CHOCOLATE SAUCE
A straightforward ganache-chocolate and cream - with a two-to-one ratio of cream to chocolate. Some sugar, in the form of corn syrup, is added, primarily for consistency. The chocolate sauce is only as good as the chocolate you use, so use the best you can.

Steps:
- Place the chocolate in a metal bowl.
- Combine the cream and corn syrup in a small heavy nonreactive saucepan and bring to a simmer. Pour the liquid over the chocolate and allow it to sit for 3 to 4 minutes, or until the chocolate has melted. Whisk to combine. Allow the sauce to cool slightly, then pour into a bowl or other container. (Stored in the refrigerator, tightly covered, the sauce will keep for up to 2 weeks.)
- To serve, warm the sauce gently in the top of a double boiler or in the microwave.
CHOCOLATE FUDGE SAUCE
I use Golden Syrup for the Chocolate Fudge Sauce. However, if you can't find it, light corn syrup or light agave nectar will work well, too. Although Dark Chocolate with 70% cocoa content may seem a little too dark for any milk chocolate lover's liking, that is not the case-I find it works perfectly, especially since it is diluted a bit by the cream and the other ingredients. 70% cocoa content is ideal, but if you don't have that on hand, use whatever you have- I wouldn't go below 64% cocoa content, though.

- Place the chopped dark chocolate and cocoa powder in a heatproof bowl over simmering water (do not let the bowl touch the water) and heat until the chocolate has melted.
- With the pan off the heat, stir in the golden syrup, followed by the heavy cream, confectioner's sugar, vanilla, and pinch of salt.
- Transfer to a glass jar or heatproof container with a lid, and serve over the ice cream of your choice. Can be stored in the refrigerator for a few days (that is, if you're not sharing!). Re-warm before serving.

- 1. Place the chocolate chips in a medium bowl. Heat the milk on the stove or microwave until just boiling. 45 seconds - 1 minute in the microwave works for me. Keep an eye on it. 2. Pour the hot milk over the chocolate and stir slowly until all the chocolate is melted and you have a smooth even mixture. 3. In small sauce pan, combine the cream, butter and sugar. Bring it to a boil while whisking so it doesn't burn. 4. Add the ganache into the sauce pan and stir on low heat until smooth. 5. Transfer the sauce to your storage or serving container.

- Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
- Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.

- In a dry heavy saucepan cook the sugar over moderate heat, undisturbed, until it begins to melt, cook it, swirling the pan, until it is a deep golden caramel. Remove the pan from the heat, add the cream (the mixture, will bubble up, and simmer the mixture, stirring, until the caramel is dissolved. Add the chocolate and the salt and cook the sauce over low heat, whisking, until the chocolate is melted and the sauce is smooth. Whisk in the vanilla and serve the sauce warm or room temperature over ice cream.
BASIC CHOCOLATE SAUCE (GANACHE)

- 1) Chop chocalate into medium size pieces. 2) Combine cream and milk* in a 1-quart saucepan and bring to a gentle simmer, be careful because cream can boil over quickly. 3) As soon as the liquid come to a simmer, remove from heat, strain if flavoring the mixture, and add the chunks of chocolate. 4) Allow the chocolate to sit in the cream for 5 minutes, then stir with a slicon spatula, until mixture is velvety smooth. 5) Stir in butter. 6) Add liquer if desired, start with 1 TBS add more if needed. * if using sauce for ice cream add an additional 2 oz. of milk
