GINGER PINEAPPLE JELLO MOLD

Ginger Pineapple Jello Mold image

This is lovely with a nice ham dinner. Don't use fresh pineapple or fresh ginger - the enzymes will prevent the gelatin from setting. And for a summer variation: I added one heaping cup of blueberries to the mix when I added the pineapple (left out the ground ginger), yummy! **and ingredients/directions slightly changed to address the consistency issue mentioned by reviewer - it should set better in a mold now!

RECIPE REPOST: GINGER PEACH DESSERT - THE NEW JOY OF JELL-O PROJECT
2014-10-04 Ginger Peach Dessert sounds a little fancy, but it’s really just your basic fruited Jell-O. The base is orange, and the cold liquid is ginger ale. At least, that’s what the recipe calls for, but after my disappointment with the Jellied Ginger Upper, I wanted to go for a stronger ginger flavor, so I used Reed’s Jamaican ginger beer instead. The fruit is, alas, canned peaches.
