PEAR AND GORGONZOLA CHEESE PIZZA
A very interesting appetizer pizza. Sounds strange, but everyone will love the unique combination of fragrant pears and distinctive Gorgonzola.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Place pizza crust dough on a medium baking sheet. Layer with Provolone cheese. Top cheese with Bosc pear slices. Sprinkle with walnuts and Gorgonzola cheese.
- Bake in the preheated oven 8 to 10 minutes, or until cheese is melted and crust is lightly browned. Remove from heat. Top with chives and slice to serve.

Steps:
- In a large saute pan, melt butter over medium heat. Saute onions in butter until the onions are soft and dark brown, approximately 25 minutes. Stir in sugar, and continue cooking for 1 or 2 more minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Grease a pizza pan or cookie sheet, and press out the dough to desired thickness. Spread onions evenly over the dough, and top with crumbled Gorgonzola.
- Bake for 10 to 12 minutes, or until done.

GORGONZOLA PEAR PIZZA

Steps:
- Heat half of the Olive Oil (2 tablespoon) in a saute pan over medium heat, then add Red Onion (1), Granulated Sugar (2 tablespoon), and Salt (1/2 teaspoon). Cook for 15 minutes, stirring occasionally.
- Then, add in the White Wine (1/2 cup) and cook until wine has evaporated, then add a bit more. Continue this process until the wine is gone and onions are soft and caramelized. If onions start to become crispy, reduce heat.
- Preheat oven to 475 degrees F ( 250 degrees C). Spread remaining olive oil over each Pizza Dough (2), then sprinkle each with a pinch of salt, caramelized onions, Fresh Mozzarella Cheese Ball (1/2 cup), Gorgonzola Cheese (3 ounce), Brie Cheese (8 ounce) and Pear (1). Finish with Fresh Thyme (2 sprig).
- Bake for 10 minutes on the lowest rack. If using a firm store bought dough, place directly on rack. If using homemade, place a baking sheet in the oven to get nice and hot, then set pizza on that and bake.
- Then, move to the top rack and broil a few minutes to lightly brown the crust and cheese.
- Serve and enjoy!

- Preheat oven to 450°F.
- Heat oil in non-stick skillet, add onions and saute until softened (7-8 minutes). Add pears and saute for 2 more minutes.
- Add vinegar and pepper and keep stirring until all liquid is evaporated and onions are covered with a glaze.
- Divide the mixture between the wraps. Add the cheese and walnuts.
- Bake for 8-10 minutes or until cheese is melted.

One of my new favorites is pizza topped with fresh arugula. My favorite is plain cheese pizza with arugula on top, but this is a VERY close second. A wonderful combination! NOTE: Bacon and Onions can be prepared ahead of time.

- Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings. Set bacon aside.
- Add oil to bacon drippings in skillet over medium-high heat. Add onion, and sauté 5 minutes, stirring frequently.
- Stir in 1 teaspoon rosemary, salt, and pepper. Continue cooking 15 to 20 minutes or until onion is a deep golden brown, stirring frequently.
- Preheat oven to 400°.
- Place pizza crust on 12-inch pizza pan. Top with onion. Add cheese and walnuts; bake 7-10 minutes or until cheese melts.
- Remove from oven; top with 1 teaspoon rosemary, reserved bacon and arugula.

- Add the flour, water, and yeast to a stand mixer or large bowl. If using a stand mixer whisk using a dough hook and if not use a wooden spoon to mix for 10 minutes. Add the salt and olive oil and knead again for a further 10 minutes.
- Shape the dough into 2 balls and then let rest, covered loosely with clingfilm or a tea towel, for a further hour.
- Preheat the oven to 250C / 475F. Dust your worktop with semolina and use your hands to press the dough out into two long oval shapes.
