GINGER SESAME MAPLE MARINATED TEMPEH
This baked and marinated tempeh is just delicious. A great plant based source of protein. Serves 2-3. Note prep time is 15 minutes but this excludes the 2 hours for marinating.

Steps:
- Slice tempeh and place in oven proof dish with a lid.
- Combine all other ingredients in a small bowl and whisk together.
- Pour over tempeh, cover with lid, and place in fridge to marinate from 2 to 8 hours.
- When you're ready to cook, place covered dish in a pre-heated oven (fan bake, 180˚C/350˚F) and bake for 20 minutes. Remove lid, toss tempeh to coat all sides, then bake another 15 to 20 minutes.
- Serve as a balanced meal with fresh salad and avocado, quinoa or other whole grain, sauerkraut or other fermented food, and half a roasted tomato. Yum!

Spicy and sweet tempeh that melts in your mouth, suitable for vegans and those with lactose/wheat/gluten intolerances. Can be served warm or cold. Keeps in fridge for up to 5 days. Can be used as burger/sandwich filling or with greens for optimal food combination. Recipe adapted only slightly from Peter Berley's "The Modern Vegetarian Kitchen". My most requested recipe.

Steps:
- Preheat oven 230 degrees celcius.
- Slice tempeh into pieces desired size.
- Select ovenproof dish that holds the slices in a single snug layer.
- In a bowl, whisk together remaining ingredients.
- Pour half of marinade into baking dish and place tempeh on top.
- Pour over remaining tempeh.
- Cover baking dish with foil and form a tight seal.
- Bake for 15 mins then use tongs to turn over tempeh and bake covered for another 15 minutes.
- Remove foil and continue to bake uncovered for further 10 mins or until browned.

BASIC OVEN-BAKED MARINATED TEMPEH
Although the marinade sounds similar to several of those given for tofu, it's just different enough that, when used on the completely different tempeh, you have a wholly distinct, and wholly delicious, dish. This is a base preparation. Use the baked tempeh as part of a component plate, sauced or unsauced, cut up as the filling for spring rolls with tempeh, added to a vegetable stir-fry, or as the centerpiece of a hearty sandwich.

Yield Serves 3 to 4 as a main course, possibly many more if used in a stir-fry, spring rolls, pasta dish, or casserole

Steps:
- 1. Combine the tamari, vinegar, and Pickapeppa in a nonreactive dish and stir to combine. If using additional seasoning (see below), add it here. Add the tempeh. Marinate at room temperature, turning occasionally, for 20 minutes to 1 hour or refrigerated for up to 2 days.
- 2. Fifteen minutes before you are ready to cook the tempeh, preheat the oven to 375°F.
- 3. Place the marinated tempeh pieces on a nonstick baking sheet or one that has been sprayed with cooking spray, allowing plenty of air space between chunks. Bake for 12 to 15 minutes, then flip the pieces over and bake for another 10 minutes. Remove from the oven and use as desired.
- Seasoning Tempeh
- The above is a basic recipe, designed to be compatible with almost any finished recipe. But the marinade can certainly be zapped up to good effect.
- Try any one to three of the following additions:
- • 1 to 3 cloves garlic, pressed
- • 1 to 2 teaspoons peeled grated ginger
- • 1/4 to 1/2 teaspoon freshly ground black pepper
- • 1 to 2 teaspoons honey
- • 1 teaspoon ground coriander
- • 1 to 2 teaspoons toasted sesame oil
- • 1/2 to 1 teaspoon Tabasco or other hot sauce
- • 1 tablespoon ketchup or tomato paste

- In a blender, combine the sauce ingredients: ginger, garlic, sesame oil, rice vinegar, soy sauce, maple syrup, cornstarch, and nut butter. The sauce can also be whisked together in a bowl but I find the blender much easier.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add in the tempeh and cook for about 8 minutes, flipping every few minutes so that all sides are browned. Turn the heat to low and toss in 2 tablespoons of the sauce and continue to cook until the tempeh is fully coated in the sauce and it has started to caramelize a bit. Remove to a clean plate and return skillet to the heat.
- Turn the heat back to medium, and add in the remaining tablespoon of olive oil and toss together the green beans and the carrots in the skillet. Cook for about 5 minutes. Add in a few tablespoons of water and place a lid on the skillet to steam the veggies a bit until tender. About another 5 minutes. Remove the lid and take out any excess water.
- Pour in the remaining sauce as well as the tempeh. Toss to coat everything and continue to cook until sauce thickens and everything is nicely coated in the sauce. Cook about 2-3 more minutes.
