Roast beef, slow cooked to perfection, basted with an onion sauce, mushrooms, & potatoes on the side.

6 potatoes (red or new preferred)
10 1/2 ounces campbell's golden cream of mushroom soup
1 (82 g) package onion soup mix
4 -5 lbs beef roast
salt
freshly cracked black pepper

Steps:

  • Place mushrooms, potatoes, and beef in crock pot.
  • Mix Golden Cream of Mushroom Soup and dry onion soup.
  • Add beef roast.
  • Cover and cook on low 8 to 10 hours.

Golden mushroom caps are a delicious part of the Porcini Stuffed Mushrooms with Camembert appetizer.

Number Of Ingredients 3

24 tablespoon small button mushrooms
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Remove stems from the mushrooms and reserve if used in filling. Use a damp cloth or mushroom brush to clean mushrooms. Brush each mushroom cap with the olive oil; season with salt and pepper.
  • Place the mushrooms, cap side up, on a baking sheet. Roast until the mushrooms are golden and their liquid begins to seep from the cavity, 6 to 7 minutes. Place cap side up on paper towels to drain. The mushroom caps can be stored in an airtight container for up to 4 hours.

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until fork-tender, about 20 minutes. Drain and place into a large bowl.
  • Mash potatoes with a potato masher. Add milk, butter, garlic, oregano, salt, and pepper; whisk until combined.
