MEAT LOVERS CHEESEBURGER

This Meat Lovers Cheeseburger is loaded up with a burger, pulled pork, and bacon! Topped with cheese and a sweet and tangy sauce, it's the ultimate burger!

1 packet KC Masterpiece BBQ Sauce Mix & Dry Rub Sweet Honey
1/2 cup lemonade
1/4 cup raw apple cider vinegar
2 tbsp honey
1 lb 85% ground beef (seasoned to preference)
1 tbsp butter
2 slice cheddar cheese
1 cup shredded pulled pork (leftover or freshly made)
4 strips bacon
2 brioche or hamburger buns (toasted)

Steps:

  • Wisk together all ingredients in a medium bowl and set aside to thicken.
  • Cook the bacon as desired.
  • Form ground beef into two 1/2 lb patties, you can make 3 or 4 smaller patties if you'd like. Add butter to a medium skillet and melt over medium heat. Add patties to the pan and cook for 4 to 5 minutes on each side until the internal temperature is 165°F. In the last minute of cooking, add a slice of cheese to the top of each burger to melt. I usually toast my buns in the last few minutes of cooking too.
  • Warm up the pulled pork.
  • Spoon some of the prepared sauce onto the bottom of the bun, place burger on top of sauce, add half the pulled pork, then top with another spoonful of sauce, then add the bacon and top with the bun.

2 ripe plum tomatoes
sliced inch thick
Sprinkle of oregano
Salt and pepper
EVOO - Extra Virgin Olive Oil
for drizzling
lb. pancetta
speck or bacon
finely diced
1 lb. ground beef sirloin
2 large cloves garlic
minced or grated
A handful flat-leaf parsley
finely chopped
About 1/8 lb. spicy salami pieces
soppressata bits or hot ham ends
coarsely chopped
lb. ham
prosciutto or prosciutto cotto ends
4 thick deli sliced provolone cheese
4 crusty rolls
split
A handful arugula leaves
A handful basil leaves
torn
Thinly sliced red onion

Steps:

  • Heat the oven to 350
  • Arrange the tomatoes on a cooling rack over a baking sheet and season with oregano, salt and pepper
  • Drizzle with EVOO and roast for about 40 minutes to tart them up
  • In a medium skillet, brown the pancetta (or speck or bacon) in a bit of EVOO and let cool
  • Place the beef and pancetta in a bowl, then add the garlic, parsley, a little salt and lots of pepper
  • Grind the salami and ham in the food processor into fine bits; add to the meat
  • Form the meats into 4 patties, thinner at the center than at the edges for even cooking
  • Drizzle the meat with EVOO and cook in a hot cast-iron skillet or a large nonstick skillet over medium-high heat for 8 minutes for medium, flipping occasionally
  • Top with the cheese and melt
  • Serve on the rolls, topped with the oven-roasted tomatoes, arugula, basil, red onion and a drizzle of EVOO

This recipe is from the Time-Life Family Favorites collection. I have modified it to suit my tastes. The walnuts and basil really make this dish. You can use any frozen veggie combo in this as long as they are small veggies - I use peas and corn.

1/3 cup instant rice (white or brown)
1/2 cup water
3 tablespoons vegetable oil, divided
1 1/2 cups frozen vegetables
1/3 cup quick-cooking oats
1/3 cup chopped walnuts, toasted
1/2 cup shredded mozzarella cheese
1 tablespoon flour
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 egg, slightly beaten

Steps:

  • In a small saucepan, combine rice and water. Bring to a rolling boil. Reduce heat to medium-low and cover. Simmer until all the water is absorbed, about 10 minutes. Set aside.
  • In a large skillet, heat 1 tablespoon of oil. Add frozen veggies and cook for 1 minutes or so to soften. (This is also the stage where you would cook onions and garlic if you would like to add them!).
  • Remove veggies to a large bowl. Stir in rice, oats, walnuts, cheese, flour, basil, salt and pepper into vegetable mixture. Add the egg and stir until starchy, about 1 minute. (Make sure to beat the egg BEFORE adding to the other ingredients. Otherwise your patties won't bind as well.).
  • Using a 1/3 cup dry measure, scoop and form mixture into 8 patties.
  • In the same large skillet you cooked the veggies, heat the remaining 2 tablespoons of oil over medium heat. Cook patties in oil until browned on one side, about 3 minutes. Turn over and continue cooking until browned and cooked through, about 2 minutes.
  • Serve however you like - I suggest inside of pita bread.

8 slices bacon
½ white onion, diced
1 clove garlic, minced
1 tablespoon balsamic vinegar, or to taste
5 fresh mushrooms, chopped
½ pound ground beef
½ cup dry bread crumbs
1 teaspoon Italian seasoning
1 ½ tablespoons grated Parmesan cheese
1 egg
salt and pepper to taste
1 malted wheat hamburger bun, split in half
2 slices tomato
2 slices Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a skillet over medium heat, and cook until brown and crisp. Remove bacon from skillet and drain on paper towels.
  • Return the skillet to the heat and increase the temperature to medium-high. Add the onion and garlic, and stir fry until the onion is soft and the garlic begins to brown. Add the balsamic vinegar, and cook while stirring for one minute. Add the chopped mushrooms, and cook for three additional minutes. Remove pan from heat and set aside.
  • Finely chop 4 slices of the bacon (reserving the remaining 4). In a medium bowl, combine the chopped bacon, ground beef, bread crumbs, Italian seasoning, Parmesan cheese, mushroom mixture and egg. Mix well using hands. Season with salt and pepper, and form into two patties.
  • Open the two halves of the hamburger bun on an ungreased cookie sheet. Place one beef patty on each half, and cover each with one slice of tomato, 2 slices of the reserved bacon and one slice of Swiss cheese.
  • Bake for 25 minutes in the preheated oven, or until meat has cooked through.

12 slices sandwich bread
1 large egg, beaten
¼ cup mayonnaise
9 slices provolone cheese
5 slices mortadella
8 slices ham
12 slices capicola
14 slices pepperoni
16 slices salami
1 cup peperoncini
4 tablespoons unsalted butter
½ teaspoon garlic powder
½ teaspoon italian seasoning

Steps:

  • Place a slice of bread on top of a piece of plastic wrap on large cutting board. Brush the right edge of the bread with egg wash and place the left edge of another slice of bread over the brushed edge, pressing together firmly. Repeat with the rest of the bread so you have a rectangle of 4 slices across and 3 slices down.
  • Using a rolling pin, roll out the bread so all of the pieces of bread are sealed together.
  • Spread mayonnaise over the bread, then arrange the sliced provolone across, starting about ¼ of the way up the bread. Layer on the mortadella, ham, capicola, pepperoni, salami, and peperoncini.
  • Starting at the bottom, roll the sandwich tightly, then cover snugly with plastic wrap. Chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
  • In a small bowl, melt the butter in the microwave for 1 minute, stirring every 15 seconds, or until fully melted. Mix in the garlic powder and Italian seasoning.
  • Transfer the sandwich roll to the baking sheet. Brush the outside with the garlic butter and bake for 18-20 minutes or until golden brown.
  • Let the roll sit for 5 minutes before cutting into thick slices.
  • Enjoy!

I got the basic recipe from a friend and jazzed it up a bit. His recipe called for Bacon Bits and I used real bacon, baked in the oven. One of the best burgers I have made. I recommend baking the bacon in th oven instead of pan frying.

1 lb ground beef
1 large egg
1/4 cup breadcrumbs
2 tablespoons breadcrumbs
6 slices bacon, any kind that you like
1/4 teaspoon sea salt
garlic powder, to taste
2 -3 slices bacon, for topping

Steps:

  • For Bacon: Preheat the oven to 375 degrees.
  • Line a cookie sheet with aluminum foil and parchment paper (this saves on clean up time).
  • Place all the bacon on the cookie sheet and bake for 10 minutes. Check the bacon; you might have to bake it for about 5 minutes more.
  • Take bacon out of the oven (leave the oven on; but turn it down to 350 degrees) and let cool on a paper towel covered plate. When cool enough to handle, chop 6 slices of the bacon into small bits. There should be 2 to 3 extra slices put aside for topping the burger.
  • For the Burgers: In a medium bowl, mix together the ground beef, egg, breadcrumbs, chopped bacon, and sea salt. Divide into 3 patties.
  • Sear the patties on the stove top; 3 minutes for the first side on medium-high heat. Then turn the heat down to medium and sear the second side for about two and half minutes.
  • Then, put the seared burgers on a cookie sheet lined with aluminum foil and parchment paper and pop into the oven for about 15 to 20 minutes.
  • After 15 to 20 minutes take the purger out of the oven. Place on a plate covered with paper towels and let drain for a minute or two.
  • Put on toasted bread, buns, or whatever you like to eat a burger on and top with you favorite condiments. Don't forget the 2 to 3 slices of bacon tha twas put aside.
