Graham cracker crumbs and honey give these muffins great flavor. Serve them warm for a special treat.

Number Of Ingredients 6

16 graham crackers, finely crushed (about 2-1/2 cups crumbs)
1/4 cup sugar
2 tsp. baking powder
1 cup fat-free milk
1 egg, beaten
2 Tbsp. honey

Steps:

  • Heat oven to 400ºF. Mix crumbs, sugar and baking powder in medium bowl.
  • Add milk, egg and honey; stir just until moistened. Spoon into 9 greased muffin cups, filling each 2/3 full.
  • Bake 15 to 18 min. or until lightly browned. Let stand 5 min.; remove from pan. Serve warm.

2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup crushed graham crackers, 1 sleeve will work for both the batter and the topping
1 cup whole milk
1/3 cup canola or vegetable oil
1 large egg, beaten
2 teaspoons vanilla extract
1 cup chocolate chips
1/3 cup flour
1/3 cup brown sugar, packed
1/3 cup graham cracker crumbs
1 teaspoon cinnamon
4 Tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees, grease or line muffin tin with paper liners.
  • Combine topping ingredients until moist and set aside.
  • Combine flour, baking powder, salt, graham crackers and sugar in a large bowl.
  • In a separate bowl, whisk together egg, milk, oil and vanilla. Stir in to dry ingredients.
  • Stir chocolate chips into prepared batter.
  • Spoon batter into prepared muffin tin.
  • Place a healthy spoonful of topping on each muffin.
  • Bake for 16-18 minutes, until toothpick inserted in center comes out clean.
  • Let muffins rest for 10 minutes before removing from tin.

1 box moist white cake mix
8 ounces cream cheese, softened
1/2 cup sour cream
2 eggs
1/4 cup plus 1/2 cup sugar
2 cups graham cracker crumbs (crushed with rolling pin)
6 tablespoons butter, melted
1/4 cup cherry preserves
8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon freshly-squeezed lemon juice

Steps:

  • Lightly grease a 12-cup muffin pan and set aside. Preheat oven to 350 degrees F.
  • To make the batter, in a large mixing bowl, combine cake mix, softened cream cheese, sour cream, eggs, and 1/4 cup sugar. Beat on medium speed for 3 minutes.
  • To make the crust, combine graham cracker crumbs, 1/2 cup sugar, and melted butter in a small bowl. Set aside.
  • In a smaller mixing bowl, beat together all ingredients for cheese filling until smooth. Set aside.
  • Divide half of the graham cracker mixture among the 12 muffin cups and lightly press into bottoms. Fill cups all the way to the top with muffin batter. Place 1 teaspoon of cherry preserves on top of muffin batter and with a teaspoon, lightly cut preserves into batter.
  • With the back of a spoon dipped in water to keep from sticking, indent the batter and top with a dollop of filling to cover the cherry preserves. Sprinkle remaining graham cracker mixture over the top of muffins. Bake for 25 to 30 minutes. Let cool 10 minutes before removing muffins from pan.

3/4 cup miniature marshmallows
ICING
1 cup confectioners' sugar
1/2 teaspoon butter, softened
1 to 2 tablespoons 2% milk

Steps:

  • Preheat oven to 375°. Line 12 muffin cups with foil liners., Using a sharp knife, cut each dinner roll into 4 pieces. In a shallow bowl, mix cracker crumbs and sugar. In a large microwave-safe bowl, microwave butter until melted. Dip 3 pieces of dough in butter, then roll in crumb mixture to coat; place in a prepared muffin cup. Repeat until all muffin cups are filled. Sprinkle tops with 3/4 cup chocolate chips and marshmallows., Toss remaining dough pieces with remaining butter, rewarming butter if necessary. Place 2 additional dough pieces in each cup; sprinkle with remaining chocolate chips., Bake until golden brown, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack. Mix icing ingredients; spoon over tops. Serve warm.
