GINGERBREAD BANANA BREAD

3 brown bananas, mashed
1/4 cup maple syrup
1/4 cup molasses
1 teaspoon vanilla extract
3 eggs
1/2 cup cashew butter (or other nut/seed butter)
1/4 cup coconut flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon powdered ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
pinch of salt
1-2 tablespoons organic powdered sugar, for garnish

Steps:

  • Preheat oven to 350 degrees F. Grease an 8×4 loaf pan then line the middle with parchment paper. It will make it easier to remove from the pan.
  • In a food processor, add all ingredients and puree until completely combined.
  • Pour batter into loaf pan then place in oven to bake for 45-50 minutes until a toothpick comes out clean.
  • Remove from oven, place on cooling rack and let rest for 5-10 minutes before cutting and serving.
  • Once cool, top with sifted organic powdered sugar!

2 large ripe bananas
⅔ cup packed dark brown sugar
½ cup molasses
½ cup vegetable oil
2 eggs
¼ cup milk
2 cups all-purpose flour
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon
1 ¼ teaspoons baking soda
½ teaspoon ground cloves
½ teaspoon ground allspice
¼ teaspoon salt
2 tablespoons milk
1 tablespoon light corn syrup
1 tablespoon butter, melted
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Mash bananas in a large bowl with a fork. Add brown sugar, molasses, oil, eggs, and 1/4 cup milk. Stir until combined. Stir flour, ginger, cinnamon, baking soda, cloves, allspice, and salt together in another bowl. Stir flour mixture into the banana mixture until just incorporated. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Let cool completely, at least 30 minutes. Turn bread out of the pan.
  • Combine 1 tablespoon milk, corn syrup, and butter in a bowl. Add confectioners' sugar and stir. Add vanilla extract and enough remaining milk to achieve a drizzling consistency. Pour glaze over the cooled bread.

Deliciously spiced, easy to make Banana Gingerbread Loaf is one of my family's favourite loaf cakes. It's perfect for any time of day!

2 large ripe bananas (mashed)
½ cup molasses
½ cup brown sugar (lightly packed)
½ cup buttermilk
1 egg (lightly beaten)
¼ cup mild olive oil
2 cups all purpose flour
½ teaspoon baking powder
½ teaspoon baking soda (Baking soda is also known as Bicarbonate of Soda.)
½ teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon ground cloves
¼ teaspoon nutmeg
For the glaze
½ cup icing sugar (Icing sugar is also known as confectioner's sugar.)
2 to 3 teaspoons water
½ teaspoon ginger

Steps:

  • Preheat the oven to 350°F (175°C).
  • Grease and flour or line a 8½ by 4½ inch (2 lb) loaf pan.
  • Peel and mash the bananas in a medium bowl.
  • Stir the molasses, sugar, buttermilk, egg and olive oil into the mashed banana. Set aside.
  • Sift the flour, baking powder, baking soda, salt, ginger, cinnamon, ground cloves and nutmeg together into a large bowl.
  • Stir in the banana mixture until thoroughly combined, but do not over-mix.
  • Pour the batter into the loaf pan and bake for 40 to 50 minutes, or until a skewer inserted in the centre of the loaf comes out clean.
  • Let the loaf cool in the pan for about 15 minutes and then carefully remove and cool completely on a wire rack.
  • To make the glaze:
  • Sift together the icing sugar and the ginger.
  • Gradually add the water, a bit at a time, until a creamy, drizzle-able consistency is reached.
  • Place a sheet of baking parchment or waxed paper underneath the wire rack with the cooled cake on it.
  • Drizzle the glaze over top of the cake.
  • Allow the glaze to set for at least a half hour before slicing.
  • Store your Banana Gingerbread Loaf in a sealed container at room temperature.

This Vegan Gingerbread Banana Bread recipe combines soft and moist gingerbread with spiced banana bread for the ultimate holiday treat.

1 cup mashed bananas (about 2 medium bananas)
1/3 cup sugar (such as coconut sugar, light brown sugar (1/4 cup for less sweet or if the bananas are very ripe ))
1/4 cup maple syrup
1 tsp vanilla extract
2 tbsp oil (omit to make oil free)
1/3 cup almond milk
1 tsp vinegar
1 tbsp molasses
1 3/4 cup flour ((I use 1 1/4 all purpose, and 1/2 cup of whole wheat or spelt))
1/4 cup almond flour
1.5 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1.5 -2 tsp gingerbread spice (or a mix of 1 tsp cinnamon, 1 tsp ginger , 1/8 tsp each ground cloves, nutmeg, allspice )
2 tbsp chopped candied ginger (optional )
Chopped walnuts/pecans
Chopped Dates (other dried fruits)

Steps:

  • Preheat the oven to 365 degrees F (185 C), and line a 9x5 or 8.5x4.5 inch loaf pan with parchment.
  • In a bowl mix all the wet ingredients till well combined.
  • In another bowl, mix the flours ,the baking powder, baking soda, salt, and spices until well combined, then mix in the candied ginger.
  • Add 1 3/4 cup of the dried mixture to the wet mixture, and mix in. Add the rest of the dry flour mix 1 tbsp at a time until it is a stiff muffin batter. If it is not stiff enough, add another 1 or two tbsp of flour
  • Transfer the batter to the lined loaf pan, and even it out with a spatula. Sprinkle the top with 1 tbsp of brown sugar, and 1/2 tsp of cinnamon. This is optional, but I like the crust it gives the banana bread. You can also add some candied ginger on top, or some pecans tossed in maple syrup for a candied pecan top
  • Bake for 55 minutes. Check with a toothpick from the center of the loaf, if it comes out clean, then remove from the oven else bake for another 5-10. cool the loaf for 10 minutes before taking out of the pan. Then cool completely before slicing.

1 teaspoon cinnamon
1/2 cup butter, melted
1/2 cup brown sugar
1/2 teaspoon allspice

1/4 teaspoon nutmeg
2 eggs
1/2 cup sour cream
2 large bananas, mashed

Steps:

  • Preheat the oven to 350 degrees. Spray a 9x5 loaf pan.
  • Sift together all the dry ingredients.
  • In a large bowl, cream the butter, brown sugar, molasses, and honey until smooth.
  • Mix in the eggs one at a time. Mix in the sour cream and bananas.
  • Stir in the dry ingredients just until blended.
  • Place the batter in the pan and bake for 55-60 minutes, or a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then turn onto a wire rack and cool completely. Dust with powdered sugar or glaze.

  • Preheat oven to 350 degrees F. Liberally grease a 9" loaf pan with cooking spray. I recommend using a metal or disposable loaf pan as I find glass ones usually cook at different times. If you only have glass, that's okay, but your bread may take less time. Place the pan on a baking sheet and set aside.
  • In a large bowl, mix together the softened butter and brown sugar with a spatula until combined. Mix in the eggs and yogurt, mixing well. Add in the banana, vanilla and molasses until blended. Mix in the spices, flour, baking soda, and salt until a thick but lumpy batter forms. Fold in the pudding mix (just the dry mix). Batter should be lumpy and do NOT overmix the batter, which leads to tough bread. Just make sure it's just about combined.
  • Pour the batter into the baking pan and smooth out the top. Bake uncovered for about 40 minutes, then tent the pan with foil and bake for another 25-35 minutes, checking at the 25 minute mark and adding time if needed. Bread will be done when a toothpick or cake tester inserted near the center comes out clean or with moist, not wet, crumbs. Cool completely.
  • To make the frosting: in a medium bowl, beat together the cream cheese, butter and vanilla extract until smooth. Beat in the heavy cream to combine, then the powdered sugar until a soft, thick icing forms.
