1 box Betty Crocker™ Gluten Free yellow cake mix
1/2 cup cold butter
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/3 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • Place cake mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat cream cheese, sugar, vanilla and egg with electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
  • Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

1 teaspoon butter, or as needed
1 ½ cups graham cracker crumbs, or more as needed
⅓ cup butter, melted
2 (8 ounce) packages cream cheese, at room temperature
½ cup white sugar
2 large eggs
1 teaspoon vanilla extract
3 Granny Smith apples - peeled, cored, and diced
2 tablespoons white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
½ cup brown sugar
½ cup all-purpose flour
1 tablespoon finely chopped walnuts, or to taste
¼ teaspoon ground cinnamon
¼ cup butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9x13-inch baking pan.
  • Mix graham cracker crumbs and melted butter together in a bowl until crumbly, adding more crumbs if mixture is too wet. Press crust into the prepared baking pan.
  • Bake in the preheated oven until golden and set, 7 to 8 minutes. Remove from the oven and set aside.
  • Beat cream cheese and 1/2 cup sugar using an electric mixer in a large bowl until smooth. Add eggs, one at a time, beating after each addition. Beat in vanilla extract on low speed until mixture is blended. Pour filling over warm crust.
  • Stir apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice together in a separate bowl; spoon evenly over filling.

1 teaspoon grated lemon peel
1/4 cup unsalted butter, melted

1/4 cup lemon juice
1/2 cup packed light brown sugar
1 1/2 cups chopped apples

Steps:

  • Heat oven to 325°F. Lightly grease 8- or 9-inch square pan with butter or cooking spray.
  • In food processor, place graham crackers, granulated sugar and lemon peel. Cover; process until fine crumbs form. Add melted butter. Cover; process until crumbs are evenly moistened. Press mixture in bottom of pan. Bake 10 minutes or until lightly browned. Cool 10 to 15 minutes.

  • In small bowl, toss apples with 1 teaspoon lemon juice. Sprinkle over filling.
  • In medium bowl, mix 3/4 cup brown sugar, the flour and cold butter with fork or fingers until crumbly. Stir in granola. Sprinkle over apples and filling.
  • Bake 35 to 40 minutes or until topping is lightly browned and center is almost set (center should jiggle only slightly when moved). Cool on cooling rack 1 hour. Refrigerate at least 1 hour or until chilled. Cut into 3 rows by 3 rows.

1 1/2 cups almond flour, (finely ground)
1 1/2 cups oat flour
3/4 cup rolled oats
1/2 teaspoon sea salt
1/2 cup butter, (melted and cooled)
1/3 cup pure maple syrup
1/2 teaspoon pure vanilla extract
8 ounces cream cheese, (brick style)
1/4 cup granulated sugar, (or Monkfruit sweetener)
1 large egg
1 teaspoon pure vanilla extract
2 medium apples, (any variety), (peeled, cored and finely diced)
1 teaspoon lemon juice
1 tablespoon brown sugar, (or Monkfruit sweetener)
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350°F. Line an 8-inch square pan with parchment paper, leaving an overhang on two sides. Grease the other two sides of the pan with a small amount of butter or coconut oil.
  • In a medium bowl, combine the ingredients for the crust, stirring until well mixed. Reserve 1 cup of the mixture and set it aside to use for the crumble topping. Press the remaining mixture evenly into the baking pan, using your fingers or the base of a drinking glass. Bake for 14 - 15 minutes or until slightly puffed and golden. Cool while preparing the filling and apples.
  • Using an electric mixer, beat softened cream cheese with sugar, egg and vanilla extract until very smooth.
  • Spread the filling evenly over the slightly cooled crust.
  • Finely dice the apples so that the bars will be easy to slice (and eat!) Transfer them to a bowl and toss with lemon juice, brown sugar, cinnamon and nutmeg.
  • Arrange them on top of the cheesecake layer.
  • Finally, sprinkle the reserved crumble topping over the apples. Bake at 350°F. for 40 - 45 minutes.
  • Remove from the oven and let cool completely before slicing. Drizzle with caramel sauce for an extra delicious treat!

150 grams gluten free multipurpose flour
50 grams light brown sugar
1/4 teaspoon (1 gram) kosher salt
85 gram unsalted butter, cold
45 grams brown sugar
90 grams gluten free multipurpose flour
1 teaspoon apple pie spice or cinnamon
¼ teaspoon salt
45 grams unsalted butter, at room temperature
250 grams peeled, chopped apples (around 2 medium size apples)
20 grams light brown sugar
1 1/2 teaspoons apple pie spice
340 grams cream cheese, full fat, at room temperature
80 grams brown sugar
1 large egg, room temperature
1 large egg yolk, room temperature
1 teaspoon vanilla (vanilla paste would be amazing!)
1/2 teaspoon kosher salt
Caramel Sauce

Steps:

  • Preheat the oven to 350F
  • Line an 8×8 (or 9×9 pan) with parchment paper and set aside. Make sure to leave some overhang on the sides to remove the cheesecake easily from the pan.
  • Whisk together the gluten free flour, brown sugar and salt in a medium sized bowl.
  • Cut your butter in small pieces and add to the flour mixture. You can use your clean hands or two forks to work the butter into the flour until it is crumbly.
  • Press the mixture in an even layer into the prepared pan. I like to use an offset knife for this or the back of a spoon.
  • Bake the crust at 350F for 12 to 14 minutes or until light golden brown.
  • When your crust is done baking, do NOT turn off the oven.
  • Combine dry ingredients in a small bowl, add butter, and with a fork or your hands crumble together until it resembles a streusel topping. S
  • tore in the fridge until ready to use
  • Peel and chop your apples in small, even sized pieces. Toss with brown sugar and the apple pie spices and set aside.
  • In the bowl of your stand mixer (fitted with the paddle attachment), mix together the room temperature cream cheese, brown sugar and vanilla until light and fluffy. This should take around 2-3 minutes.
  • Scrape down the sides of your bowl with a spatula. Beat in the eggs and the egg yolk one at a time, just until combined; do not overmix once you've added the eggs.
  • It is okay if there are still a few smaller pieces of cream cheese in the batter!
  • Pour the cheesecake filling over your prebaked gluten free shortbread crust and smooth out with a small offset knife or the back of a spoon. It's okay if the crust is still warm when you do this.
  • Top the cheesecake filling with your sugar tossed apples. Do not add any of the liquid the apples may released.
  • Sprinkle the streusel evenly over the apples.
  • Bake your cheesecake bars at 350F for 35-40 minutes until the streusel is golden brown and the filling looks set (this might be tricky to see because of the apples and the streusel topping)
  • Carefully remove the cheesecake from the oven and allow to cool at room temperature.
  • Once fully cooled, move them to the fridge and allow them to cool completely for at least 4hrs, preferably overnight.
  • When ready to serve, cut them cheesecake bars with a clean knife in pieces and serve.
