4 boneless skinless chicken breast halves
2 tablespoons butter
8 ounces mushrooms, sliced
1 medium onion, finely chopped
1 tablespoon green peppercorns in brine, drained
1 1/4 cups chicken broth
3/4 cup whipping cream
2 tablespoons dry sherry
1 1/2 tablespoons Dijon mustard

Steps:

  • Season chicken with salt and pepper.
  • Saute chicken in butter until just cooked through, about 4 minutes per side.
  • Transfer to plate.
  • Add mushrooms, onion and peppercorns to skillet and saute until onion is tender, about 7 minutes.
  • Add broth, cream, sherry and mustard to skillet.
  • Simmer until reduced to sauce consistency, about 15 minutes.
  • Return chicken and juices to pan and cook until chicken is just heated through, about 4 minutes more.

2 tablespoons (1/4 stick) butter
8 ounces button mushrooms, thinly sliced
1 medium onion, finely chopped
1 generous tablespoon green peppercorns in brine, drained
1 1/4 cups canned low-salt chicken broth
3/4 cup whipping cream
2 tablespoons dry Sherry
1 1/2 tablespoons Dijon mustard

Steps:

  • Season chicken with salt and pepper. Melt butter in heavy large skillet over medium heat. Add chicken and sauté until just cooked through, about 4 minutes per side. Transfer chicken to plate. Add mushrooms, onion and peppercorns to skillet and sauté until onion is tender, about 7 minutes. Add broth, cream, Sherry and mustard to skillet. Simmer until reduced to sauce consistency, scraping up browned bits, about 15 minutes. Return chicken and any accumulated juices to pan. 1 tablespoon olive oil
1 egg, beaten
2 tablespoons water
½ cup whole wheat bread crumbs
¼ cup grated Parmesan cheese
2 tablespoons butter
3 tablespoons dry sherry
1 teaspoon Worcestershire sauce
½ teaspoon Dijon mustard
½ teaspoon minced garlic
¾ pound skinless, boneless chicken breast halves, pounded to 1/8-inch thick

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Grease a baking sheet with olive oil.
  • Mix egg and water together in a wide bowl. Mix bread crumbs and Parmesan cheese together in a separate bowl.
  • Melt butter with sherry, Worcestershire sauce, Dijon mustard, and garlic in a small saucepan over medium heat; cook until slightly thickened, about 5 minutes.
  • Dip chicken breasts into the beaten egg to coat. Press the dipped breasts into bread crumbs and gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange onto the prepared sheet. Drizzle sherry-Dijon sauce over the breaded chicken breasts.
  • Bake on a rack in the top third of the preheated oven until no longer pink in the center and the juices run clear, 5 to 7 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 tsp black pepper, divided
1/4 tsp salt
1/4 cup all-purpose flour
2 tsp canola/olive oil mix, divided
1 Tbsp chopped shallots
1 cup fat-free chicken broth
2 Tbsp Dijon mustard
1 Tbsp dried or chopped fresh tarragon
1 container (8 oz.) Breakstone's Reduced-Fat Sour Cream

Steps:

  • Place each chicken half between heavy plastic, pound to 1/4-inch thickness, sprinkle both sides of chicken with 1/4 tsp. each of pepper and salt. Dredge chicken in flour, shake off any excess.
  • Heat 1 tsp. oil in lg skillet over med heat. Add chicken, cook for 4-5 min each side, or until done. Remove chicken from skillet, keep warm.
  • Heat remaining oil in skillet. Add shallots, saute 1 min. Add broth, bring to boil. Boil for 4 min or until mix is reduced by half. Add mustard, tarragon and remaining 1/4 tsp. pepper. Cook 1 min, remove from heat, and stir in sour cream. Serve sauce over warmed chicken.

1 ½ lb boneless, skinless chicken breast
1 ½ tablespoons kosher salt, plus 1/2 teaspoon, plus more to taste, divided
3 tablespoons olive oil, divided
2 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon all purpose flour
1 ½ cups chicken broth
2 tablespoons French's Dijon Mustard
¼ teaspoon freshly ground black pepper
3 tablespoons heavy cream
1 tablespoon fresh parsley, minced, plus more, chopped, for garnish,
½ lemon, zested
½ lb baby bella mushrooms, sliced
½ lb asparagus, woody ends removed, stalks cut into 2 in (5 cm) pieces
½ cup peas, fresh or frozen

Steps:

  • Season the chicken evenly on both sides with 1½ tablespoons salt. Heat 1 tablespoon olive oil in a shallow pan over medium-high heat. Add the chicken and sear for 3-4 minutes on each side. Remove chicken from the pan (it will not be fully cooked) and set aside. Wipe out the pan if it looks charred.
  • Melt the butter in the pan over low heat. Add the garlic and cook, stirring, until fragrant, about 1 minute, then whisk in flour.   • Heat remaining 1 tablespoon olive oil in the pan. Add asparagus and sauté, stirring occasionally, until tender, about 3 minutes. Season with salt to taste. Add the peas and cook 1 minute more.
  • Place the vegetables on a plate. Top with sliced chicken and drizzle with the dijon sauce. Garnish with chopped parsley.

1 tablespoon all-purpose flour
2 tablespoons olive oil
1 onion, halved lengthwise and sliced thin crosswise
2 garlic cloves, minced
1/2 lb mushroom, sliced thin
3 tablespoons medium-dry sherry
1 tablespoon fresh lemon juice
1/3 cup cream
1/2 cup chicken broth
cooked noodles
1 tablespoon minced fresh parsley leaves

Steps:

  • Pat chicken dry and toss with flour and season to taste.
  • In a large skillet, heat 1 tblsp of oil over high heat until hot but not smoking; brown chicken and transfer to a bowl.
  • Heat remaining tblsp of oil until hot but not smoking and saute onions, garlic and mushrooms, stirring, for 2-3 minutes, or until golden.
  • Add Sherry and lemon juice and deglaze skillet, stirring and scraping up brown bits.
  • Stir in chicken, cream and broth. Taste and adjust seasoning.
  • Bring to a boil and boil until thickened.
  • Arrange noodles on a platter, spoon chicken and sauce over and sprinkle with parsley.
