- Drain, dry and cut tofu into one inch chunks-You can freeze the tofu the night before to get a more"chicken-like" texture, if desired.
- Mix egg with 3 Tbs of water.
- Dip tofu in mixture.
- Sprinkle cornstarch over tofu to completely cover.
- Heat oil in pan and fry tofu pieces until golden brown and set aside.
- Drain oil.
- Heat 3 Tbs vegetable oil in pan on medium heat and add onions, ginger and garlic, cook for about two minutes (be careful not to burn garlic).
- Add vegetable stock, soy sauce, sugar, red pepper flakes and vinegar.
- Mix 2 Tbs of water and 1 Tbs cornstarch and pour into mixture, stirring well.
- Add fried tofu and coat evenly.
- Serve immediately with steamed broccoli over your choice of rice.

- Preheat the oven to 400º.
- Toss tofu cubes with 1 tbsp corn starch and place on a greased baking sheet. Bake 20-25 minutes, or until slightly brown.
- While the tofu bakes, cook garlic and ginger in a medium saucepan for about two minutes. Add water, vegetable oil, hoisin, rice vinegar, brown sugar and sriracha and cook for about 3 minutes. Add corn starch and water mixture slowly, stirring constantly, until sauce reaches desired consistency.
- Toss baked tofu with sauce.
- Serve over brown rice or quinoa with piles of freshly steamed broccoli. Enjoy!

Crispy tofu coated in a spicy, sweet, and salty sauce. I'm not a vegetarian but this is the best General Tso's dish I've had. I like to serve it over rice and garnish with sesame seeds and green onions.

- Place tofu onto a plate lined with several paper towels. Cover with more paper towels and another plate. Set a 3- to 5-pound weight on top and press tofu for 30 minutes. Drain and discard any accumulated liquid.
- Place tofu cubes in a shallow bowl. Add 2 tablespoons soy sauce and sesame oil. Gently stir to coat. Let sit for 10 minutes or until tofu has absorbed most of the liquid.
- Meanwhile, make the sauce by whisking soy sauce, maple syrup, sambal oelek, rice vinegar, garlic, sesame oil, cornstarch, and green onions together in a bowl. Set aside.
- Drain any remaining liquid from the tofu. Place cornstarch in a gallon-sized plastic resealable bag. Drop tofu cubes in the bag, seal, and gently shake until coated with cornstarch.
- Heat olive oil in a large skillet over medium-high heat. Cook tofu for 4 minutes. Flip with tongs and cook until browned on all sides, about 4 minutes more. Transfer tofu to a plate and wipe the skillet clean.
- Pour sauce into the skillet and cook until slightly thickened, about 2 minutes. Remove from heat. Return tofu to the skillet and toss to combine.

- Press the tofu for 30 minutes either using a tofu press or by placing the tofu onto a plate with another plate on top of it and then putting something heavy on top like a heavy pot. - I like to saute the vegetables first and then add them back in at the end, that way they have a nice texture to them and don’t get too mushy with everything else--but feel free to cook the vegetables as you please.
- In a large nonstick pot over medium high heat, add the sliced garlic if using, cook 1-3 minutes until fragrant and translucent, adding water or broth as needed (of course you may cook with oil if you prefer). Then add your veggies. For me, I sauteed the broccolini for about 5 minutes but NOT the red bell pepper because I prefer my red bell peppers crunchy, not soft. I put a lid on for part of those 5 minutes to give the broccolini a little steaming action. Cook according to your preferences. Either way, take your cooked veggies out of the pot and place them in a bowl and cover either with a small plate or aluminum foil.
- While your veggies are cooking, rehydrate the soy curls by placing them in a medium bowl and adding vegetable broth or water just so the top soy curls are floating just a little, for me, about 1 ¾ cups broth for 8 oz soy curls. It should absorb all the water in about 6-8 minutes, but if it doesn’t, drain off the water well before cooking them.
- Saute the minced or grated ginger and garlic next over medium high heat for about 1-2 minutes or until fragrant in your large nonstick pot. Remember to add just a little water or broth to keep them from sticking.

You’re looking for the consistency of thin pancake batter. You don’t want it super thick, but you do want it to coat the tines of the fork. Stir in a pinch of salt.
- In a shallow dish, combine the oil and the bread crumbs. Use your hands to make sure the oil is distributed evenly. Toss in a pinch of salt.
- Prepare your vegetables or tofu into pieces the size of your choosing. They could be bitesize, nugget shaped, cubes.... Frozen vegetable work great because they are already tender, and cook quickly (Work with them while they are still frozen). Add your pieces to the chickpea mix and coat completely. Transfer the pieces to the breading mixture. Lightly press the panko onto your pieces, and then remove them to a tray while you complete the rest of the batch.
- Follow the directions on your particular air fryer. Each brand, model, and style are different, and reach different temperatures affecting the cooking times. For the ones I used (Philips Airfryer and Breville Smart Oven Air), the temperature ranged from about 390 to 400 Fahrenheit. At those temperatures, you’re looking at about 10 to 20 minutes of cooking time. The key is golden brown and crispy. Don't be afraid to toss them or turn them as the cook to make sure they are browning evenly. When they’re golden brown and crispy, they’re done.

2021-07-22 For general tso's tofu in air fryer: Preheat air fryer to 375° place prepared tofu on plate and spray both sides with cooking oil spray. Space tofu evenly in air fryer basket and cook for 10-15 minutes shaking basket half way through cooking. Continue with step 6 of recipe.

GENERAL TSO'S TOFU - FOOD WITH FEELING
2021-10-22 Cook. Gently wipe down the same skillet used for the tofu, place over medium heat and add the sauce and cook, stirring often, until the sauce thickens. Add the tofu back to the skillet and toss to coat completely in the sauce. Cook for 2 additional minutes and then remove from the heat. Serve.
