GENERAL TSO'S TOFU
Crispy tofu coated in a spicy, sweet, and salty sauce. I'm not a vegetarian but this is the best General Tso's dish I've had. I like to serve it over rice and garnish with sesame seeds and green onions.

Steps:
- Place tofu onto a plate lined with several paper towels. Cover with more paper towels and another plate. Set a 3- to 5-pound weight on top and press tofu for 30 minutes. Drain and discard any accumulated liquid.
- Place tofu cubes in a shallow bowl. Add 2 tablespoons soy sauce and sesame oil. Gently stir to coat. Let sit for 10 minutes or until tofu has absorbed most of the liquid.
- Meanwhile, make the sauce by whisking soy sauce, maple syrup, sambal oelek, rice vinegar, garlic, sesame oil, cornstarch, and green onions together in a bowl. Set aside.
- Drain any remaining liquid from the tofu. Place cornstarch in a gallon-sized plastic resealable bag. Drop tofu cubes in the bag, seal, and gently shake until coated with cornstarch.
- Heat olive oil in a large skillet over medium-high heat. Cook tofu for 4 minutes. Flip with tongs and cook until browned on all sides, about 4 minutes more. Transfer tofu to a plate and wipe the skillet clean.
- Pour sauce into the skillet and cook until slightly thickened, about 2 minutes. Remove from heat. Return tofu to the skillet and toss to combine.

GENERAL TSAO'S TOFU(VEGAN)
Adapted from a General Tso's Chicken recipe in Men's Health Magazine and posted on the Vegan Kitchen. The baked tofu is a great vehicle for the spicy-sweet sauce. Serve it over brown rice and tons of bright green steamed broccoli. Enjoy!

- Preheat the oven to 400º.
- Toss tofu cubes with 1 tbsp corn starch and place on a greased baking sheet. Bake 20-25 minutes, or until slightly brown.
- While the tofu bakes, cook garlic and ginger in a medium saucepan for about two minutes. Add water, vegetable oil, hoisin, rice vinegar, brown sugar and sriracha and cook for about 3 minutes. Add corn starch and water mixture slowly, stirring constantly, until sauce reaches desired consistency.
- Toss baked tofu with sauce.
- Serve over brown rice or quinoa with piles of freshly steamed broccoli. Enjoy!

- Add the farro to a small saucepan and cover with 1-inch water. Bring to a boil and then reduce heat to a low. Simmer farro, covered, until grains are tender, about 18 to 20 minutes.
- Drain, season with salt and pepper, and cover to keep warm. Place a large pot with 2 to 3 inches of salted water on to boil for the broccoli in Step 5.
- Grate or peel and mince the ginger. Peel and grate or mince the garlic. Cut the scallions into 3-inch pieces and set aside until step 4.
- In a medium bowl, combine the ginger, garlic, tamari, coconut sugar, and rice vinegar. Roughly chop the bird’s eye chilis (or keep them whole) and add to the bowl. Whisk sauce to combine.

- Press the tofu for 30 minutes either using a tofu press or by placing the tofu onto a plate with another plate on top of it and then putting something heavy on top like a heavy pot. While the tofu is pressing, you can prepare your sauce by just mixing all the ingredients up in a measuring jug. Set aside.
- When the tofu is pressed, cut it into cubes and place it into a container with a lid. Add sesame oil, maple syrup and cayenne pepper and then seal the container and gently rotate it so that the tofu is evenly coated.
- Then add in the cornstarch to the container, 1 tablespoon at a time and gently toss until the tofu is well coated.
- Add the sesame oil to a frying pan and when hot add in the battered tofu and gently fry until golden brown. Remove the tofu from the pan.

- Press the tofu to drain the water from it (freezing the tofu beforehand gives it a chewier texture and really makes a difference). To press the tofu, place it between two absorbent towels on a cutting board.
- Put the tofu in batches in a bag or container with a lid, add the corn starch and shake to coat. Add more corn starch if needed.
- Heat oil in a small pan over medium heat and fry tofu in batches until crisp and slightly brown, turning to cook both sides. I usually can get away with a couple of Tbs of oil to do the frying if the pan is small enough, so you don’t have to deep fry; although, you certainly can.
- Add 1 cup of water and all of the the sauce ingredients except the cornstarch and water mixture to a large pan, stir to dissolve the sugar, bring to a boil over high heat and cook for several minutes.
- Add the cornstarch and water mixture to the sauce and continue to cook, stirring. When the sauce thickens enough to be syrupy remove from heat. If the sauce is too runny, combine a little more cornstarch and water and add to the sauce.

- Cut tofu into 1-inch pieces and transfer into a large ziploc bag. Add soy sauce and maple syrup. Gently flip the bag a few times to coat tofu with the liquid. Marinate for 10 to 15 minutes.
- Mix all the ingredients for the sauce. If you’re using pre-made General Tso’s Sauce, shake the sauce to let the cornstarch dissolve completely, pour 1/3 cup sauce into a bowl, add 1/3 cup stock, mix well.
- Prepare herbs for the stir fry. You could use a cheese grater to mince the ginger faster. For garlic, press a chef’s knife with your palm to crush it, so it’s easy to peel. Then use a garlic press to mince it.
- When the tofu is marinated, open the bag just a little bit without letting the tofu fall out. Drain all the liquid and discard. Add cornstarch, a tablespoon at a time, gently toss the bag to coat the tofu. It is OK if the tofu doesn’t coat evenly.
