PEACH BRUSCHETTA

Number Of Ingredients 9

1 French baguette, sliced 1/4 inch thick
1/4 cup olive oil
1 pound large peaches, cut into small dice
2 tablespoons chopped fresh basil
1/4 teaspoon kosher salt
1/4 cup honey
1 teaspoon apple cider vinegar
1 teaspoon hot sauce, plus more as desired
4 ounces goat cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the baguette pieces in a single layer on a parchment-lined baking sheet, brush both sides with 3 tablespoons of the olive oil and bake until golden brown, 15 to 18 minutes.
  • In a medium bowl, toss together the peaches, basil, salt and remaining 1 tablespoon olive oil.
  • Whisk together the honey, vinegar and hot sauce in a small bowl, adding more hot sauce to taste.
  • To build the bruschetta, start with a piece of baguette, spread with the goat cheese, spoon on some peaches and top with the hot honey.

1/2 Artisan ciabatta demi baguette sliced 1/2 inch thick
3 peach pits removed and diced
1 tablespoon (15 ml) honey
2 tablespoon (30 ml) olive oil
1/4 cup (60 ml) basil leaves roughly torn
1/4 cup (60 ml) walnuts finely chopped (optional)
1 pkg (130 g) Irresistibles Artisan goat cheese

Steps:

  • In a large bowl combine diced peaches, honey, olive oil, basil leaves and chopped walnuts (if using). Crumble in goat cheese and gently toss to combine.Place heaped spoonfuls of peach and goat cheese mixture onto baguette slices.Top with extra basil leaves and a drizzle of honey, if you like.Source: Metro

  • Slice baguette into ½ inch slices at a diagonal. Brush both sides with olive oil and place on a sheet pan in a 400 F oven for 15 minutes, or until crisp. Or alternately, grill on a bbq. Set aside.
  • Place cream cheese and goat cheese in a bowl and either warm in a microwave until just barley soft enough to combine easily with a fork. (I place the bowl in my toaster oven on low). Mix with a fork until smooth. Add some chopped basil ( like 1/3 of the basil ribbons, chopped) salt and cracked pepper, Set aside.
  • Assemble: Spread a little goat cheese mixture on each bruschetta and top with a peach wedge. Garnish with a few basil ribbons, then drizzle with honey, and sprinkle with cracked pepper.

Place the slices on the pan and allow grill marks to form. Flip the slices and mark on the other side. Remove from the pan and allow to cool, then chop into little cubes.
  • When the bread is toasted and still hot, brush one side of each slice using 1 Tbsp of the honey. Top with peach cubes then crumble the goat cheese on top. Garnish with the basil leaves and serve.
