REAL SOUTHERN FRIED CHICKEN

aka "Heart Attack in A Skillet", but, according to the elderly Louisiana gentleman who shared this recipe, the genuine thing. It's been a long time since I made this but I do remember how good it was. Cook time includes marinating time.

1 cup vegetable oil
1 egg, beaten
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/2 teaspoon tarragon
1/2 teaspoon paprika
1 clove garlic, crushed
8 pieces chicken, 1 cut-up fryer,washed and patted dry
2 cups shortening or 2 cups vegetable oil
1 cup flour, seasoned with
salt and pepper

Steps:

  • Marinade: Combine marinade ingredients and chicken pieces in a plastic bag and refrigerate for 2 hours.
  • Chicken: Heat oil in skillet until it sizzles when tested with a drop of water; place seasoned flour in a plastic bag; remove chicken from marinade and add to flour; shake to thoroughly coat; brown chicken quickly on all sides.
  • Cover, reduce heat and cook SLOWLY until chicken is tender and cooked through, about 20 minutes; salt the chicken generously as it fries, poultry absorbs a lot of salt.

IN MEMORY OF MY MOM. This chicken, taught to me by my Mom when I was about 12 years old, was the way everyone I knew did it in Mississippi and Georgia. I hope you like it. It has a crispy, huge thick coating with the southern "touch" (the magical ingredients being the vinegar and baking powder) and tender inside. Oh ! my ! never a chicken like this.

1 whole cut up chicken
1/2 cup vinegar
2 cups self rising flour
1 teaspoon salt
2 teaspoons black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon baking powder
1/2 cup oil (for frying)

Steps:

  • Marinate chicken in vinegar for a minimum of 1 hours -- overnight is better.
  • Mix flour, spices, and baking powder.
  • Heat oil to 350 degrees Fahrenheit.
  • Coat chicken in flour mixture.
  • Brown on both sides; cover.
  • Fry 15 minutes one side.
  • Fry 15 minutes other side.
  • Take off lid.
  • Fry 5 minutes extra to crisp.
  • Thanks for keeping the southern tradition alive.

My recipe for some of the best fried chicken you can make... and eat, prepared with my Recipe #506948. PLEASE NOTE: The Nutritional Information listing here is inaccurate -- since only a fraction of flour, eggs and salt actually end up in the finished product. So be aware -- the suggested sodium, sugar, carbohydrate and calorie levels are ridiculously exaggerated!

2 quarts cold water
2 tablespoons fine sea salt
2 teaspoons Accent seasoning
10 -12 fresh cut-up skin-on chicken pieces
1/3 cup seasoning (Savory Southern Fried Seasoning)
1 3/4 cups all-purpose flour
1/4 cup cornstarch
4 large beaten eggs
peanut oil

Steps:

  • NOTE: YOU CAN SINGLE-BREAD OR DOUBLE-BREAD CHICKEN WITH THIS RECIPE (SEE STEP 6).
  • WHISK 2 quarts cold water (8 cups) with 2 tablespoons fine sea salt and 2 teaspoons Accent seasoning in a large wide saucepan (with an accompanying lid) until dissolved, for the BRINE.
  • RINSE and blot chicken pieces; ADD chicken pieces to marinade; COVER and transfer to refrigerator; MARINATE chicken at least 4 hours in refrigerator (preferably overnight), turning chicken as needed.
  • INTO a large Ziploc bag, add the BREADING ingredients; BREAK up any clumps if present, by hand or using the back of a spoon; SEAL bag containing mixture; SHAKE well until combined.
  • BEAT 4 eggs in a large bowl, for the EGGWASH; REMOVE chicken from brine with tongs; BLOT pieces with paper towels.
  • TO SINGLE-BREAD CHICKEN: Dip one piece breaded chicken using tongs, into the eggwash to wet completely. Drop chicken into the breading. Roll chicken well in the breading to coat. Place breaded chicken onto platter to rest for 15-20 minutes. Repeat with remaining pieces. TO DOUBLE-BREAD CHICKEN: Add 5 teaspoons flour plus 1 teaspoon cornstarch to breading and mix well. Drop chicken into the breading and roll it well in the breading to coat. Drop chicken into the eggwash to wet completely. Quickly return chicken to the breading and roll again to coat well. Place double-breaded chicken onto platter to rest for 15-20 minutes. Repeat with remaining pieces.
  • PREHEAT manufacturer's recommended amount of peanut oil in deep-fryer between to 315°F (OR) preheat enough oil to immerse chicken completely in deep heavy stovetop pot between to 315°F (use a heat-safe thermometer to gauge).
  • PLACE breaded chicken to the elevated fry basket in deep-fryer without crowding; LOWER the basket slowly into the hot oil (or gently lower breaded chicken pieces using tongs into stovetop pot, turning once halfway through frying duration).
  • FRY chicken between 16-20 minutes until golden brown and fully cooked, depending on chicken portions/sizes (juices should run clear when chicken is done).
  • DRAIN on a wire rack over a paper towel-lined baking sheet; REPEAT the same cooking procedures until all chicken is fried. DRAIN chicken on a wire rack over a paper towel-lined baking sheet; TRANSFER rack over a baking sheet and keep chicken warmed in a preheated 170°F oven until serving; SERVE and enjoy!

buttermilk (or heavy cream or half and half)
lard, for frying (about 1-2 cups, you can substitute with vegetable shortening)
flour, for dredging

Steps:

  • Place cut up chicken in a large bowl. Season with garlic powder, salt, and black pepper. Toss to coat. Add buttermilk, again tossing to coat. Set aside (you can cover and refrigerate overnight).
  • Place lard and bacon grease into a large deep cast-iron skillet or dutch oven (you only need about an inch of melted oil). Set on stovetop over medium-high heat and get oil temperature to 350°F.
  • Place flour into a plastic grocery bag. Shake excess buttermilk from a piece of chicken and place into bag of flour. Coat chicken with flour. (A simple method is to hold sides of bag and steadily and gently roll back and forth like cleaning a bowling ball.).
  • Dip an edge of the floured piece into the lard; if it sizzles, it's ready. Begin to flour remaining pieces and carefully place them into the pan/dutch oven.
  • Repeat until the pan is full or all pieces are used. (A whole chicken generally requires two batches and you may need to add just a small amount more of lard for second batch). Cover pot with lid and simmer for 5-7 minutes.
  • Turn chicken over, cover and simmer again for 5-7 minutes. Remove lid and continue cooking until cooked through, or internal temperature of chicken reaches 175°F.
  • Transfer cooked pieces to a plate lined with paper towels or a baking rack with a towel underneath to catch the drippings. If desired, immediately give a light sprinkling of salt.
