GINGERBREAD RUM BALLS



Gingerbread Rum Balls image

This is the perfect recipe to make if you've got crumbs leftover after building a gingerbread house. Or you can use a package of gingersnaps ground up in the food processor or blender. The flavor of rum balls improves after they sit for a couple of days, so plan ahead if you're considering these for a holiday bash. They will last for two weeks or even longer if you store them airtight at room temperature. Rolling rum balls in confectioners' sugar gives you a soft, moist confection while using granulated sugar results in a crunchier texture. And if you'd rather skip the alcohol, you can substitute orange or apple juice for the rum. Just reduce the confectioners' sugar by a tablespoon or two, to taste.

2 1/2 cups/360 grams cookie crumbs, from gingerbread or gingersnaps
1 1/4 cups/125 grams pecans
3/4 cup/85 grams confectioners' sugar, plus more for rolling if you like
1/3 cup/80 milliliters dark or amber rum, brandy or bourbon, more as needed
2 1/2 tablespoons maple syrup
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons finely grated fresh ginger, more to taste
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch fine sea salt
Granulated sugar, for rolling (optional)

Steps:

  • In the bowl of a food processor, pulse together cookie crumbs and pecans until nuts are coarsely ground. Do not overprocess - you want the nuts to have some texture. Alternatively, finely chop the pecans and toss them in a bowl with the crumbs.
  • In a separate large bowl, stir together confectioners' sugar, rum, maple syrup, cocoa powder, fresh ginger, cardamom, cinnamon, ground ginger and salt. Add to food processor and pulse until just combined, or stir into bowl with the crumb mixture, squeezing everything together into a mass. Taste and add more fresh ginger if you like.
  • Roll dough into 1-inch balls, then roll in confectioners' sugar or granulated sugar. If the dough starts to dry out as you roll the balls, drizzle in a little more rum. Store in an airtight container at room temperature (they will keep for at least 2 weeks); roll balls in additional sugar just before serving.

12 oz gingersnap cookies
1 1/2 cup walnuts, toasted
1 cup powdered sugar
1/2 tsp sea salt
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/3 - 1/2 cup amber rum
2 tbsp molasses
1 tbsp honey (or corn syrup)
1/4 cup granulated sugar
1 tbsp ground cinnamon

Steps:

  • In the bowl of a food processor, process gingersnap cookies and walnuts until finely ground. Set aside. (You may have to do this batches if you have a smaller food processor).
  • In a large bowl, sift together 1 cup powdered sugar, sea salt, cinnamon, nutmeg and cloves.
  • Add cookie/walnut mixture and mix well.
  • Stir rum, molasses and honey together in small bowl, then add to cookie mixture. Mix until uniform.
  • Chill in the refrigerator for 30 minutes. Combine 1/4 cup sugar and 1 tbsp cinnamon in a shallow bowl and set aside.
  • Scoop out tablespoon portions, roll into balls and toss to coat in cinnamon sugar mixture.
  • Place on parchment lined baking sheet, cover with plastic wrap and refrigerate for 2 hours before serving.

1 cup toasted pecans, finely chopped
3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon table salt
3/4 cup whole milk, room temperature
1 tablespoon freshly grated ginger
1 tablespoon vanilla extract
2 sticks unsalted butter, room temperature
1 cup granulated sugar
1 cup packed golden brown sugar
3 large eggs, room temperature
2 large egg yolks, room temperature
1 cup dark rum
1/4 cup water
1/2 cup granulated sugar
1 tablespoon freshly grated ginger

Steps:

  • Heat oven to 350 degrees F and arrange a rack in the lower third. Brush a 12-cup Bundt pan thoroughly with melted butter, coat with flour, and tap out the excess. Sprinkle nuts in bottom of pan and set aside.
  • Whisk together flour, baking powder, and salt in a medium bowl until evenly combined; set aside. Whisk together milk, ginger, and vanilla in a second small bowl until evenly combined.
  • Combine butter and sugar in a the bowl of a stand mixer fitted with a paddle attachment and beat on medium speed until mixture resembles wet sand and is light, about 3 minutes. Add eggs one at a time until incorporated and mixture is smooth. Scrape down mixer and sides of bowl. Reduce mixer to low, add 1/3 flour mixture and whisk until just moistened through. Whisk in 1/2 milk mixture and whisk until just moistened. Repeat until all ingredients are added, ending with flour. Transfer batter to prepared Bundt pan and smooth out so batter is even.
  • Bake until cake is set, golden brown, and a cake tester inserted in middle comes out clean, about 50 minutes. Transfer to a rack, let cool 10 minutes, then invert onto a wire rack, remove from pan, and let cool completely.
  • Combine all ingredients in a small saucepan and place over medium heat. Bring to a boil and cook until slightly syrupy, about 5 minutes. Strain and set aside to cool slightly.
  • When cake is at room temperature, use a skewer to poke holes all over the top. Drizzle the syrup into the holes in the cake, small spoonful by spoonful, making sure it goes into the cake and doesn't flow down. Let sit at least 4 hours so the syrup can soak into the cake.

This is my boss' favorite cake. Somehow, it makes even boring meetings more "palatable." I even gave the recipe to the vice president of one of my law firm's biggest clients! I like to make it in loaf pans rather than a tube pan because it still tastes great but is much easier to transport.

3 cups sifted all-purpose flour
2 teaspoons double-acting baking powder
1/2 teaspoon salt
1/2 pound (1 cup) butter
2 cups sugar
4 eggs
2/3 cup milk
1/3 cup ginger-flavored rum (see Note)
1-3 tablespoons (to your taste) finely grated fresh ginger (preferably from your rum jar)

Steps:

  • Adjust rack one-third up from bottom of oven. Preheat oven to 350 degrees. Butter a 9 x 3?-inch tube pan (or two loaf pans). Sift together flour, baking powder, and salt and set aside. Combine milk and rum and set aside. In large bowl of electric mixer cream the butter. Add the sugar and beat for 2 to 3 minutes. Beat in the eggs individually, scraping the bowl as necessary with a rubber spatula to keep mixture smooth. On lowest speed alternately add the dry ingredients in three additions and the milk/rum in two additions, scraping the bowl with the rubber spatula as necessary and beating only until smooth after each addition. Stir in grated ginger. Turn the batter into prepared pan(s). Level top by gently shaking pan back and forth.
  • Bake for about 65 minutes until a cake tester comes out dry. Let cake stand in the pan for about 3 minutes and then cover with a rack and invert. Remove pan, leaving the cake upside down. Place over a large piece of aluminum foil or wax paper and prepare glaze.
  • GLAZE: 1/3 cup rum, 1-2 tablespoons sugar
  • Stir the rum and sugar together and brush all over the hot cake until absorbed. If using loaf pans, turn the cakes over and brush the tops too.
  • Do not cut cake for at least several hours.

½ cup rum
¼ cup light corn syrup
3 cups vanilla wafer crumbs
1 ½ cups chopped pecans
1 cup confectioners' sugar
24 red candied cherries, halved

Steps:

  • Melt the chocolate chips and stir in the rum and corn syrup.
  • Stir together the vanilla wafer crumbs, pecans and 1/2 cup of the confectioners' sugar. Drizzle the chocolate mixture over the crumb mixture and stir until blended.
  • Shape mixture into 1 inch balls. Roll balls in the remaining confectioners' sugar. Place cherry half in center of each cookie, pressing down lightly. Store in an airtight container for several days to develop flavor.

Something of a holiday favorite around our friends and family. In fact, we get pretty competitive about whose balls are the best... The recipe is infinitely customizable. You can substitute vanilla wafers or graham crackers for the ginger snaps, walnuts for the pecans, and/or other liqueurs for the rum, and add spices or cocoa powder to the powdered sugar for extra fun. This is my favorite variant, though. My favorite rum to use in these is Gosling's Black Seal, though Pyrat is not bad. These are easy to make, but really sticky. The recipe makes 24-36, depending on how big your balls are.
