EASY APPLESAUCE CAKE
Just like grandma used to make, this delicious Easy Applesauce Cake is so satisfying. Applesauce cakes are great for using up pantry staples in your home. In exchange for basic ingredients, you get an amazing spice cake!

Steps:
- Preheat oven to 350 degrees. Prepare an 8-inch baking pan with non-stick spray.
- In a large mixing bowl, cream together the butter and sugar.
- Add in the applesauce and mix well.
- Add in the flour, baking soda, cinnamon and cloves and mix just until combined.
- Fold in the walnuts and raisins.
- Pour the batter into your prepared dish and bake for 40-45 minutes, until a toothpick comes out clean.
- Sprinkle with the powdered sugar, cut and serve!

- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.

APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
APPLESAUCE CAKE V
This cake keeps well and will stay fresh for picnics or trips. Add a teaspoon of powdered ginger if you want it very spicy. Spread with Cream Cheese Frosting before serving if you wish.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 inch) round pans, OR 1 (9x13 inch) pan. Sift together the flour, baking soda, salt, cinnamon and nutmeg. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Blend in the applesauce. Beat in the eggs one at a time. Beat in the flour mixture, mixing just until incorporated. Stir in the raisins and walnuts. Spread batter into prepared pan.
- Bake in the preheated oven for 25 to 30 minutes for the 8 inch layers, OR 35 to 40 minutes for the 9x13 inch pan. Test to see if a toothpick comes out clean. Cool in the pans for 5 minutes before turning out onto cooling racks.

RAISIN APPLESAUCE CAKE
This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

- In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

This a wonderfull dense cake. Got the recipe from a magazine about 30 years ago. Kind of reminds me a little of a fruit cake.

- Preheat oven to 350 deg.
- Grease well and flour a 9-by-9-by-2 inch baking pan.
- Into a large bowl of electric mixer, sift flour with baking soda, cinnamon, allspice, nutmeg, cloves, salt.
- Then add eggs, sugar, butter, and 1 cup applesauce; at low speed, beat just until ingredients are combined.
- At medium speed, beat 2 minutes longer, occasionally scraping side of bowl and guiding mixture into beater with rubber scraper.
- Add remaining applesauce, dates and walnuts; beat 1 minute.
- Pour batter into prepared pan.
- Bake 50 minutes, or until cake tester inserted in center comes out clean.
- Let cool in pan 10 minutes.
- Remove from pan.
- Let cool on wire rack.
- Frost with a Cream-Cheese frosting.

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour tube pan.
- In a medium bowl, sift together the flour, baking soda, cinnamon, cloves and salt. Set aside.
- In a large bowl, cream the sugar and shortening until fluffy. Add applesauce and molasses and mix in.
- Gradually add the flour mixture and beat well to moisten. Fold in the raisins.

- For cake:
- Preheat oven to 350°F. Butter 9x13-inch pan; dust pan with flour. Sift flour, sugar and salt into large bowl. Combine coffee, butter, and cocoa in heavy medium saucepan. Stir over medium heat until mixture is smooth and comes to boil. Pour coffee mixture over flour mixture; stir until blended. Add buttermilk, eggs, cinnamon, baking soda and vanilla and stir until well blended. Pour batter into prepared pan.
- Bake cake until tester inserted into center comes out clean, about 30 minutes. Cool cake in pan on rack.
- For frosting:
- Combine cocoa, butter and 6 tablespoons buttermilk in heavy large saucepan over high heat. Stir until mixture is smooth and comes to boil. Remove from heat. Add powdered sugar and vanilla and beat frosting until smooth, adding more buttermilk by tablespoons if frosting is too thick.
- Spread frosting over cake in pan. Sprinkle walnuts over. (Can be made 1 day ahead. Cover and chill. Let stand at room temperature 3 hours before serving.)
