Chicken Breasts With Goat Cheese and Rosemary image

We love this simple dish. It reminds me of chicken kiev. I have also made this with skinless, boneless chicken breasts and it works well if you cut the cooking time a little. But, I think it's better with the skin to keep it moister. From Bon Appetit.

2 teaspoons butter
2 tablespoons shallots, chopped
3/4 teaspoon fresh rosemary, chopped
3 ounces soft fresh goat cheese (such as Montrachet)
1/2 teaspoon black peppercorns, crushed
2 large chicken breast halves, with skin and bones

Steps:

  • Melt 1 teaspoon butter in heavy small skillet over medium-low heat. Add shallots and rosemary and sauté until shallots are tender, about 4 minutes. Remove from heat. Mix in goat cheese and pepper. Season to taste with salt. Using fingertips, loosen skin of chicken breasts, leaving skin attached on 1 long side. Spread half of cheese filling over meat and under skin of each breast. Pull skin over filling and secure with toothpick. Rub remaining 1 teaspoon butter over skin, dividing equally. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Preheat oven to 425°F Arrange chicken on baking sheet. Bake until cooked through, about 25 minutes.

This creamy Goat Cheese Pasta with Chicken and Rosemary is simple enough to make for a weeknight dinner but elegant enough for a special date night in.

1 tablespoon vegetable oil
1 pound dried rigatoni
1 quart heavy cream
2 tablespoons chopped fresh rosemary
1 clove fresh garlic, crushed
8 ounces goat cheese
2 cups shredded roasted chicken
salt and pepper to taste

Steps:

  • 1. Place a large pot of salted water over high heat and bring to a rapid boil. Add the oil and rigatoni to the water and cook according to the directions on the package, 10-12 minutes. 2. While you are waiting for the water to boil, pour the cream into a large sauce pan over medium heat. Add the rosemary and garlic to the cream and bring it to a simmer - take care not to let it boil over. Allow the cream to reduce by about half. 3. Stir in the goat cheese and chicken and continue cooking cooking it till the cream coats the back of a spoon. 4. Thoroughly drain the pasta. Add the pasta to the sauce. Coat the pasta in the sauce and simmer over low heat for a few minutes. Serve hot.

  • In a large skillet, cook your noodles according to package instructions, usually 6-8 minutes (our noodles take 6 minutes). Rinse with cool water, drain, and stir in 1 TBSP olive oil immediately to coat. Set aside.
  • In the same skillet, add 2 TBSP olive oil over medium heat. Add the chicken breasts and cook thoroughly. (I get thinner chicken breasts that usually take 9-10 minutes to fully cook).
  • Once the chicken has cooked, stir in the chicken broth, goat cheese, and heavy cream. Allow to simmer.
  • Once simmering, add the minced garlic, rosemary, and spinach. Continue to stir and simmer until the sauce reduces (about 10-15 minutes). Add in the tomatoes the last 1-2 minutes of sauce reduction.
