licúa todos los ingredientes y asegúrate obtener una salsa espesa.
- Sirve el postre de gelatina mosaico de fresa acompañado de frambuesas frescas y fresas. Y rocía un poco de la salsa de fresas que preparaste.

GELATINA DE MOSAICO
This recipe for mosaic jello uses gelatina de leche as a base in which colorful cubes of three other gelatin flavors are suspended.

- Lightly coat three 8-inch square pans and one 9 × 13-inch baking pan with cooking spray.
- In three separate bowls, mix each package of flavored gelatin with 2 cups boiling water. Pour each into its own greased square pan. Refrigerate for 1 hour.
- After the jellos have been in the fridge for 30 minutes, make the milk gelatin. In a 3-quart saucepan, mix the gelatin into 1 cup water. Set aside for about 5 minutes so the gelatin can bloom. Set the saucepan over medium-low heat and stir occasionally until the gelatin has dissolved. Add the whole milk and heat to just under a simmer. Add the cinnamon stick, remove from the heat, and let the mixture steep for 30 minutes.
- Remove the cinnamon stick and whisk in the condensed milk, half-and- half, and vanilla extract. Set aside while you prep the colored gelatins.
- Remove the colored gelatins from the refrigerator and cut each flavor into 1-inch cubes. Evenly spread out and mix each flavor in the 9 × 13-inch pan. Pour the milk jello over the cubes.
- Refrigerate until set and firm, 2 to 3 hours.
- When you're ready to serve, invert the gelatina onto a cutting board, cut into 3- to 4-inch cubes, and place on a serving platter.

- Make the different jello flavors according to the instructions on the box. Do this the night before so the jello has time to solidify. (see important note below #1)
- Once the jello is very solid, cut it into squares with a knife and lift from mold using a spatula or a flat spoon. Carefully & gently mix all of the jello flavors in a large bowl.
- To make the Gelatine (Grenatina), add the 4 envelopes (1 oz each so 4 oz total) in a ½ cup of cold water. Mix well with a fork. Let it rest for at least 5 minutes or until it's solidified.
- In a separate medium to large bowl, add the evaporated milk, the condensed milk and the media crema (or regular milk) and 1 tablespoon of vanilla extract. Mix with a whisk until incorporated well.
