Steps:
- Gather the ingredients. Preheat oven to 375 F.
- Add the lemon juice to a mixing bowl with a quart of cold water.
- Peel the yams and cut into 2-inch chunks. Toss them in the lemon-water mixture as you work to prevent discoloration.
- In a small saucepan, melt the butter over medium heat and add the maple syrup, stirring to combine. Remove from heat.
- Drain the yams, but don't rinse. Add to a mixing bowl and pour in the butter-maple mixture, salt, and pepper. Toss with a spatula to combine.

- If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. Drain; cool slightly and peel. - Peel yams and slice into 1/8 inch thick circles. Pierce each slice with a fork.
- Place yams in large stock pot. Cover with water just until submerged.
- Add sugar, wine, vanilla extract and nutmeg. Stir to incorporate.
- Cover. Refrigerate over night. (it is even better if you allow it to sit for two days).
- Preheat oven to 375.
- Remove the yams from the water. Place on paper towels to drain. Do not discard the marinade.
- Melt butter and allow to cool.
- Place yams in large mixing bowl. Pour butter over yams. Add orange zest and toss to coat.
- Place yams in single layers on cookie sheet coated with olive oil. Bake for 25 minutes or just until tender switching to broil for the last five minutes of cooking. Check for tenderness. Do not over cook. They should not be mushy.
- Glaze:.
- Place one cup of the marinade into a sauce pan.
- Add three tablespoons of splenda brown sugar 1 tablespoon of nutmeg.
- 1/4 cup of sutter home zinfandel wine. Stir and cook until reduced. About 15 to 20 minutes. When thickend, remove from heat and add 1 tablespoon of butter.
- Serve three slices of yams (1/2 cup) w/ glaze drizzled on top or make a nice pattern on the plate.
- Alternative glaze: 8 or 10 year old modena balsamic vinegar.

- Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
- Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.

- Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.

- Heat oven to 400 degrees. Wash and peel the yams, then cut into 1/2-inch pieces. Transfer the yams to a 9-by-13-inch baking dish.
- In a medium pot over medium heat, cook the butter until it starts to bubble, about 2 minutes.

- Stir salt into 2 quarts cold water in a large pot. Transfer sweet potato pieces to pot and place over high heat; bring to a simmer. Reduce heat to medium-low and simmer until potatoes are not quite tender but still cooked, 5 to 7 minutes. Use the tip of a knife to test for doneness. Drain.
- Place brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and pinch of salt in a skillet. Place over medium-high heat, stirring until glaze ingredients melt and start bubbling. Continue cooking, stirring occasionally, until mixture begins to thicken up, 4 to 6 minutes.
