GOAT CHEESE STUFFED BAKED CHICKEN MEATBALLS
I didn't think meatballs could get better, but that was until we added creamy goat cheese to the middle of one! These easy baked chicken meatballs come together quickly. When choosing the cheese, goat cheese is an excellent option, but other cheeses will work well. Consider feta, cheddar or mozzarella. If you use a melty cheese (like cheddar or mozzarella), you might want to consider stuffing the cheese into the middle of the meatball and covering it completely with meatball mixture.

- Heat the oven to 425°F and line a baking sheet with parchment paper, foil or a silicone baking mat.
- In a large bowl, stir the breadcrumbs, garlic, oregano, salt, egg, milk and roasted sweet peppers. Add the ground chicken and lightly mix. Try not to over mix the chicken, over mixing will result in a tougher meatball, so use your fingers or a fork.
- Form 16 evenly sized meatballs and place onto the prepared baking sheet. Break the goat cheese apart and press one or two small pieces of goat cheese into the top of each meatball. To help with browning, lightly drizzle the meatballs with olive oil.
- Bake until they are cooked through, the outsides are browned, and they register 165°F in the middle on an instant-read thermometer; 20 to 25 minutes.

- Preheat an oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with aluminum foil, and spray with cooking spray.
- Combine the chicken, eggs, cream cheese, Parmesan cheese, bread crumbs, red pepper flakes, Italian seasoning, garlic powder, vegetable oil, salt, and pepper in a large bowl; mix well. Form mixture into 20 meatballs; place on prepared pan.

I wanted to make chicken meatballs for quite some time and was never able to find a good recipe. I came across one, but modified it based on my own preferences. I thought these came our absolutely delicious and served them with pasta and marinara sauce and homemade garlic bread!

- Preheat the oven to 425 degrees F (220 degrees C).
- Combine chicken, egg, cream cheese, Parmesan cheese, garlic, olive oil, bread crumbs, basil, red pepper, garlic powder, salt, pepper, parsley, and oregano in a freezer-safe bowl and mix well. Place in the freezer for 15 minutes to make the mixture firmer and easier to handle.
- Use an ice cream scoop or cookie scoop to form the mixture into about 14 meatballs a little larger than a golf ball. Add a piece of mozzarella cheese to the center of each meatball, making sure cheese is covered by meat. Place meatballs on a nonstick baking sheet.
- Bake in the preheated oven until juices run clear, 20 to 25 minutes.

- Preheat oven to 350°. In a large bowl, combine bread crumbs and eggs. Add sausage; mix lightly but thoroughly. Divide into 36 portions. Shape each portion around 1/2 teaspoon cheese to cover completely. Place meatballs on a greased rack in a 15x10x1-in. baking pan. GREEN HERBED LEMON CHICKEN BURGERS WITH GOAT CHEESE
Steps:
- Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat and cook the onions until softened, about 3 minutes. Set aside to cool. Wipe out the skillet and reserve.
- Combine the chicken, basil, parsley, oregano, ricotta, garlic, lemon zest, 1 teaspoon salt, 1/2 teaspoon pepper and the cooled onions in a large bowl. Mix well with your hands. Splash your hands with some cold water and mold the chicken mixture into 4 patties.
- Combine the mayonnaise and lemon juice in a small bowl.
- Heat the remaining 1 tablespoon olive oil in the reserved skillet and cook the patties until they're cooked through, 3 to 4 minutes on each side (see Cook's Note).
- Meanwhile, toast the buns in a toaster or on a dry pan and set aside.
- Spread the lemon mayo on each side of the buns. Place the bottom of the bun on a plate, top with the arugula, tomato, one patty, goat cheese and finally the top of the bun. Repeat with the remaining patties.

- Preheat oven to 450F. Drizzle olive oil on a rimmed baking sheet, then place chopped red onion and bell peppers on top. Sprinkle with ½ tsp kosher salt, then toss to thoroughly coat.
- In a large mixing bowl, add ground chicken, eggs, breadcrumbs, parsley, za'atar, sumac, garlic, remaining salt, and lemon zest. Gently stir until will mixed.
- Use a ¼ cup cookie scoop to portion out meatballs. Take 1 level scoop of chicken meatball mixture and place in your hand. Add about ½ tsp of goat cheese right on top in the center. Scoop out another level ¼ cup of chicken and place directly on top of goat cheese. Use your hands to form the meatball and seal it around the cheese. Place on prepared baking sheet with veggies. Repeat with remaining chicken and goat cheese until all meatballs are formed. 2 lbs of ground chicken should yield approximately 16 meatballs.
- Cook for 13-15 minutes, or until an internal temperature of 165F is reached. Serve meatballs with roasted vegetables immediately, adding extra crumbled goat cheese on top as wanted.
