4 brown Turkish figs, ripe
2 ounces thinly sliced prosciutto
2 ounces Stilton cheese
3/4 cup Chateau Elan port wine

Steps:

  • Cut figs into quarters and place them in a saucepot with the port wine and bring to boil, simmer and reduce by 2/3. You should have a little less than a 1/4 cup of port at a syrup consistency. Allow the port syrup to cool.
  • On a cutting board, tear thin slices of prosciutto lengthwise in half and place 16 pieces on the board. Take a piece of fig and place it at 1 end of the prosciutto and place a small piece of Stilton cheese on top of the fig and roll the fig with the prosciutto. Continue this process with the remaining figs, Stilton cheese, and prosciutto.
  • To serve, arrange the figs on a platter and drizzle with the port wine syrup.

8 tsp dolcelatte cheese
8 slices prosciutto
small handful chopped parsley

Steps:

  • Remove the hard core from the dried figs. Cut a pocket in each with the point of a knife, then stuff each pocket with ½ tsp dolcelatte cheese.
  • Cut the prosciutto in half lengthways, then wrap up each stuffed fig into a little parcel. Serve scattered with a small handful chopped parsley if you have it.

6 ripe figs, quartered
1 ounce mache
6 ounces Gorgonzola dolce
4 ounces cream cheese, softened
24 slices of white bread
1/2 cup ruby port
2 tablespoons honey
10 whole black peppercorns
2 whole cloves

Steps:

  • Combine port, honey, peppercorns, and cloves in a small saucepan; bring to a boil, and continue cooking until syrupy, 2 to 3 minutes. Set aside to cool.
  • Stir together cheeses; spread on bread with a small offset spatula.
  • Using a 2-inch round cutter, cut bread into rounds.
  • Top with figs, and drizzle with port sauce.
  • Garnish with mache, and serve.

1/4 cup mild or medium-strength honey, such as clover
6 sprigs fresh thyme (3-inch)
12 large ripe figs
2 teaspoons extra virgin olive oil, plus
more extra virgin olive oil, for brushing
2 teaspoons fresh thyme leaves
1 best-quality baguette
6 ounces gorgonzola, at room temperature

Steps:

  • In a small saucepan, bring honey to a simmer, add thyme sprigs.
  • Turn off heat and let cool for 15 minutes or more while grilling the figs and bread.
  • Start a charcoal fire in an outdoor grill or preheat a gas grill, or preheat broiler.
  • Cut figs in half, and toss them in a small bowl with 2 teaspoons olive oil and thyme leaves.
  • Set grill rack 4 inches from fire, or broiler heat.
  • When the charcoal is ashed over and glowing, or the gas grill is medium-hot,or broiler hot, grill figs quickly until they are heated through but not collapsed, 1 to 2 minutes on each side.
  • Transfer to a platter.
  • Cut 24 1/2-inch-thick slices from the bread, and brush both sides lightly with olive oil.
  • Toast bread on both sides on the grill away from direct heat, or under broiler, or in toaster.
  • Spread cheese on toast, and top with figs.
  • Remove thyme sprigs from honey with a fork and discard, then drizzle honey over figs and toast slices.
  • Serve at once.
  • Enjoy!
