Hot dogs are always a hit with the kids (and big kids too) at all the parties that we have. Here using par-bake dinner rolls or small sized rolls and cocktail frankfurts, baked in the oven for a quick appetizer or snack for any party. So easy to make and very economical too. This recipe is easily doubled. Par-bake rolls are found in most supermarkets and sold in packs of 6 or 12.

12 par-bake bread rolls (small size approx 2 inches long) or 12 bread, rolls- small cigar shaped
12 cocktail frankfurters
2/3 cup grated cheese (we like to use Tasty Cheddar cheese)
tomato sauce or mustard, to serve

Steps:

  • .Preheat oven to 200°C and either line a baking tray with paper of lightly grease the tray.
  • Slit the rolls from the top, being careful not to cut all the way through.
  • Place a cocktail frankfurt in each roll and place on the tray. Sprinkle over some cheese.
  • Bake 10 minutes- the cheese should be nicely melted and the frankfurt heated through.
  • Serve with tomato sauce/ketchup or mustard on the side. Enjoy!

These hot dog buns look very much like éclairs, which is no coincidence - they're made from _pâte à choux_ instead of yeast dough. For more information about making _pâte à choux_, see If the Choux Fits Active time: 45 min Start to finish: 1 1/4 hr

Yield Serves 12 children (makes about 40)

Number Of Ingredients 9

1 1/4 cups water
1 1/2 sticks (3/4 cup) unsalted butter, cut into 1/2-inch cubes
1/2 teaspoon salt
1 1/2 cups all-purpose flour
5 large eggs
1/4 lb extra-sharp Cheddar, coarsely grated (2 cups)
1 (12-oz) package cocktail frankfurters
Special equipment: a large sealable plastic bag (not pleated)
Accompaniments: yellow mustard and/or homemade ketchup

Steps:

  • Bring water, butter, and salt to a boil in a 4-quart heavy saucepan over moderate heat. Reduce heat to low and add flour all at once, then cook, beating with a wooden spoon, until mixture pulls away from side of pan, about 2 minutes.
  • Transfer mixture to a bowl, then cool slightly. Add eggs 1 at a time, beating well with an electric mixer at medium-high speed (or beating vigorously with wooden spoon) after each addition (batter will be stiff). Add cheese and beat until combined.
  • Put oven racks in upper and lower thirds of oven and preheat oven to 375°F. Lightly butter 2 large baking sheets.
  • Snip off 1 corner of plastic bag to create a 1-inch opening and transfer cheese mixture to bag, pressing out excess air. Twist bag firmly just above filling, then pipe 18 to 20 (2 1/2- by 1- by 3/4-inch) lengths, about 2 inches apart, onto each baking sheet.
  • Bake, switching position of sheets halfway through baking, until buns are puffed and pale golden, about 30 minutes total.
  • Make 1 1/2-inch lengthwise slits in tops of buns with a sharp paring knife and let dry in turned-off oven 10 minutes.
  • While buns dry, heat a dry well-seasoned grill pan or heavy skillet over high heat until it smokes. Reduce heat to moderate and cook frankfurters, turning, until heated through and golden brown, about 5 minutes.
  • Remove buns from oven and nestle a frankfurter in each opening.

Often described as "dragged through the garden" - referring to all of the vegetable toppings - this hot dog is a joy to eat in honor of the Windy City. A proper Chicago dog is an all-beef frankfurter (such as Vienna Beef) in a poppy seed bun, topped with yellow mustard, neon-green sweet pickle relish, chopped white onion, tomato slices, a dill pickle spear, pickled sport peppers and celery salt. This stovetop recipe is very forgiving, and there are ways to adapt: No poppy seed buns? Just sprinkle a pinch of loose poppy seeds over regular hot dog buns slathered in melted butter. No neon-green sweet relish? Stir a drop or two of green food coloring into regular sweet relish. If you can't find Chicago-style sport peppers, then sliced pepperoncini works in a pinch. Don't skip the celery salt; its herbal lightness makes these dogs shine.

4 tablespoons unsalted butter
4 split poppy seed hot dog buns
4 all-beef hot dogs, preferably bun-length
Yellow mustard
1/4 cup sweet pickle relish
1 small white onion, small-diced
1 small tomato, halved and thickly sliced lengthwise
4 dill pickle spears
4 to 8 sport peppers
Celery salt

Steps:

  • In a large skillet over medium, melt 2 tablespoons butter. Without splitting them in half completely, gently flatten the hot dog buns and place them seam-side up in the pan. Move them around to catch all the melted butter and cook until very lightly toasted at the edges, 1 to 3 minutes. Remove the buns and set aside.
  • Raise the heat to medium-high and add the remaining 2 tablespoons butter to the pan. When the butter is melted, add the hot dogs and cook, rolling occasionally until all sides are browned and looking crispy, 3 to 5 minutes. (See Tip if grilling.)
  • Place the cooked dogs in the buns and top each with as much yellow mustard, relish and onion as you like. On one side of each dog, place a couple of tomato slices; on the other side, place a single pickle spear. Top with as many sport peppers as you can handle. Generously season with the celery salt and serve immediately.

Don't get me wrong; if you hand me a hot dog at the ball game, it's not like I'm going to throw it back in your face, but given the choice this butter-crisped, split-topped bun is the way to go. Thanks to its genius design the meat and fixings go in the top, which leaves three relatively flat sides to toast in butter.

1 (.25 ounce) package active dry yeast (such as Fleischmann's RapidRise®)
3 ½ cups all-purpose flour, divided, or more as needed
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons melted butter
3 tablespoons sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
3 tablespoons melted butter, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk 1/2 cup flour and water into yeast until mixture is smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk egg, 3 tablespoons melted butter, sugar, and salt into yeast mixture; add remaining flour and stir.
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled in size, about 2 hours.
  • Transfer dough to a floured work surface and form into a 5x10-inch rectangle about 1/2-inch thick. Cut dough into 8 equal lengths. Turn each slice cut-side up and form into a hot dog bun shape about 5 inches long. Transfer dough, cut-sides up, to the prepared baking sheet about set them about 1/4-inch apart.
  • Cut a slit about 1/8-inch deep down the center of each bun. Brush 2 tablespoons melted butter over the top and sides of each bun. Let rise until almost doubled in size and the buns have risen into each other, about 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake buns in the preheated oven until golden brown, about 20 minutes. Brush tops with remaining melted butter.
