The easiest, yummiest carrots you will ever eat! The recipe is just so quick and easy to make. My husband grew up hating carrots, but he is willing to try anything. When he tasted these, he asked, "What in the world did my mother do to carrots to make them so bad? These are delicious!" He now requests them ... usually about twice a week.

1 pound carrots, cut into 1-inch pieces
2 tablespoons honey
1 tablespoon chopped fresh ginger
1 clove garlic, chopped
salt and ground black pepper to taste

Steps:

  • Combine carrots, honey, ginger, garlic, salt, and pepper in a saucepan over medium heat; stir until carrots are coated with honey. Cook until simmering, about 5 minutes. Reduce heat to low, cover, and steam carrots until tender, 10 to 15 minutes.

Braised in ginger ale and seasoned with chili powder and parsley, Alton Brown's Glazed Carrots from Good Eats on Food Network couldn't be easier.

1 pound carrots, approximately 7 medium, peeled and cut on the bias 1/4-inch thick
1 ounce (2 tablespoons) unsalted butter
Heavy pinch kosher salt
1 cup good-quality ginger ale
1/2 teaspoon chili powder
1 tablespoon chopped fresh parsley leaves

Steps:

  • In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer. Once simmering, remove the lid, stir, and reduce the heat to low. Cover again and cook for 5 minutes. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes. Pour into a serving dish and sprinkle with the parsley. Serve immediately.

6 bunches (about 2 pounds) baby carrots
Salt
2 tablespoons unsalted butter
2 two-inch pieces fresh ginger, peeled and julienned
3 tablespoons honey

Steps:

  • Trim stems of carrots to 1/2 inch. Peel carrots, and wash stem area.
  • Bring a medium pot of water to a boil. Salt water, add carrots, and reduce heat. Simmer until carrots are almost tender, 3 to 4 minutes. Remove carrots from heat, and drain. (Carrots can be prepared earlier in the day to this point.)
  • Melt butter in a large skillet over medium-high heat. Add ginger, and saute, stirring, until transparent, about 2 minutes. Add carrots and honey, and cook for 4 to 5 minutes, or until carrots are glazed. Serve immediately.

2 (8 ounce) packages peeled baby carrots, with some tops still attached
3 tablespoons butter, divided
fine sea salt
3 tablespoons honey, divided
6 thin slices peeled fresh ginger, cut into matchstick-size pieces
1 tablespoon fresh lemon juice
2 tablespoons fresh Italian parsley

Steps:

  • Arrange carrots in single layer in heavy large skillet.
  • Add 1 1/2 cups water and 2 tablespoons butter. Sprinkle with sea salt. Bring to boil, cover, and reduce heat to medium-low.
  • Simmer until carrots are tender, about 10 minutes. Using slotted spoon, transfer carrots to plate.
  • Add 2 tablespoons honey and ginger to skillet and bring to boil, stirring occasionally. Boil until juices are syrupy and pale golden brown, 4 to 5 minutes.
  • Whisk in remaining 1 tablespoon butter, 1 tablespoon honey, and lemon juice.
  • Season to taste with salt and freshly ground black pepper. Spoon ginger sauce over carrots and let stand 10 minutes to cool slightly.
  • Scatter parsley leaves over and serve.

This is a recipe I came up with on a cold rainy day when I did not want to be outside and really felt like cooking. I was just playing around with different flavors while trying to come up with a good side dish to go with supper. To my surprise it worked out very well. Twoolfe has been after me to post it here so enjoy. :)

8 carrots, peeled and washed
1 small onion, skinned and diced
3 -5 garlic cloves, cleaned and crushed
1/4 cup candied ginger or 1/4 cup crystallized ginger, chopped fine
1 tablespoon fennel
1 orange, zest of
1 lemon, zest of
3 tablespoons olive oil or 3 tablespoons butter

Steps:

  • Slice carrots thin like for fried potatoes, a potato slicer or Chinese mandolin slicer works very well for this.
  • In a large frying pan or skillet melt butter or add olive oil to hot skillet.
  • Add onions, garlic, and ginger to skillet and sauté until onions turn translucent.
  • Add fennel and carrots to skillet and stir to combine ingredients.
  • Fry mixture until carrots are tender and just starting to caramelize at the edges.
  • Add grated lemon or orange zest.
  • Remove from heat and let sit for 5 to 10 minutes for the lemon or orange essence can infuse into the carrots.
  • Serve hot.
  • Serves 4 to 6 people or 3 in my family.
