Golden rice salad is a favorite of mine. I love the mix of flavors in this recipe, and it's a real crowd pleaser if you're entertaining guests. I love using Ralston Family Farms long-grain white rice for this dish. Enjoy! Related

Number Of Ingredients 11

1 1/2 cups long-grain white rice
3 cups chicken stock
3/4 cup dried apricots, chopped
3/4 cup golden raisins
2 shallots, finely chopped
1 1/2 tablespoons ground cumin
1 1/2 teaspoons salt, plus more if needed
1/2 teaspoon freshly ground black pepper, plus more if needed
oranges, zested and juiced
2/3 cup pine nuts, toasted
1/2 cup fresh flat-leaf parsley

Steps:

  • Cook the rice in a rice cooker or pot with water or stock.
  • When it's finished, add orange juice and stir in orange zest.
  • While the rice is still warm, add apricots, raisins, shallots, spices and salt and pepper.
  • Add toasted pine nuts and parsley and fluff with a fork to combine the ingredients.
  • Taste and add more salt and pepper if necessary.
  • Serve hot, at room temperature, chilled or rewarmed in the microwave.

4 1/2 cups hot cooked rice (1 1/2 raw rice cooked in 3 cups chicken broth)
1/4 cup oil
2 tbsp. vinegar
Salt and pepper to taste
1/2 cup mayonnaise (I used Veganniase)
2 Tbsp. prepared mustard
1/8 tsp. red cayenne pepper
1 cup black olives (sliced)
2 hard boiled eggs (diced)
1 1/2 cup celery (chopped)
1 carrot (chopped)
1/4 cup dill pickle (chopped0
1 small onion (chopped)

Steps:

  • Cook rice in chicken broth (follow directions).
  • Blend together the oil, vinegar, salt and pepper, pour over hot cooked rice. Toss and set aside to cool.
  • Add remaining ingredients and toss with die. Chill thoroughly. Green onion tops, parsley, or cilantro can be added for garnish.

3 cups hot cooked rice (cooked in chicken broth)
2 hard-cooked eggs, chopped
1 cup celery, sliced
3 tablespoons dill pickles, chopped

1/3 cup onion, finely chopped
1/3 cup mayonnaise

Steps:

  • Pour dressing over cooked rice. Toss and set aside to cool.
  • Add remaining ingredients except salad greens and Bac*O's; toss lightly.
  • Chill throughly.
  • Serve on salad greens and garnish with additional sliced hard cooked eggs, if desired.
  • Sprinkle with Bac*Os.

1 1/2 cups brown rice
1 red capsicum, chopped (red bell pepper)
1 green capsicum, chopped
3 spring onions, chopped
1/2 cup raisins or 1/2 cup sultana
1/2 cup cashews or 1/2 cup peanuts
1/2 cup olive oil
2 tablespoons soya sauce
1 crushed garlic clove
black pepper

Steps:

  • Cook brown rice until tender, allow to cool.
  • To prepare the dressing put the ingredients into a large jar with a tight fitting lid and shake well. Put aside.
  • In a large bowl add the rice and all other salad ingredients.
  • Pour over the dressing and mix through. The flavours improve on standing as the rice soaks in the dressing. Enjoy!

375g rice mix, we used brown basmati & wild rice
2 x 400g cans mixed beans , drained and rinsed
340g can sweetcorn , drained
1 small red onion , finely sliced
2 red peppers , deseeded and diced
zest and juice 1 lime
2 tsp honey
1 red chilli , deseeded and finely sliced
small bunch coriander , leaves picked

Steps:

  • Cook rice following pack instructions. Once cooked, rinse under cold water to cool down. Once cold combine in a bowl with the beans, sweetcorn, onion and red peppers.
  • Mix the lime zest and juice, honey and chilli. Pour over the rice mixture and mix well, then season to taste. Stir through the coriander leaves just before serving.
