BROWNIE GRADUATION CAPS
Our home economists needed just a few items to create these cute chocolaty caps that guests will gobble up. The tasty treats are a snap to assemble by topping brownie cupcakes with mortarboards made from chocolate-covered graham cookies. A red licorice tassel adds the fast finishing touch.

Steps:
- Preheat oven to 350°. Prepare brownie batter according to package directions for cakelike brownies. Fill paper-lined miniature muffin cups two-thirds full. Bake 21-24 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely (remove paper liners while cupcakes are still warm)., Slice 1/8-in. from the top of each cupcake to level. Invert cupcakes; attach a cookie to each with a small amount of frosting. For tassel, place a licorice piece and a candy on top of each cookie, attaching with frosting. Let stand until set.

This is the cutest little dessert for a high school or college grad party. Heck, even kids graduating from Kindergarten will love these. Found the idea in a magazine some time ago.

Steps:
- Prepare brownie batter.
- Line mini muffin cups.
- Fill each 2/3 way full of brownie batter.
- Bake at 350 for 21-23 minutes.
- Cool for 10 minutes.
- Move to wire racks.
- Take off muffin paper liners.
- Slice 1/8 off top of muffin.
- Turn upside down.
- Attach a fudge graham to the top using the frosting as "Glue".
- For the cap tassel, place a string of licorice and top with M & M.
- Use frosting as the glue.
- You should get about 48 caps from this recipe.
- If you use regular size muffins, the graham cracker may look too small to be the mortarboard.

Inspired by Recipe #169141 ... Thanks looneytunesfan! I used Duncan Hines classic yellow cake mix and added three tablespoons of cocoa powder, because I wanted the cupcakes to be closer in color to the graham crackers than a fudge cake mix would have been. The cooking time includes cooling time. There will be some licorice strings left over after you finish making the "tassels."

- Preheat oven to 350; line muffin tins with cupcake holders.
- Prepare the batter according to the directions on the box. (Duncan Hines' classic yellow cake mix calls for the measures of liquid and eggs I listed in the ingredients.).
- Pour batter into the muffin tins; be sure not to over-fill the cups, because you want the tops of the cupcakes to be somewhat flat.
- Bake at 350 for 20 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 15 minutes; remove and let cool completely.
- Peel the paper liners from the cupcakes; invert cupcakes onto a foil-lined tray. Spread 1/4 teaspoon of chocolate spread on the bottom (now top) of each cupcake; top with a graham cracker square.
- Cut the Twizzlers rope into three equal pieces. Separate into individual strings. Dip the end of each string into chocolate spread, and gently press into the center of the graham cracker.

Cute little graduation caps are made with peanut butter cup hats, graham cracker cookie mortarboards, and candy licorice tassels. They are easy to assemble with prepared frosting to hold them together.

- Cut licorice candy whips into 2-inch pieces, and pull them apart to make small strings. Set aside.
- Place a miniature peanut butter cup upside down on a work surface; top with a dab of frosting. Center a chocolate-covered graham cracker cookie onto the frosting to make a small cap with a mortarboard. Gently press the cookie onto the peanut butter cup.
- Place a small dab of frosting in the center of the graham cracker cookie and attach a red licorice string as a tassel, letting the tassel drape over the edge of the cookie. Place a candy-coated milk chocolate piece onto the center of the cookie over the end of the tassel to make a button.
- Repeat with remaining candies and cookies to make 50 graduation caps with tassels.

- Heat oven to 350ºF.
- Prepare cake batter as directed on package. Blend in dry drink mix; spoon into 24 paper-lined muffin cups. Bake 20 to 25 min. or until toothpick inserted in centers comes out clean; cool completely. Meanwhile, spread 1 tsp. melted chocolate onto each graham square to completely cover top of graham; place in single layer on baking sheet. Refrigerate until firm.
- Remove liners from cupcakes; place cupcakes upside-down on plate. Use wooden spoon handle to poke deep hole in center of each cupcake, being careful to not poke through to bottom of cupcake. Spoon COOL WHIP into resealable plastic bag. Cut small piece off one bottom corner of bag; use to pipe COOL WHIP into holes and onto tops of cupcakes, reserving small amount of COOL WHIP for later use. Top cupcakes with grahams, chocolate sides up, to resemble graduation caps.
- Use fruit rolls to make tassels for caps. (See tip.) Add 1 tassel and jelly bean to top of each graham square, securing each with dab of remaining COOL WHIP.
