Fluffy pineapple cookies with icing

1/2 cup Shortening
1 cup Brown sugar
8 1/2 ounces Crushed pineapple
1 1/2 teaspoon Baking powder
1 Egg
1 teaspoon Vanilla
2 cups All purpose flour
1/4 teaspoon Salt
1/4 teaspoon Baking soda

Steps:

  • Preheat oven to 350 degrees F. Cream shortening and sugar, beat in egg and vanilla. Drain pineapple (save juice) and add to butter/sugar mixture. Combine all dry ingredients in a mixing bowl. Add dry ingredient mixture to butter & sugar mixture. Mix until blended well. Drop by rounded spoonfuls on an ungreased pan two inches apart. Bake 8 to 10 minutes. Cool partially on rack and top with glaze. To make Glaze: 2 cup powdered sugar Drained juice from pineapple (just enough to thin for a drizzle) Spoon glaze ontop of cookie while still warm.

½ cup shortening
1 ⅓ cups packed brown sugar
1 egg
2 cups sifted all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup chopped walnuts
1 cup apples - peeled, cored and finely diced
1 cup raisins
¼ cup milk
1 ½ cups sifted confectioners' sugar
1 tablespoon butter
½ teaspoon vanilla extract
2 ½ tablespoons half-and-half cream

Steps:

  • Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
  • Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
  • Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
  • Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
  • To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

1/2 cup shortening
1 cup packed brown sugar
1 egg

1 large egg

1/3 cup red candied cherries, chopped
CARAMEL GLAZE:
1/2 cup packed brown sugar
1/4 cup butter, cubed

2 tablespoons 2% milk

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in pineapple, pecans and cherries. Divide dough in half; shape each into a 9-in.-long roll; wrap each in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 7-9 minutes or until lightly browned. 1 (4 ounce) jar maraschino cherries, drained
1 cup brown sugar

  • Before baking ham, place pineapple slices on ham with toothpicks and place cherries in center of pineapple.

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.

2 c all-purpose flour, sifted
1 ½ t baking powder
¼ t baking soda
¼ t salt
½ c shortening
1 c firmly packed light brown sugar
1 egg
1 t vanilla
4 c confectioners' sugar, sifted

Steps:

  • Preheat oven to 400 degrees. Lightly grease cookie sheets. Sift flour with baking powder, baking soda and salt. In a large bowl with a wooden spoon or electric mixer, beat shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Add pineapple. Mix well. Stir in flour mixture until well combined. Drop by rounded teaspoonfuls spacing 2 inches apart onto prepared sheets. Bake 8 to 10 minutes or until golden brown. Transfer cookies to wire racks. Mix confectioners' sugar with 3 to 4 tablespoons reserved pineapple liquid to make glaze. Stir until smooth. Spread tops of warm cookies with glaze.

1/4 cup soy sauce
1/4 cup dark-brown sugar
1 1/2-inch piece fresh ginger
1/4 teaspoon dry mustard powder
Pinch of crushed red pepper flakes
3 or 4 large strips washed pineapple skin (from about 1/2 pineapple)

Steps:

  • Combine all ingredients plus 1/2 cup water in a small saucepan and place over medium heat. Bring to a boil; reduce heat to a simmer, and cook until sauce is reduced by half and thickened, about 30 minutes. Strain through a sieve. Glaze may be stored in an airtight container for up to 1 week. Before serving chicken or pork, brush with heated glaze.
