Gluten-free Cinnabon®-like cinnamon rolls...the best! No one has guessed yet that they are homemade gluten-free cinnamon rolls! It took me a while to perfect this recipe that I came up with but it finally works.

¼ cup white sugar
2 ¼ teaspoons quick-rise yeast
1 ¾ cups gluten-free all-purpose flour
2 ½ teaspoons baking powder
1 ½ teaspoons xanthan gum
½ teaspoon baking soda
½ teaspoon salt
⅔ cup milk
1 tablespoon unsalted butter
¼ cup olive oil
1 large egg
½ teaspoon vanilla extract
2 tablespoons gluten-free all-purpose flour, or as needed
½ cup brown sugar
1 tablespoon ground cinnamon
⅓ cup unsalted butter, melted
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese, softened
¾ cup powdered sugar
½ tablespoon lemon juice
½ teaspoon vanilla extract
1 dash salt

Steps:

  • Combine sugar and yeast for dough in a small bowl. Mix 1 3/4 cups flour, baking powder, xanthan gum, baking soda, and salt together in a second bowl.
  • Place milk and butter in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until 110 to 115 degrees F (43 to 46 degrees C), about 45 seconds. Whisk into the yeast mixture and set aside to proof, about 5 minutes.
  • Combine proofed yeast with olive oil, egg, and vanilla extract in a large bowl; mix for a moment and then slowly add in the flour mixture. Mix with an electric mixer on medium-high speed until dough thickens and loses some of its stickiness, about 1 1/2 minutes.
  • Cover a work surface with a sheet of good quality plastic wrap and a light layer of flour. Place dough in the center and cover with a little more flour and another sheet of plastic wrap. Roll out to a 10x13-inch rectangle; remove top layer of plastic wrap.
  • Combine brown sugar and cinnamon for filling in a small bowl. Spread melted butter over the entire dough rectangle and sprinkle brown sugar mixture evenly over top.
  • Start at a long edge and roll the dough, using the plastic wrap to help lift and roll as you go. Lightly sprinkle dough with more flour and cut into 10 pieces with a sharp knife. Place rolls in a greased baking pan, cover with plastic wrap, and place in a warm spot to rise for 15 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until tops are golden brown, 22 to 27 minutes.
  • While rolls are baking, beat butter and cream cheese for frosting in a mixing bowl until smooth. Add powdered sugar; mix until smooth. Mix in lemon juice, vanilla extract, and salt.
  • Remove cinnamon rolls from the oven and immediately drizzle frosting over top.

An easy, delicious gluten-free recipe made from gluten-free bread mix. You can alter the amount of whipping cream and glaze depending on how decadent you want them!

1 ¾ cups warm water (110 degrees F/45 degrees C)
1 (20 ounce) package gluten-free bread flour mix (such as Bob's Red Mill®)
2 eggs, at room temperature
¼ cup vegetable oil
1 teaspoon cider vinegar
2 tablespoons melted butter
1 cup white sugar
1 teaspoon ground cinnamon
½ cup heavy whipping cream
1 cup confectioners' sugar
1 tablespoon milk

Steps:

  • Mix warm water and yeast packet from bread mix together in a bowl and let stand until foamy, about 5 minutes.
  • Place bread flour mix in the bowl of a stand mixer and add eggs, vegetable oil, vinegar, and yeast mixture; mix using the stand mixer set to low speed until smooth. Turn speed to medium and beat until mixture thickens, about 15 seconds. Transfer dough to a greased bowl, cover bowl with a dish, and allow dough to rise in a warm place for 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread dough onto a piece of plastic wrap. Brush melted butter over dough and sprinkle white sugar and cinnamon over dough.
  • Roll dough into a jelly roll-type loaf by lifting 1 end of the plastic wrap and forming dough into roll. Place roll into a glass baking dish. Cut 1/2- to 1-inch slits into the loaf. Pour cream over the loaf.
  • Bake in the preheated oven until dough is cooked through, 20 to 30 minutes. Break rolls apart.
  • Mix confectioners' sugar and milk together in a bowl until glaze is smooth; drizzle over warm rolls.

This is a combination of two or three recipes. Makes some absolutely delicious and decadent cinnamon rolls. The frosting is good straight out of the bowl. I have successfully substituted buckwheat flour and rice flour for the millet flour in this recipe and a review has used oat flour to great success as well. I'm betting brown rice flour wouldn't be horrible either. The last 2 times I made these, the dough required a bit more flour than listed.

1/4 cup white sugar
2/3 cup skim milk, warmed
1 tablespoon yeast
1 large egg
1/4 cup canola oil

1/2 cup millet flour (or rice or brown rice or oat)

2 1/2 teaspoons xanthan gum

Steps:

  • Dissolve the yeast in large mixing bowl with warmed milk. Let bubble for a few minutes.
  • Add sugar, butter, oil, and vanilla to milk/yeast mixture. Stir to combine.
  • Add egg and combine thoroughly.
  • Sift together salt, potato starch, cornstarch, millet flour, baking soda, baking powder, and xanthan gum.
  • Slowly add flour mixture to mixing bowl. Stir until well combined. If the dough appears too sticky/wet, add more flour as necessary.
  • Remove dough from mixing bowl and place in a greased container and put in a warm place to rise for 45-60 minutes. The dough will be extremely sticky, do not worry, this is normal.
  • Preheat oven to 400°F.
  • Roll dough to 1/4" thick 13 x 13 square between 2 pieces of well floured parchment paper.
  • Remove top sheet of paper from rolled dough and spread softened butter on top of dough.
  • Combine brown sugar and cinnamon and sprinkle over buttered dough surface. Leave a 2" strip of dough uncovered at one end of square. Some reviewers have commented that there is too much filling, if so, don't use it all ;).
  • Using bottom sheet of parchment paper has an aid, roll the dough into a log. Start at the end opposite of that which you left uncovered.
  • Carefully cut into 8 equal pieces using a serrated knife. Place rolls in a greased baking dish, leaving about half an inch between rolls to allow for expansion. Put any remaining cinnamon/sugar mixture in the bottom of the dish.
  • At this point you can either bake them or allow them to rise a bit longer.
  • Bake in oven for ~18-22 minutes until tops are golden brown and delicious. Check for doneness by running a knife between rolls in the center of the dish. Dough should not easily stick to the knife.
  • While the rolls are baking, whip together frosting ingredients until soft and creamy. Try not to eat it all before the rolls are done!

4 cups gluten-free flour, plus extra for dusting (recommend Cup 4 Cup)
2 teaspoons salt
1 quart heavy cream
2 tablespoons granulated sugar
8 teaspoons baking powder
1 cup packed brown sugar
3 tablespoons ground cinnamon
1/3 cup butter, softened
6 teaspoons butter, softened
1 1/2 cups powdered sugar
2 tablespoons cream cheese, softened
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat the oven to 400 degress.
  • For the rolls, combine 4 cups flour, 2 tsps of salt, 2 tbsp of sugar and 8 tsps of baking powder in a medium bowl.
  • Once combined add 1 quart of heavy cream.
  • Stir together gently until a shaggy mass comes together. If it seems too wet, add more flour 1 tbsp at a time.
  • Turn out onto a generously floured work service and knead until a semi cohesive mass comes together (maybe 30 seconds to a minute). Roll out with a floured rolling pin until it is roughly 16 inches long by 12 inches wide, should be approximately 1/4 inch thick).
  • Combine brown sugar and cinnamon into a small bowl.
  • Spread 1/3 cup of butter evenly over the dough, then sprinkle the cinnamon/sugar mixture evenly over the surface of the dough.
  • Working carefully, from the long edge, roll the dough down to the bottom edge.
  • After trimming the edges, cut the dough into 1.5 inch slices, and placed into a lightly greased baking dish with the edges touching. (or you can use a 1/2 sheet pan lined in parchment).
  • Bake for 20-25 mins or until golden brown.
  • While the rolls are baking, make the icing by mixing the powdered sugar, vanilla extract, butter, cream cheese and salt in a stand mixer until fluffy and smooth.
  • When the rolls are done, spread generously with icing.

1 tablespoon butter
1 packet yeast
¼ cup granulated sugar
½ cup potato starch
½ cup brown rice flour
¼ cup finely ground almond flour
¼ cup tapioca starch plus more for flouring your surface
½ teaspoon baking soda
1½ teaspoon xanthan gum
2½ teaspoon baking powder
½ teaspoon salt
1 large egg
¼ cup olive oil
½ teaspoon vanilla
FILLING:
⅓ cup butter, softened
½ cup brown sugar
2 tablespoon cinnamon
FROSTING:
3 tablespoon butter, softened
2 tablespoon cream cheese, softened
¾ cup powdered sugar
½ teaspoon vanilla
dash of salt

Steps:

  • Preheat oven to 350 degrees. Grease and lightly flour a pie plate. DOUGH: Combine yeast and sugar in large mixing bowl. Microwave milk and 1 tablespoon butter to approximately 110-115 degrees. Whisk into yeast mixture and set aside to proof. Meanwhile in small bowl whisk together potato starch, brown rice flour, tapioca starch, almond flour, baking soda, xanthan gum, baking powder, and ½ teaspoon salt. Once yeast is proofed add in egg, oil, and ½ teaspoon vanilla. Mix for a moment and then slowly add in the flour mixture. Turn the mixer up to medium-high and beat for 1½ minutes - beating long enough is essential, GF flours are "thirsty," the dough will thicken & lose it's stickiness as you beat it. Roll out the dough: this is a sticky dough that you'll want to roll out to approximately a 13 x 10 rectangle. What I have found works best is covering my work surface with plastic wrap and then a light layer of tapioca starch. I place my dough in the center and cover with a bit more tapioca starch and another sheet (or two) of plastic wrap. Roll out to the needed size and then carefully peel off the top layer of plastic wrap. Using a knife or spatula gently spread the ⅓ cup softened butter over the dough evenly leaving ½" space around the edges. FILLING: In a small bowl combine brown sugar & cinnamon. Sprinkle evenly over dough. To roll your dough: start on one of the shorter sides and gently begin rolling your dough into a log form. Use the plastic wrap to help you "lift and roll" the dough as you go along. Try to make it a nice tight roll, however do not try to unroll it and re-do it. You'll end up with a sticky mess. Sprinkle lightly with tapioca starch again. Dip a sharp knife into tapioca starch then cut the rolls into 8 pieces.   • Important note: Make sure your warmed milk and melted butter are not too hot; they should feel warm to the touch but not hot. If they’re too hot, they can kill the yeast. Check them with a thermometer before each step in which they come in contact with the yeast for foolproof gluten-free cinnamon rolls!
  • Add the white sugar to the bowl of a stand mixer (Or large mixing bowl if you prefer to knead by hand) and pour warm milk over. Stir to combine. Sprinkle the yeast over and set aside until bubbly or frothy; you should see a sort of film on the top of the mixture at least. This will take about 5 minutes.
  • Add the melted butter (About 110º F; warm to the touch but not hot) to the yeast mixture. Stir in whisked eggs and apple cider vinegar. Add in gluten-free flour, baking powder, salt, and xantham gum if your gluten-free flour does not contain it (See Note). Attach the bread hook to the mixer and mix on medium speed for about 5 minutes or until dough pulls away from sides of the bowl and is soft. It should not feel dry but a bit sticky. See Note to mix by hand.
  • Lightly oil a large mixing bowl and transfer dough to bowl. Cover and place in a warm spot. Let rise 1 hour. If your spot is cooler, it may take a little longer to rise, but the dough should be a bit puffier and should leave an indentation when poked. It will not double in size.
