The Real Mojito image

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

"You can drink a mojito without really thinking about it, and that's a pretty good recommendation for a summer cocktail," William Hamilton wrote in a 2002 article about the cocktail and its increase in popularity in the United States. The mojito originated in Cuba as a farmers' drink in the late 19th century as Cuba's rum industry modernized, making the mojito as common as beer. Only the rich drank it with ice and soda. This version is straightforward and simply perfect for a hot day. Muddle a handful of fresh mint leaves and some lime juice in the bottom of a glass. Then add rum, sugar, ice and a bit of club soda. Shake and serve.

  • Muddle 2 lime wedges, 6 mint leaves and 1 perilla leaf. Add 40ml rum, 2 tsp sugar syrup and 25ml ginger and lemongrass cordial. Half-fill a glass with ice, pour in the cocktail and stir. Add more ice, top with soda water and stir. Garnish with a lime slice, a perilla leaf and a mint sprig.

1 1/2 teaspoons superfine sugar
1/2 ounce homemade Mint Syrup (page 156)
1 1/4 ounces freshly squeezed lime juice
1 3/4 ounces Flor de Caña four-year-old rum
1 ounce club soda
2 dashes Angostura bitters, for garnish

Steps:

  • Lightly muddle the mint leaves with the sugar in the bottom of a Collins glass. Add the syrup, juice, and rum. Fill with large cold ice cubes and shake briefly. Top off with the club soda. Garnish with the bitters.

This is a traditional mojito recipe, very similar to the drinks I enjoyed in Varadero, Cuba. The muddling and the order of the ingredients helps ensure that all the flavors are well blended. Serve with a straw and a decorative stir stick to keep the different flavors well mixed together. Mint sprigs may be used for a garnish instead of lime wedges. Enjoy!

  • Mix sugar and lime juice in a glass; add mint and muddle until mint is broken down. Add sparkling water and ice cubes. Mix rum and champagne into the drink.
