POPPY SEED SWEET BREAD
This Poppy Seed Bread is a family favorite recipe. This quick bread is perfectly moist and bursting with flavors of poppy seed, vanilla and almond extract. Finished with a touch of orange in the delicious glaze. Great for breakfast or brunch!

Steps:
- Combine sugar and oil in a large bowl, beat until blended.
- Add eggs, one at a time, beating after each addition.
- Add flavorings and poppy seeds, mix well. Set aside.
- In another bowl, combine flour and baking powder. Add to creamed mixture, alternately with milk, until well blended.
- Pour into 2 loaf pans.
- Bake at 350 degrees for 45 minutes.
- Remove from oven, let cool for 5 minutes in the pan.
- Combine glaze ingredients; poke a few holes in the top of the bread and pour glaze over breads while still in pans.
- Let stand 5 minutes more; remove from pans to cooling rack.
GLAZED POPPY SEED BREAD
Steps:
- Line the bottom of the loaf pans with waxed or parchment paper and then grease and flour the entire loaf pan well.
- In a large bowl whisk together the eggs and oil. In a medium-size bowl, whisk together the sugar, flour, salt and baking powder. Add 1/3 of the dry ingredients to the egg/oil mixture and whisk to combine. Add 1/2 of the milk and stir together. Add another 1/3 of the dry ingredients and mix well. Add the last half of the milk and stir. Finally add the last 1/3 of the dry ingredients and mix. Add the extracts and poppy seeds and mix well.
- Pour the batter into the prepared loaf pans, filling about 2/3 to 3/4 full. Bake at 350 degrees for approximately 60 minutes checking often the last 10 minutes of baking to ensure the bread doesn't overbake. When completely baked, a toothpick inserted in the middle should pull out moist crumbs but not wet batter.
- While the bread is baking, combine the glaze and ingredients and mix well. Set aside.
- Let the bread sit in the pan for five minutes. Run a thin-edged knife around the edges of the bread and carefully remove the bread from the pans onto a wire rack set atop a layer of paper towels. Brush the tops of the bread with the glaze while the bread is still warm. Continue brushing and/or gently pouring until all the glaze is on the bread. Cool completely before slicing.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans.
- Mix the flour, salt, baking powder, eggs, milk, vegetable oil, white sugar, poppy seeds, 1 1/2 teaspoons of the vanilla, lemon and butter flavoring. Stir until just combined and pour the batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 1 hour. Cool for 5 minutes then poke holes in the top of the bread with a meat fork and pour glaze over tops.
- To Make Glaze: Mix the orange juice, confectioner's sugar, and the remaining 1/2 teaspoon each of the vanilla, butter and lemon flavorings. Use immediately to pour over the still warm loaves.

- Preheat the oven to 350 degrees.
- Spray and dust with flour (put a little flour in after spray, tap the pan as you turn it to coat all sides and the bottom) 6 mini loaf pans.
- In the bowl of a standing mixer, beat the eggs, sugar, milk, buttermilk and oil until combined.
- Add the almond, butter and vanilla extracts and mix again.
- In a separate bowl, whisk together the flour, salt, baking powder and poppy seeds.
- Add to the wet ingredients and mix until everything is incorporated. Do not over mix.
- Pour evenly between 6 pans (sometimes I use 5 but NEVER use only 4 pans or you'll have an oven fire), and bake for 55 minutes. see note
- Allow to sit for a couple of minutes, and then while it's still warm, roll in the glaze and pop back into the pans for delivering to friends and neighbors.

- Preheat oven to 350 degrees F (175 degrees C). Grease bottoms of two 9-inch loaf pans.

- Combine first 6 ingredients in large bowl; make a well in center of mixture. Combine skim milk, vegetable oil, egg and 1 TBL lemon juice; add mixture to well in dry ingredients, stirring just until moistened.
- Pour batter into an 8 ½ x4 ½ x3-inch loaf pan coated with cooking spray. Bake at 400 degrees for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan and let cool on wire rack.

- Preheat oven to 350 F degrees.
- Grease and flour two regular size loaf pans.
- Combine flour, baking soda, and salt in a large bowl and whisk together.
- In another bowl, combine sugar, eggs, and oil.
- Add the flour mixture alternately with the milk into the egg mixture, mixing between each addition by hand.
- Stir in poppyseeds (yes, it really is 1 1/2 Tbsp) and flavorings.
- Pour into prepared loaf pans and bake at 350 F for 1 hour, or until cake tests done (you may need another 15 minutes baking time).
- When baked, set the loaf pans on a rack (leaving loaves in pans).
- Combine glaze ingredients and pour all over the still warm loaves (if you like, poke holes in the surface with a skewer before pouring glaze so that it leaks into the bread).
- The center of the bread will be very, very moist- almost wet from the glaze.
