1/2 pound bulk pork sausage
1 large egg, room temperature
2/3 cup whole milk
2 tablespoons canola oil
1 cup pancake mix
1/2 teaspoon ground cinnamon
1/2 cup shredded peeled apple
CIDER SYRUP:
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon pumpkin pie spice
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a large bowl, beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles from on top. Cook until second side is golden brown., For syrup, combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Serve warm with the pancakes.

6 skinless pork sausage links
3 eggs
1/2 cup milk
2 teaspoons cooking oil
1/2 cup flour
1/2 teaspoon apple pie spice
1/4 teaspoon salt
1 -2 teaspoon fat (reserved from sausage)
2 teaspoons brown sugar
2 teaspoons cornstarch
1/2 teaspoon apple pie spice
1/2 cup apple juice or 1/2 cup cider
1 teaspoon lemon juice
2 medium cooking apples, peeled,cored and chopped medium

Steps:

  • Preheat oven to 400 degrees.
  • In an oven safe skillet cook pork sausages until done.
  • Remove, slice thin and pour off all the fat except 1 or 2 T.
  • Mix together the eggs, milk and oil Add flour, 1/2 t.
  • apple pie spice, salt and sausages.
  • (some folks put the sausages in the apple syrup) Pour into hot skillet and bake in the oven for 15 minutes.
  • Poke with a fork and bake for another 5 minutes.
  • You want your pancake golden brown.
  • Sauce------------------.
  • Combine brown sugar, cornstarch and the remaining apple pie spice in a medium saucepan.
  • Heat over medium high and add cider or juice, lemon juice.
  • Stir well and cook until thick and bubbly.
  • Add the apples (and sausage if reserving for sauce) and cook for 5 minutes more.
  • Cut pancakes, plate up and serve with sauce.

2 pounds pre-cooked bratwurst or kielbasa
2 teaspoons butter, or to taste
1 small onion, diced
2 medium potatoes, peeled, sliced thin

2 zucchini, sliced thin
1 1/2 cups shredded mozzarella or Jack cheese (optional)

Steps:

  • Peel, core and slice apples. Layer apples and sausage on the bottom of a 9 by 13 by 2-inch casserole dish and dot with butter. Then layer the onions, potatoes, bell peppers and zucchini. Bake in a preheated 300 degree oven for 1 hour. Once casserole is cooked, cover the top with cheese and bake until melted.

1/4 cup Thai chili garlic sauce
1/4 cup dark brown sugar
2 cups self-rising flour
3 tablespoons dark brown sugar
1 1/2 cups milk
1/3 cup vegetable oil
3 eggs
2 tablespoons red food dye
2 tablespoons pure apple extract
1 teaspoon vanilla extract
4 small red apples
Maple syrup, for serving

Steps:

  • For the sausage: Begin by browning the sausage in a pan over medium heat. Stir in the Thai chili garlic sauce and brown sugar and cook for 10 to 15 more minutes. Remove from the pan and set on paper towels to drain. For the pancakes: Mix the flour and sugar together. Whisk in the milk, oil and eggs. Add the food dye and extracts and mix well.
  • Core the apples and remove any seeds, then slice in round slices.
  • Heat a griddle to 300 degrees F. Drop batter by spoonfuls onto the griddle. When bubbles begin to appear on top of the pancakes, add an apple slice to the top of each pancake, then flip. Cook until both the apple slice and the pancake have browned, an additional 1 to 2 minutes. Then remove, placing the pancakes apple-side up on wax paper to cool. Stack them this way (upside down!) to display the fresh apple. Repeat with remaining ingredients.
  • Place a stack of pancakes on a plate and spoon warm crumbled sausage over the top, then drizzle with maple syrup and serve.

Place pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples.
  • Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes. Slide pancake onto serving platter and cut into wedges.

Steps:

1 to 2 tablespoons vegetable oil
12 links assorted fully cooked German sausages
1 large white onion, thinly sliced
2 crisp red apples, such as Gala or Braeburn, cored and cut into 1/2-inch slices
1/4 cup apple cider
1 pound sauerkraut
3 large sour pickles, quartered, for serving
1 Kirby cucumber, peeled and sliced lengthwise into eighths, for serving
Assorted mustards, for serving

Steps:

  • Heat a 12-inch skillet over medium heat, and add 1 tablespoon oil. Halve sausages lengthwise if desired. Cook until browned and heated through, about 3 minutes per side. Transfer to a plate, and cover to keep warm.
  • Add remaining tablespoon of oil to skillet if necessary. Add onion, and cook for 3 minutes. Add apples, stir, and cook until softened, 6 to 7 minutes. Stir in cider, and cook for 1 minute. Add sauerkraut, and heat until warmed through, about 2 minutes.

3/4 cup milk
3/4 cup white flour
1/2 teaspoon salt
1 1/2 tablespoons butter (unsalted preferred)
1/2 cup thin sliced apple (optional)
1 lb tart fresh apple (Pippin are great)
1/4 cup melted butter
1/4 cup sugar
ground cinnamon, and
nutmeg
2 tablespoons melted butter (optional)
powdered sugar

Steps:

  • Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
  • During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
  • While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
  • When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.
