3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

1 lb strawberry, quartered
1/3 cup sugar
1 tablespoon limoncello lemon-flavored liqueur
1/2 teaspoon fresh ground ginger
1 pinch cinnamon
1 sprig fresh sage leaves (optional) or 1 sprig fresh thyme (optional)

Steps:

Mix cornstarch with a bit of water to make a slurry.
Place remaining ingredients into a pot over medium low heat stirring till sugar is dissolved.
Remove herbs and discard.
Add slurry and cook till thickened.
Enjoy on top of whatever pleases you!

Steps:

Preheat the broiler.
Cut each grapefruit in half and gently separate the sections from the membrane by cutting around each section with a paring knife, keeping the grapefruit intact. Place the grapefruit halves cut side up on a baking sheet. Drizzle 1 teaspoon of honey over each half and sprinkle evenly with the brown sugar.
Place grapefruit under broiler and brown well, about 3 minutes. Remove grapefruit and sprinkle with the crystallized ginger and coconut if desired. Serve warm.

Steps:

In a medium saucepan combine sugar, butter, lemon juice and cinnamon.
Cook and stir over medium heat until syrupy and thick.
Remove from heat and add berries, tossing gently to coat each berry.
Serve immediately.
Or: add coconut along with berries, toss to coat.
Or: cool glazed berries on a plate or cookie sheet, then roll in coconut, or chocolate, or both.
