GIGI'S AWESOME CHOCOLATE CHIP COOKIES
On one of my quests to alter a familiar recipe using the well known White Lily Flour instead of my usual, I was well pleased with the results and so were my judges.

Steps:
- Preheat oven to 375 degrees(convection) or 350 degrees (conventional).
- Soften butter in microwave for 10-15 seconds, if needed.( It should be soft enough for you to make impressions with your finger tips.)
- Mix on medium- high speed of Kitchen Aid mixer until soft.
- Add in both sugars and continue to mix until well blended.
- Whisk together the eggs and vanilla in a small bowl, then mix into batter until well-blended.
- In a separate bowl, whisk the dry ingredients together.
- On low speed, gradually add the flour mixture.
- Increase speed when all flour is incorporated and beat on med-high speed for about 1 minute.
- Stir in chocolate chips on low speed until evenly distributed in batter.
- Drop onto parchment-lined baking sheet about 2 inches apart using a 1-1/2 inch diameter cookie scoop (1-1/2 T.).
- Bake for approximately 12 minutes in convection oven. If using settings for conventional oven, it may take a couple of more minutes, Monitor closely.

SUPER SUGAR COOKIES
This recipe has been in my family for many years. They melt in your mouth!

Steps:
- Cream vegetable oil and butter or margarine. Add sugars and blend well. Add eggs and vanilla. Sift dry ingredients and add above. Refrigerate dough for several hours after mixing.
- Preheat oven to 350 degrees F (180 degrees C).
- Dough will be soft. Shape into balls. Dip in sugar. Place on greased cookie sheet. Flatten slightly with a glass dipped in sugar. Bake for 12 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Sift flour, cream of tartar, baking soda, and salt together in a large bowl.
- Beat butter and white sugar together in a large bowl with an electric mixer until light and fluffy; beat in vanilla extract. Add eggs one at a time, beating well after each addition. Gradually add flour mixture to butter mixture on low speed until dough is just-combined.
- Divide dough into 4 portions; refrigerate 3 portions. Roll remaining portion out on a lightly-floured work surface to 1/4-inch thick. Use cookie cutters to cut dough into desired shapes and transfer cookies to prepared baking sheet.
- Bake in the preheated oven until slightly golden at the edges, 10 to 12 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Repeat rolling, cutting, and baking process with remaining dough portions.

GIGI'S SUPER COOKIES
Steps:
- Preheat oven to 375°F. 1. In a large bowl, beat together the butter and sugar with an electric mixer until lightened in color and texture, about 3 minutes. 2. Add eggs and vanilla and beat until combined. 3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 4. Add the dry ingredients to the wet ingredients and stir together with a wooden spoon. 5. Add the oats and stir to combine. 6. Then stir in the chocolate chips, Hershey's bars, and nuts. 7. Using your hands or a couple of spoons, form the batter into loose, golf-ball-sized mounds, placed two inches apart on ungreased cookie sheets. 8. Bake for 6 to 9 minutes, until tops are just golden and cookies are still soft. Cool completely on racks before storing in an airtight container.
GG'S SHORTBREAD COOKIES
My husband's grandma has been making these delicious cookies for as long as he can remember. They are a family favorite and by far the best shortbread any of us have ever tasted. They're loaded with butter, dipped in sugar, and baked to a crispy perfection.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter, 1 1/2 cup white sugar, and confectioners' sugar together in a bowl using an electric mixer until smooth and creamy; mix in cornstarch and 2 cups flour. Make a well in the center of the dough; add egg and mix well. Knead the remaining 1 cup flour into dough using your hands until dough pulls away from the sides of the bowl.
- Roll dough into walnut-sized balls. Pour 1/4 cup white sugar into a bowl; dip top of each ball in sugar. Arrange balls on a baking sheet. Slightly flatten each ball using the bottom of a drinking glass.
- Bake in the preheated oven until edges of cookies are lightly browned, about 5 minutes. Cool in the pans for 5 minutes before removing to cool completely on a wire rack.

GUITTARD SUPER COOKIE CHIP COOKIES (50% MORE CHOCOLATE)
This recipe is from the package of Guittard's Super Cookie Chips. If you are lucky enough to find them, they are THE best super-sized semi-sweet chocolate chips. I buy them at Cost Plus World Market ($2.99/bag). The first time I made these I mistakenly used 2 sticks of butter instead of one, and that, along with the very little flour called for in the recipe, made for a batch of cookies that baked up thin, a little crispy and very fragile ... with a taste that's second to none! I have made this recipe dozens of times and ALWAYS repeat that mistake! Give it a try with your favorite chips, if you can't find Guittard Super Cookie Chips!

- Preheat oven to 375°F.
- In a small bowl, combine flour, baking soda and salt; set aside.
- In a large bowl, cream butter, granulated sugar and brown sugar until light.
