Steps:
- Cook the beans in a pan of boiling water for 3 mins until tender. Drain. Heat the sesame oil, then cook ginger and garlic for 1 min until fragrant. Stir in the beans, season and sprinkle with sesame seeds. Cook for 30 secs until hot through.

JAPANESE-STYLE SESAME GREEN BEANS
I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

Steps:
- Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

GINGER, CARROT AND SESAME GREEN BEANS
Steps:
- Heat a wok over high heat, and then add the vegetable oil. Add the ginger and cook for 30 seconds. Add the carrots and green beans and stir-fry for 2 minutes (adding a splash of water if necessary to facilitate cooking). Season the vegetables with the light soy, rice vinegar and a drizzle of toasted sesame oil. Garnish with a sprinkling of the toasted white and black sesame seeds.
GINGER BLACK BEAN PATE
This faux pate is excellent on crackers, bread and served with something acidic and savory, like Asian style pickles.

- Mash beans with a potato masher. Add in the tamari and chili paste. Stir well.
- Stir in the flour and 1/2 tbsp sesame oil. Mix well.
- In a hot skillet, heat the oil to sizzling and then stir-fry the garlic, ginger and sea salt for 2 minutes, stirring constantly.
- Add the garlic-ginger mixture to the mashed beans and combine thoroughly.
- Refrigerate but do not freeze until ready to serve. Serve with crackers or bread and also vegetables.

VEGAN COCONUT-GINGER BLACK BEANS
The velvety combination of beans and coconut milk is found in a number of African and Caribbean dishes, like Nigerian frejon and Haitian sos pwa nwa. In this recipe, black beans are simmered in coconut milk with a healthy dose of fresh ginger, then finished with lime juice. The result is a light vegan main or side dish. Finish with crushed plantain chips seasoned with lime zest for sweetness and crunch, or top with coconut flakes or tortilla chips, which are also excellent

- Rinse 1 can of black beans, and set aside. In a large saucepan, heat the coconut oil over medium. Add the cumin and half of the ginger and cook until fragrant, stirring constantly, 1 to 2 minutes. Add the rinsed black beans and the remaining whole can of black beans (including the liquid), and the coconut milk; season generously with salt and pepper.
- Bring to a boil over medium-high, then reduce heat to a simmer and cook, stirring occasionally, until the beans are soft and the mixture is flavorful, 15 to 20 minutes. (If you want a thicker consistency, smash some of beans with the back of a spoon as the mixture cooks, and simmer longer.)
- Meanwhile, in a small bowl, crumble the plantain chips into bite-size pieces. Add the lime zest and a few generous grinds of black pepper, and stir to combine.
- Remove the beans from the heat. Stir in the remaining ginger and season with salt and pepper to taste. Stir in the lime juice a little at a time until the beans taste bright but the coconut flavor is still rich. Top with the seasoned plantain chips and serve with hot sauce for more kick.
GARLICKY, SPICY AND SESAMEY GREEN BEANS
Always looking for a way to make green beans different, this one is such a winner. Green beans are sauteed with garlic, shallot and sesame seeds for a tasty side dish with Asian flair.

- Bring a large pot of water to a boil. Add the green beans, and cook for about 2 minutes. Drain, and immediately transfer to a bowl of ice water to stop the cooking. Drain again.
- Heat the sesame oil and vegetable oil in a large skillet over medium-high heat. Add the green beans, and fry for 2 to 3 minutes, stirring constantly. Add the garlic, shallot, salt and pepper to the beans. Cook and stir for 1 minute. Mix in the sesame seeds, cook for 1 more minute, then serve.

- Preheat oven to 450°F Line a shallow baking pan with foil. Place beans in the prepared baking pan.
- Drizzle the green beans with olive oil and season with Kosher salt and pepper; toss gently to coat. Spread beans in an even layer. Roast for 10 minutes.
- Meanwhile, in a small bowl, combine 1 tablespoon soy sauce; 6 cloves of garlic minced {1 tablespoon minced} 2 teaspoons honey; 1 teaspoon grated fresh ginger; 1/2 teaspoon toasted sesame oil; and 1/4 teaspoon crushed red pepper. Drizzle over beans; toss gently to coat. Spread in an even layer. Roast about 10 minutes more or until beans are dark golden brown in spots and have started to shrivel. To serve, sprinkle with 4 teaspoons of toasted sesame seeds.
